I recently got to try the new Stonyfield double cream yogurt and some fun spices from Simply Organic. I paired these unlikely sidekicks in a unique dark chocolate spice cake.

Kid-Friendly

My kids couldn’t get enough. I thought they would be hesitant to try chocolate with cumin added. Boy, was I wrong. They could hardly wait for me to take pictures before they tried it.

And of course they all wanted to help make the cake. My toddler did a lot of sampling.

Change It Up

We enjoyed it plain as a light dessert. Yogurt and Spice and Everything Nice

I’m so glad we got to try the double cream yogurt from Stonyfield. It is just what it says…double the cream (you know I’m always in favor of more healthy fat!). It’s like yogurt and sour cream had a baby…super creamy and mildly tangy. The perfect combination.

A mildly sweet dark chocolate cake that combines cocoa, cumin and cinnamon for a unique twist.

Ingredients
  1. 1 cup white rice flour
  2. 1/4 cup dark cocoa powder
  3. 1/2 cup organic cane sugar
  4. 1/2 tsp. cinnamon
  5. 1/2 tsp. cumin
  6. 1/4 tsp. unrefined sea salt
  7. 3/4 tsp. baking powder
  8. 2 tsp. grassfed gelatin
  9. 1/4 cup cold water
  10. 1/4 cup hot water
  11. 1/2 cup Stonyfield Double Cream Yogurt
  12. 2 Tbsp. honey
  13. 1/4 cup mini chocolate chips
Instructions
  1. Preheat the oven to 350 degrees F. Grease an 8" baking dish.
  2. Combine the gelatin and 1/4 cup cold water. Set aside.
  3. In a large bowl combine the flour, cocoa powder, sugar, cinnamon, cumin, salt and baking powder.
  4. Add the 1/4 cup hot water to the gelatin mixture and stir to dissolve.
  5. Add the gelatin water, yogurt and honey to the dry ingredients. Mix well.
  6. Stir in the chocolate chips.
  7. Pour the batter into the prepared pan. Bake for 35 min.
  8. Serve warm or at room temperature.
Notes
  1. Serve plain or topped with ice cream, butter cream or vanilla yogurt.
  2. For extra flavor mix whole raspberries into the batter before baking.

Halloween is just around the corner. Which means candy everywhere you turn.

Where We Stand.

I’m not one to tell my kids they can never have anything sweet. But I am one to shy away from most traditional processed candy.

We don’t do any food coloring.

NONE. Which eliminates pretty much all fruity candy.

I let my kids choose a couple chocolates as a special treat. But even if the ingredients aren’t too horrible I still think ethically the big name companies are not so great. And I’d prefer not to support them.

So I turn to my tried and true solution – I make my own!

Pumpkin Season!

This year I went with something festive – pumpkin filled chocolates!!

Delicious, melt-in-your-mouth chocolate (I use this brand because it is allergen free) filled with gooey, sweetened pumpkin…made with Perfect Supplements gelatin! Candy with good stuff in it? Yes, please.

These are a huge hit with my kids (especially my son that has been cocoa free for the last year and can now have it again…and my toddler that could care less about sweets but loves chocolate). We love to make them in fun shapes.

As an added bonus they are super easy to make. And if there happens to be either leftover pumpkin or chocolate they are great plain!

Easy Pumpkin Filled Chocolates

A simple allergy friendly chocolate filled with gooey pumpkin.

Ingredients
  1. 1 1/2 cups chocolate chunks or chocolate chips
  2. 1/2 cup pure pumpkin
  3. 1/8 tsp. cinnamon
  4. 1 Tbsp. maple syrup
  5. pinch unrefined sea salt
  6. 1 1/2 tsp. Perfect Supplements gelatin
Instructions
  1. Melt the chocolate over a double boiler.
  2. Fill the bottom of candy molds with half of the chocolate. Freeze to set while making the filling.
  3. Combine the pumpkin, cinnamon, syrup, salt and gelatin in a small saucepan.
  4. Let sit 1 minute.
  5. Heat over low - medium heat until the gelatin is dissolved (about 3 minutes).
  6. Add a small scoop of the pumpkin mixture to each chocolate mold. Freeze to set (about 3 minutes).
  7. Warm the remaining chocolate. Fill the candy molds to the top. Chill.
  8. When chocolate is solid remove the candy from the molds.
  9. Store in the refrigerator for up to two weeks.

