When it comes to holiday entertaining (for a crowd or just for my own family) I have two requirements:

I’ve learned how to host a crowd without stress and still serve real food. Three-in-One Recipe

Today I’m sharing my solution for all three!

Candy cane mason jar fruit salads work for breakfast, dessert or a simple side dish.

Start with whole milk Stonyfield yogurt that you strain to make it really thick. We like to use the vanilla, but you could use plain to make it without any added sugar. The strained vanilla yogurt is a simple alternative to whipped cream that has probiotics! My kids could not get enough of it! And I always have quarts of Stonyfield yogurt on hand. Actually I usually have about four or five in my fridge because we eat it so often.

I add our own fruit, sweeteners and other add-ins (like kettle corn granola and chia seeds) to the plain, whole milk organic yogurt for an easy breakfasts a couple times a week. That way I know we’re eating good quality food! I love that Stonyfield is all organic and is committed to using quality ingredients.

If you like your yogurt/cream really thick (like I do!) you can even use strained Greek yogurt for the fruit salads. But it would be a bit on the tart side. The strained yogurt works perfectly for these fruit salads so the fruit does not sink into the yogurt. You can really see those layers!Looking for that perfect Christmas breakfast or dessert? Fruit Stripes

Once strained, simply layer the yogurt with your favorite festive fruits. We use pomegranate seeds, kiwi, raspberries and grapes. Taylor it to your tastes and the look you like. Little kids might not be keen on pomegranate seeds. While adults might like a mix with everything. My toddler enjoyed a combination of raspberries and green grapes. I make a variety and let everyone choose what they like. I keep some all green and some all red and some I mix. They look so festive! Like a candy cane in a jar.

How to Save Time

Best of all? You can make them ahead of time for a super easy breakfast or dessert. Don’t want to interrupt opening Christmas presents to make breakfast? If you’re really busy you can skip the last step and simply turn breakfast into a candy cane parfait buffet. Set out all the ingredients and let everyone assemble their own! Add granola, chia seeds and nuts for a complete meal. This works very well for a big crowd.

I really love that my kids can actually make these on their own. They’ve been learning to cook for two years now through the Kids Cook Real Food eCourse. So they are proficient with knives and many other kitchen tools. I could give them all the supplies and let them prepare the fruit salads as a fun project. Then I’m free to work on the main meals.

Now let’s be honest, the real reason we all want to make these mason jar fruit salads is simply because they are so stinkin’ cute! Seriously. Who wouldn’t want one? My kids were sad I hadn’t made two for each of them. I guess next time I know to make a huge batch. They could be easy grab ‘n’ go snacks or great additions to school lunches. Use seasonal fruit to change it up throughout the year.

Candy Cane Mason Jar Fruit Salad
Yields 6
A simple, holiday fruit salad that works for breakfast, dessert or a side dish.

Ingredients
  1. 4 cups Stonyfield whole milk vanilla yogurt (or plain or Greek)
  2. Seeds of 1 pomegranate
  3. 2 kiwis
  4. Medium bunch of red and/or green grapes
  5. 2 cups raspberries or strawberries
  6. (Optional) 2 Tbsp. chia seeds
Instructions
  1. Strain the yogurt in cheesecloth for one hour. Hang it over a bowl to get as much whey out as you can.
  2. While the yogurt is straining chop/seed the fruit into bite-size pieces.
  3. Layer the fruit and yogurt in 1/2-pint mason jars, small glass bowls or festive dishes.
  4. Top with chia seeds or more fruit.
Notes
  1. The fruit salads can be made with all red fruit, all green fruit or a combination.
  2. Older kids can help prepare the fruit and layer the salads.
  3. This makes 6 - 8 1/2-pint mason jars, depending on the ratio of fruit to yogurt you like.

I have so many wonderful memories of Christmas from my childhood. We’d go to church for a candle light service on Christmas Eve. When it was time for presents my three siblings and I would sit in a line, and my dad would hand them out one at a time. There was so much joy and excitement.

Then we would visit out-of-town extended family. It was great to see grandparents and cousins that we didn’t get to see very often.

Of course after all of the celebrations were done it was time to play! We played with our new toys and spent hours outside building snow forts. That’s what Christmas break is all about, right?

