Burrito Bake

This is not really much of a recipe.  It’s just what I threw together for dinner last night.  And I figured I better write it down for future reference.  I’m sure it’s nothing new.  But it was just a creation out of my head yesterday.  I call it burrito bake.  You can use whatever you have on hand and layer it between tortillas.  Instant, easy dinner 🙂  I’ll write it the way I made it last night.  But you can use whatever fillings you like.  I used chicken.  Beef would be great.  Or it could be vegetarian with just beans.  No quantities…just use as much as you like/whatever fits in your pan.  I had intended to make burritos since we had leftover shredded chicken and some avocado to use up.  But then I thought making it into a casserole would much easier than filing/rolling burritos.  And it was!  And tasty too 🙂  I prepped it ahead of time.  Then dinner was very easy…just pop it in the oven.  We topped it with salsa, sour cream and avocado.  You could add some salsa right into the casserole if you like.

Burrito Bake 

tortillas (flour, corn, whole wheat…whatever you like…gluten free if you use corn tortillas)
shredded chicken
refried beans (or any kind of beans)
sour cream
diced tomatoes
corn (can still be frozen)
diced peppers
shredded cheese (I used sharp white cheddar)

Coat bottom of baking dish with olive oil.  Place a layer of tortillas on the bottom (I just rip them up to make them fit).  Spread beans on tortillas.  Spread on sour cream.  Add a layer of chicken, then corn, tomatoes and peppers.  Sprinkle on cheese.  Add another layer of tortillas.  Repeat the beans, sour cream, chicken, corn, tomatoes, peppers, cheese.  Top with a 3rd layer of tortillas.  Top with shredded cheese.  Cover and bake at 350 for 35 min.  Remove cover and bake another 10 min.