But I’m not giving up! No way. I came up with the perfect fall breakfast that you can prepare in advance. You can even make a double or triple batch to stock your freezer for weeks.

Allergy Friendly Ingredients.

These pumpkin spice breakfast cookies are loaded with nourishing ingredients. Plus they taste great! They are super allergen friendly too. No grains, dairy, nuts, eggs or soy.

There is one secret ingredient that is really the star of the show.

Gelatin!

I recently tried the grass-fed gelatin from Perfect Supplements. I love it!! There is no strange smell. It gels beautifully. And since I do a lot of egg free baking it is my go-to ingredient.

These pumpkin spice breakfast cookies are also packed with pumpkin and and coconut oil for vitamins, minerals and healthy fat. Combine that with gelatin and garbanzo bean flour for protein. Plus tapioca flour for starch. It’s a complete breakfast that you can hold in your hand.

Grab a couple for the road, pair it with bacon and fresh fruit or pack one in your child’s lunch box. You get the flavors of fall in a nutritious cookie.

An allergy friendly breakfast cookie loaded with healthy protein, fat and carbs.

Ingredients
  1. 1 cup amaranth flour
  2. 3/4 cups tapioca flour
  3. 3/4 cups garbanzo bean flour
  4. 3/4 cups water
  5. 2 Tbsp. Perfect Supplements collagen
  6. 1 Tbsp. organic lemon juice
  7. 1/4 cup coconut oil, melted
  8. 1/2 cup pumpkin puree
  9. 1/2 cup organic cane sugar
  10. 3 tsp. Perfect Supplements gelatin
  11. 1/2 tsp. unrefined sea salt
  12. 1 tsp. baking soda
  13. 1 tsp. cinnamon
  14. 1/2 - 1 cup mix-ins of choice: raisins, dried cranberries, mini chocolate chips, sunflower seeds, pumpkin seeds
Instructions
  1. In a large bowl combine the flour, water, collagen and lemon juice.
  2. Mix well.
  3. Cover and let sit at room temperature 7 - 24 hours.
When ready to bake
  1. Heat oven to 375*F. Line two baking sheets with parchment paper or silpat.
  2. Add the coconut oil and pumpkin to the soaked mixture. Stir to combine.
  3. Add the sugar, gelatin, salt, baking soda and cinnamon. Mix well.
  4. Stir in your mix-ins of choice.
  5. Drop by large mounds onto the prepared baking pans.
  6. Bake for 25 - 30 minutes, until golden brown.
  7. Remove from oven and let cool for 5 minutes on baking pan.
  8. Serve warm or at room temperature.
  9. Store in a sealed container at room temperature for 3 days, in the refrigerator for up to a week or in the freezer for up to a year.

Prep Ahead.

I soak the seed and bean flours to help with digestion. I also prep the rest of the ingredients the night before. In the morning I just pour, mix and bake. I can have a batch of pumpkin spice breakfast cookies in the oven in about five minutes. Then we can eat some fresh and stick the rest in the freezer for a quick breakfast any day of the week.

Add whatever mix-ins you like. Pumpkin seeds, sunflower seeds, flax seeds, chia seeds, mini chocolate chips, raisins, dried cranberries…they’re all good.

My kids LOVE these cookies. I think my toddler ate THREE one morning (yes, the toddler that used to barely eat anything). They are that good.

More To Love.

If you’ve never tried Perfect Supplements gelatin I highly recommend it. The quality is exceptional. But don’t stop there. Perfect Supplements carries such a wide variety of products.

Collagen.

Like the collagen that I also use in the pumpkin spice breakfast cookies. I use it in all of our smoothies (like this blueberry spinach smoothie or this squash cherry smoothie). It was a life saver (literally) for my toddler when she was barely eating (check out how I got her to eat again with this “squash milk”).

Liver.

Another favorite of mine is the desiccated liver. I use it every single day. I really need to boost my vitamin A. And I am NOT a liver fan. The Perfect Supplements desiccated liver has been pivotal to my health. I use it on my salads, in my soups or in this salted caramel. Believe it or not I actually enjoy the taste of this liver and sometimes even crave it.