Then I Grew Up…

Now I’m a parent…and I still love Christmas. But it doesn’t quite bring the same joy and excitement as it did when I was a child. I dwell on all of the stuff on my to-do list. The packing, traveling, buying, wrapping, cooking, baking, cleaning and hosting. It’s more crazy than calming. More stressful than joyful.

So by the time all of the chaos is over I’m just plain worn out. I don’t have the energy to prepare a fancy breakfast for my family.

My Solution?

This super simple candy cane smoothie bowl!

A candy cane smoothie bowl is festive and fun. It is so easy to make I actually let my kids do most of the prep work! The older kids practice their detailed cutting skills they learned in the Kids Cook Real Food eCourse. The younger ones pick out pomegranate seeds.

All of the preparation can be done the day before (great afternoon project for bored kids!!). Even the smoothie ingredients can go right in the blender and be ready for morning.

Growing up we ate one flavor of jelly.

Grape.

That’s it.

At home. Grape. In a restaurant. Grape. On toast. Grape. On a sandwich. Grape.

That was really all we knew and all we wanted.

No jelly here.

Want to know something? I have never bought grape jelly for my kids. Most grape jellies are filled with high fructose corn syrup. Not to mention the texture kind of grosses me out now.

But homemade grape jelly – that is a whole different story. Especially when it comes from juice you made yourself!

No pectin. No canning.

The unique thing about my grape jelly is that I skip the pectin and the canning.

Most pectin contains dextrose. That’s just sugar, right? Well, yes, sort of.

But it usually comes from corn. My son is allergic to corn. So I don’t use pectin.

Instead I use gelatin and then freeze the jelly. That turns this into such a simple task. It takes about five minutes to make a whole batch of jelly.

This was my own experiment with creating an easy and allergen friendly grape jelly.

No complaints.

The consensus from my family? Great! Everyone loves it. Even the adults that grew up with more traditional jelly (both homemade and store bought).

My kids rave about it and keep asking for it on their bread.

We have been enjoying it on toast and on sunbutter and jelly sandwiches. I personally love it on sourdough bread. The contrast between the sour and sweet is delicious.

No fears.

Use your homemade grape juice or quality organic grape juice. Add some grass-fed gelatin and you’re minutes away from homemade grape jelly.

Your kids will love it, and you’ll feel good about what they’re eating. No more high fructose corn syrup, dextrose and citric acid for breakfast. Just whole, simple ingredients.

Once you get the freezer stocked with grape jelly grab some blueberry juice to make blueberry jelly! It’s another great addition to your morning eggs and toast.

Pectin Free Concord Grape Jelly
Yields 7
Homemade grape jelly that is free of pectin and high fructose corn syrup.

Ingredients
  1. 4 cups unsweetened concord grape juice
  2. 3 cups organic cane sugar
  3. 6 1/2 tsp. grass-fed gelatin
Instructions
  1. In a medium saucepan combine the juice and sugar. Whisk.
  2. Slowly pour in the gelatin and whisk.
  3. Let sit one minute.
  4. Turn on heat to medium/low.
  5. Slowly whisk until the mixture is warm and the sugar and gelatin are dissolved, about 5 minutes.
  6. Remove from heat.
  7. Fill half pint glass jars, leaving 1 inch of head space.
  8. Put a lid on the jars and refrigerate until fully gelled, at least 8 hours.
  9. Store in the refrigerator for up to 3 weeks or in the freezer for up to 1 year.
Notes
  1. You may need to adjust the sweetness depending on the sweetness of the juice and your taste.
  2. You can increase the gelatin to 8 Tbsp. and pour the whole batch into molds or a glass pan to make grape gummies.

Confession. I love grape juice. Love it.

I don’t drink it very often these days because I know most juice is just empty calories with no nutrition. Otherwise I would.

Once in a while I buy pure organic concord grape juice for making jello or gummies. But I can’t afford to buy that just to drink plain.

Free grapes.

A few weeks ago my mom called to tell me my grandpa said I could have his grapes. My grandma passed away earlier this year and my grandpa is now in hospice. So the grapes on their farm are just sitting there.

He thought I might be able to put them to good use.

He knows me well.

