Cowboy Stew

I don’t remember where I got this recipe. But it’s super easy and very good. It’s in the crockpot right now. I added some peas to give us a little green 🙂

Cowboy Stew

2-4 chicken breasts, cut up
1 medium onion, chopped
1 pkg. turkey sausage (I use lean ring sausage cut in slices)
3 potatoes, cubed (I use 1 or 2 red potatoes)
2 carrots, sliced
1 can baked beans (I used the small can this time)
Layer all ingredients in crockpot. Stir. Cook on low 8 hours or high 4 hours.

    This sounds really good! I was surprised there is no stock or anything added. Just must use the juices that the veggies give off and the stuff that comes with the baked beans to make it juicy?

    Also, have you ever cooked this longer than 8 hours? Just wondering if it dries it up or anything? Most stews/soups/etc. are even better the longer they cook, but the lack of adding any liquid makes me wonder.

  3. I haven’t tried cooking this one a long time. I think I’ve only done it on a Sunday morning (like yesterday) where I cook it for 6 hours (a/b 3 on high, 3 on low). No additional liquid. The meat and veggies do give off some liquid…enough to cook the veggies and keep things moist. It is a very thick stew…definitely not a soup. You could probably cook it longer and it would be ok. But maybe add a tiny bit of water or broth just to make sure it doesn’t dry out.