Greens.

We also recently tried both the fermented kale powder and the aquatic greens. They are perfect for smoothies. And the aquatic greens are especially great for those with allergies (imagine my disappointment that my toddler reacts to them!). I use it for my big kids as often as possible.

I’ve been dairy free for 18 months now, ever since my youngest was about a month old. This is not the first time I’ve had to go dairy free. But no matter how many times and no matter how long it lasts it’s never easy.

I LOVE dairy. Love it.

One of the things I miss most is yogurt. I used it eat it almost daily for breakfast or lunch. Add some granola…my happy place.

For most people there are some decent options to replace dairy yogurt – coconut, almond, etc. But those are all out for me too. We have that many allergies. So I’ve just gone without yogurt.

Until now.

Problem solved.

My youngest it starting to notice when her siblings have yogurt and she keeps asking for it. Oh, how I’d love to give it to her!! It breaks my heart to have to say no. I feel so mean since she doesn’t understand why.

So I came up with a solution.

I created pumpkin yogurt. It is creamy and slightly sweet. It has lots of protein from both grass-fed collagen and gelatin plus a healthy dose of probiotics (this is the one we use). Just like the real thing.

An added bonus is you also get a big helping of vegetables!

The first time I made pumpkin yogurt I added fruit and some crumbled homemade graham crackers. I was instantly taken back to my happy place. Finally! I can have yogurt again!

My little one loves it too. I gave her a small dish. Her response: “mrrrr” (more). That is all I needed to hear.

To my surprise even my four year old loves it. When I first told him I made pumpkin yogurt he made the “don’t come near me with that stuff” face. But after he tried it he had to have a second dish! Maybe me calling it pumpkin PIE yogurt helped a little.

More than just great taste.

Not only is pumpkin yogurt a nutritious breakfast it is also so easy to make!

  1. Mix all of the ingredients in a blender.
  2. Pour the mixture in a jar.
  3. Let it culture for about eight hours.

That’s it.

Pumpkin yogurt makes a great breakfast, lunch or snack. Eat it plain or add your favorite fruit and crunchy topping. It is perfect for school lunches too.

Allergen Free No Cook Pumpkin Yogurt
Serves 3
A creamy pumpkin yogurt that is free of common allergens.

Ingredients
  1. 3/4 cup cooked pumpkin (canned or fresh)
  2. 1 cup water
  3. 1 Tbsp. grass-fed collagen
  4. 1 Tbsp. sweetener (honey, maple syrup, cane sugar)
  5. 1/4 tsp. unrefined sea salt
  6. 1/4 tsp. cinnamon (optional)
  7. 1 1/2 tsp. grass-fed gelatin
  8. 1 capsule powdered probiotic
Instructions
  1. Combine the pumpkin, water, collagen, sweetener, salt and cinnamon in a blender.
  2. Blend on high until smooth.
  3. Add the gelatin and probiotic.
  4. Blend for about 10 seconds.
  5. Pour the mixture into a glass jar with a lid.
  6. Put the jar in a warm place for 8-10 hours.
  7. Put in the refrigerator for at least an hour before serving.
  8. Store in the refrigerator for up to one week or in the freezer for up to 6 months.
Notes
  1. Setting the mixture on a counter that gets sunlight or on a stovetop with the oven on or in an unheated oven with the light on works well for culturing the yogurt.

When little tummies are recovering from illness it’s best to keep food simple and skip a lot of fat and sugar. These honey oat bars come together easily and are gentle on the tummy.

Did I mention my son was sick? That seems to be an ongoing battle this winter. My poor boy that has such a sensitive digestive system.

He had the recent stomach virus that went around. But unlike most people that were over it in a day or two he struggled with it for a week. And he could hardly eat that whole time. He spent his days either on the couch or in the bathroom.

BRAT diet doesn’t exist here.

Add all of his allergies on top of trying to keep his diet bland and starchy and you’ve got a real challenge. No gluten, rice, corn, potatoes or bananas.

We decided to try oats. He basically lived on oatmeal for a week. And just when he thought he couldn’t handle another bowl of oatmeal I came up with these simple honey oat bars!