I made a trip to the farm with my two youngest, hoping to pick a bunch of grapes. Then I realized that picking grapes when everything is soaking wet and you have a toddler with grabby hands strapped to your chest is next to impossible.

At least I had a great helper! We did pick a few to get us started. But I had to send my husband and big kids back a few days later to finish the job.

My suggestions for picking grapes:

  1. Have two free hands.
  2. Use clippers.
  3. Be prepared to get messy.

Making juice.

Once we had the grapes at home I had to figure out what to do with them.

It turns out that making homemade grape juice is quite simple. You basically just wash, cook and strain. You may need to add sweetener if you want to drink the juice plain. It just depends how tart the grapes are.

It also turns out that the “hardest” part is just separating the good grapes from the bad ones.

It was fun to make my own grape juice for the first time. As I did it I couldn’t help but smile and think of my grandparents standing in the kitchen on their farm making juice together every year for decades.

I felt honored to carry on the tradition, and I think of them every time I drink our homemade grape juice. They are some of the most amazing people I know. And their farm has always been one of my favorite places.

Now we have some grape juice in the freezer for later (that I will try really hard to share with my family). Plus I used some to make grape jelly! I’ll be sharing that recipe tomorrow.

Homemade Grape Juice: From the Vine to Your Cup
Fresh, homemade grape juice from concord grapes.

Ingredients
  1. Freshly picked concord grapes
  2. Organic cane sugar or honey
Tools
  1. Large stockpot
  2. Large fine mesh strainer
  3. Cheesecloth
Instructions
  1. Wash the grapes. Get rid of any bad or unripe grapes.
  2. Place the grapes in a large stockpot.
  3. Mash the grapes with a potato masher to get the juices flowing.
  4. Turn the heat on to high. Bring to a boil.
  5. Reduce heat and simmer the grapes for 10 - 15 minutes, mashing periodically while they cook.
  6. Turn off the heat.
  7. Strain the grapes/juice through a fine mesh strainer lined with cheesecloth over a large bowl.
  8. Allow the grapes to strain for a few hours or over night.
  9. Discard the grapes/skin/seeds.
  10. Strain the juice a second time through clean cheesecloth.
  11. If using the juice for drinking add sugar if the grapes are too sour. Stir and let the sugar dissolve.
  12. Store in the refrigerator for up to two weeks or in the freezer for up to a year.

  1. I used about 1/4 cup cane sugar per quart of juice for drinking.

Refreshing and hydrating, this easy pink lemonade is made with only real ingredients.  No artificial flavors or colors.  It’s the perfect summer drink!

Whether it’s the middle of summer or you’re just looking forward to the start of spring, pink lemonade is the perfect drink.

Keep the good. Leave the bad.

This easy pink lemonade only takes minutes to make.  It is free of anything artificial (i.e. no food coloring!).  And a simple addition of sea salt turns it into a hydrating homemade sports drink.
 
Sometimes I even go a step further and add grass-fed collagen and powdered probiotic to really bump up the nutrition factor.
 
You can make a single cup or a big pitcher.  I usually make a half gallon at a time.  It doesn’t last long in my house.

Allergen friendly.

Having kids with all sorts of allergies means they don’t get much to drink besides water (they don’t even have any milk alternatives they tolerate). So I like to treat them to hydrating pink lemonade once in a while, especially when they are playing hard or after illness.

This is also a fun surprise in my daughter’s lunch once in a while. She tends to forget to drink while she’s at school. But if I give her pink lemonade she comes home with an empty cup.

Keep everyone hydrated and satisfied with pink lemonade. All the great flavor. Nothing artificial.

Easy Pink Lemonade | Just Take A Bite

Easy Pink Lemonade
makes 1/2 gallon

6 1/2 cups water
1/3 – 1/2 cup lemon juice
1/4 – 1/3 cup pure grape juice or pure blueberry juice
1/2 cup organic cane sugar (you can also use honey or maple syrup, but it will change the flavor a bit)
1 tsp. unrefined sea salt (optional…makes it very hydrating)
2 Tbsp. grass-fed collagen (optional)
1 capsule powdered probiotic (optional)
ice

Combine all of the ingredients in a 1/2 gallon container.  Mix well, allowing the sugar to dissolve.  Adjust the lemon juice and grape juice to taste if needed.  Refrigerate.