I wanted to keep them very low in fat to keep his tummy settled. So I used grass-fed gelatin in place of eggs. I also kept the sweetness low with just a touch of cane sugar and honey.

The combination of whole oats and ground oats helps the bars bind together.

Oats to the rescue.

My son loved them! And they kept him going. There was starch but also protein. Not to mention the gelatin was helpful for healing his upset tummy.

My daughter tried them too and thinks they’re great…even if she’s not sick. They make an easy, low sugar breakfast to keep stashed in the freezer for busy week days.

Get your oats soaking and whip up a batch or two of these simple honey oat bars. Always have some on hand to put upset bellies at ease.

Don’t forget to add activated charcoal to the diet as well to really stop the stomach upset.

A simple, low fat oat bar that is perfect for settling little tummies after illness.

Ingredients
  1. 1 cup oat flour (grind rolled oats in a blender)
  2. 1 cup rolled oats
  3. 1 cup warm water
  4. 2 Tbsp. lemon juice
  5. 2 tsp. grass-fed gelatin (NOT collagen)
  6. 1/4 cup hot water
  7. 1 Tbsp. organic cane sugar
  8. 3 Tbsp. honey
  9. 2 Tbsp. melted butter, coconut oil, lard or tallow
  10. 1/2 tsp. baking soda
  11. 1/2 tsp. unrefined sea salt
Instructions
  1. Combine the oat flour, oats, warm water and lemon juice. Cover and let sit for 7-24 hours (24 hours is best for oats).
  2. Heat oven to 350 degrees F. Grease or line with parchment paper an 8" square baking pan.
  3. Add the gelatin to the hot water and stir until dissolved.
  4. Add all of the ingredients to the soaked oats. Mix well.
  5. Spread in the prepared pan.
  6. Bake 35 minutes.
  7. Cool and cut into bars.
  8. Store in a covered container for up to a week at room temperature, two weeks in the refrigerator or one year in the freezer.

I’ll be honest. I always skipped the cranberry sauce growing up.

Tart, gelatinous red stuff shaped like a can…not really my thing. I’m not even sure I ever actually tasted it!

It looked that bad to me.

Not much has changed.

Fast forward thirty years. I’m still not entirely sure I’ve ever tasted cranberry sauce. I honestly couldn’t tell you what it tastes like. Even though it sounds really good…assuming it’s not out of a can.

I’ve never made it or served it to my family (though this homemade version from Raising Generation Nourished sure looks good!)

So when challenged by Stonyfield to recreate a holiday dish using yogurt I figured I should try to improve on the one Thanksgiving dish I never even bother making.

I turned cranberry sauce into creamy cranberry jello!

Sweet success.

My kids love it.

A little sweet. A little tart. A little creamy. Perfect.

Creamy cranberry jello really couldn’t be any easier to make either.

Five ingredients. Five minutes of hands on time.

The cranberry comes from pure cranberry juice. The creaminess comes from Stonyfield Plain Greek yogurt or strained whole milk yogurt. And the jello comes from quality grass-fed gelatin.

I love the simplicity of this dish and that it is very kid-friendly. I also love that you can make it up to a couple days in advance. One less thing to think about the day of Thanksgiving or Christmas!

They can be printed out on a self-adhesive paper and placed on soup bowls, paper plates, napkins and glasses. Cute illustrations can sometimes motivate children to eat, but if that’s not enough, writing out funny rhymes or riddles about food can really do the trick.

They can also be used for labeling each dish so those with allergies know what’s safe.

Creamy Cranberry Jello
Serves 8
A creamy, kid friendly twist on cranberry sauce.

Ingredients
  1. 2 cups pure cranberry juice (NOT cranberry juice cocktail)
  2. 1 cup organic cane sugar
  3. 1/4 tsp. unrefined sea salt
  4. 1/2 cup Greek yogurt or 1 cup whole milk yogurt, strained
  5. 1 1/2 - 2 Tbsp. grass-fed gelatin
Instructions
  1. In a medium saucepan combine the juice, sugar, salt and yogurt. Whisk until combined.
  2. Add the gelatin while whisking to prevent clumping. Let sit one minute.
  3. Heat over medium heat, whisking frequently, until the sugar and gelatin are dissolved (about 3 minutes, mixture will be warm).
  4. Pour into a heat-safe serving dish.
  5. Refrigerate until firm.
  6. Serve cold.
Notes
  1. If you like your jello on the softer side use 1 1/2 Tbsp. of gelatin. If you like it firmer use 2 Tbsp. of gelatin.
  2. You can turn this into finger jello by using 2 1/2 - 3 Tbsp. of gelatin.
  3. You can add whole cranberries to the jello before refrigerating.
  4. You can replace half of the sugar with honey. You may need to increase the gelatin slightly.
  5. You can substitute coconut yogurt to make this dairy free.

I like warm drinks. Do you?

Even on the hottest summer days I still start the day with a warm drink. It has a calming effect on my mind and body. In fact I’m sipping on one right now while I write this post!

I’ve never been a coffee drinker. I usually go for tea.

But these days I pretty much drink one of two things. Either healing hot chocolate or molasses tonic. Both provide minerals in a great tasting, soothing beverage.

You may be wondering, what’s so great about molasses? Isn’t that just sugar?

Molasses is actually packed with vitamins and minerals.

It contains:

  • potassium
  • magnesium
  • calcium
  • iron
  • vitamin B6
  • niacin
  • pantothenic acid
  • choline
  • phosphorus
  • zinc
  • copper
  • selenium
  • chromium
  • cobalt
  • sodium

It has also been shown to be helpful with a variety of health issues from PMS, headaches and acne to bone health and constipation.

What’s not to love?

Well, maybe the flavor.

Molasses is an acquired taste.

At least for me. If you are not a fan just start with a small amount and work your way up to a full tablespoon.

You can even do half molasses and half maple syrup to start. Maple syrup has minerals too!

As you can see molasses is very nutritious. You could just take a big spoonful once or twice a day.

Molasses Tonic | Just Take A Bite

I like to combine it with some other nutrients in a hot drink to really give my body a boost.

So you can add any or all of the following to create a molasses tonic:

  • stinging nettle (allergy relief, reduce inflammation)
  • grass-fed collagen (easy-to-digest protein, gut healing)
  • unrefined sea salt (trace minerals, hydration/electrolyte balance)
  • cocoa powder (magnesium, iron, fiber, manganese, zinc, flavonoids)
  • carob powder (calcium, magnesium, phosphorus, potassium)
  • maple syrup (calcium, iron, magnesium, phosphorus sodium, potassium, zinc)
  • butter and/or coconut oil (healthy saturated fat, helps balance the protein and carbohydrates)

When you put all of these together molasses tonic can practically be a meal replacement! And if you have a super busy morning here and there it could be. I drink it after a meal. Though it is best to wait an hour after eating to let your food settle/start digesting first.

If you don’t have time or all of the ingredients to make the full molasses tonic you can simply add molasses and sea salt to hot water. You’ll still get a big nutritional boost and feel hydrated.

The next time you need a hot beverage skip the coffee. Instead whip up a power packed molasses tonic.

This is great for kids too. Add some whole milk or coconut milk to their molasses tonic for a creamy drink.

Ingredients
  1. 1 1/2 - 2 cups boiling water
  2. 1/2 - 1 Tbsp. blackstrap molasses
  3. 1/4 tsp. unrefined sea salt
optional
  1. 1 tsp. nettle leaf
  2. 1 Tbsp. grass-fed collagen
  3. 1 tsp. organic cocoa powder
  4. 1/2 tsp. organic carob powder
  5. 2 tsp. grade B maple syrup
  6. 1 Tbsp. butter or coconut oil
  7. 2-4 Tbsp. whole milk or coconut milk
Instructions
  1. If using nettle leaf, use a tea strainer or cheesecloth to steep nettle leaves in 1/2 cup boiling water for 10 minutes. Remove the leaves.
  2. Add the remaining boiling water and ingredients.
  3. Stir to combine.
  4. Allow to cool enough to drink or add ice cubes or milk.
Notes
  1. This can be served warm or cold (iced molasses tonic).
  2. This can be placed in a water bottle and packed for school lunch.

I’ve never been that crazy about  Halloween.

Don’t get me wrong, getting dressed up is fun. Spending time with friends is great.

Of course as a kid the candy is the real star of the show.

An adult perspective.

But on the whole it’s more of a hassle than anything, especially as a parent. Scrambling to find a costume (I’m cheap and just get creative with what we have on hand…anybody with me?). Spending half the week’s grocery budget on junk food for the neighborhood. Not my cup of tea.

But there is one part of Halloween and fall in general that I have always loved.

Candy corn.

I liked the taste. But more than that it reminded me of my grandparents. They lived on a farm and always kept a chicken feeder on the kitchen table to feed their little chicks – their grandchildren!

For some reason I was more into this tradition than any of my siblings or cousins. If my grandparents knew I was coming they were sure to stock it with candy corn for me. I ran to it first thing when I entered the house to check and have a little chicken feed.

My days of visiting the farm are coming to an end as my grandmother passed away earlier this year and my grandfather is in hospice. But when I do get there the chicken feeder is still sitting there on the table as soon as I walk in the door.

A new tradition.

I am honored that it will soon be the centerpiece of my own table! I can carry on the tradition of feeding my kids and someday grandkids just like little chicks.

My candy corn will not come out of a bag. It will not have artificial flavors and food coloring.

Instead it will be full of nourishing gelatin!

One of my favorite foods is cheesecake. It comes in a close second behind ice cream. Yes, I love my creamy dairy desserts!

However, I don’t have time to make cheesecake very often. So I came up with a cheater version for fall.

Pumpkin cheesecake cups do require about two minutes of heating to dissolve the gelatin. But there is no baking involved. All of the prep work takes about five minutes of hands on time. In fact pumpkin cheesecake cups are so easy to prepare that even your kids can make them!

Nutrition first.

Pumpkin is a superstar when it comes to vitamins. So any way I can add it to our diet is a bonus. Then you add yogurt with probiotics and healthy fat.

Don’t forget about the gelatin! This will help aid digestion and boost the protein content.

I love that I can make a batch of pumpkin cheesecake cups before bed and breakfast is ready in the morning. So when I have a child wake up at 6 am and tell me he’s starving we don’t have a mini crisis (i.e. meltdown).

Pumpkin cheesecake cups also work really well for school lunches. Kids see it as a treat. I see it as a source of protein and vegetables. A win for everyone.

Perfect any time of day.

Of course you can always serve these for dessert too. Make a big batch for a crowd. Add some crumbled gluten free pumpkin spice graham crackers to individual cups to mimic crust. You’ll get rave reviews and be able to sit and enjoy some with your guests!

This recipe makes enough for two cheesecake cups. It can easily be scaled up to make as many servings as you need. They will stay good in the refrigerator for up to a week so you can make a batch to enjoy all week long. Though I can guarantee they won’t last very long!

If you like your cheesecake really soft you can reduce the gelatin about 1/2 tsp. If you like it super firm you can increase the gelatin about 1/2 tsp. Adjust it to make your ideal cheesecake.

No Bake Pumpkin Cheesecake Cups
Serves 2

Ingredients
  1. 3/4 cup plain greek yogurt or strained whole milk yogurt
  2. 1/4 cup pureed pumpkin
  3. 1/4 cup honey
  4. 3 tsp. grass-fed gelatin
  5. 1/2 tsp. cinnamon
  6. 2 homemade graham crackers or 1 store-bought graham cracker
Instructions
  1. Strain whole milk yogurt for one hour (it takes about 1 1/2 cups of yogurt to get 3/4 cups thick yogurt).
  2. Crush graham crackers and place in the bottom of two small containers (1/2 pint jars work well)
  3. Combine the yogurt, pumpkin, honey, cinnamon and gelatin in a small saucepan.
  4. Let sit one minute.
  5. Heat on low-med until the gelatin is dissolved and the mixture is liquid, about 2-3 minutes.
  6. Pour the mixture over the graham crackers and chill until set.
Notes
  1. Pumpkin cheesecake cups will stay good in the refrigerator for up to a week.
  2. Squash can be used in place of the pumpkin.
  3. Coconut milk yogurt can be used in place of the dairy yogurt.
