I really can’t believe January is coming to an end in a few days. This has been such a crazy winter so far that it hardly even feels like January! That’s just fine with me π
Last week was back to busy. We had fun catching up with friends at Kindermusik and a MOPS playdate. We finally made itΒ to the library and stocked up on new books. Lots of reading going on right now πΒ Rebecca had a blast at swimming lessons. We enjoyed a fun afternoon and evening yesterday with family, celebrating birthdays. And we signed Rebecca up for preschool!! We are all excited for her to start the Spanish immersion program atΒ a local Christian school this fall. I also had to make a quick trip to the doctor on Friday.
The kitchen was busier than I expected. I made mayo, pesto, sour cream, 3 batches of cream cheese, 2 batches of yogurt, breakfast pastries, sd crackers, biscuits, granola bars, cupcakes and ice cream. I experimented with the ice cream, making it from a combo of cream and coconut milk and sweetened it with just honey. I made butter pecan…and it tastes great! I’m happy to have an ice cream I can eat and truly enjoy. EspeciallyΒ after reading this post on Nourished and Nurtured. Ice cream is goodΒ for me? Well, bring it on πΒ Lots of grain soaking last week tooΒ πΒ It was nice to enjoy biscuits, pastries, pancakes and a BLT!
Another busy week this week. Today is church. Monday isΒ milk pick up. Tuesday is Kindermusik. Wednesday isΒ groceries. Friday is MOPS. Saturday is swimming, and Justin has an orchestra concert.
There is a lot I’d like to get done this week…but I also don’t want to overdo (for myself or the kids). So we’ll see what happens. For sure I’ll make my usual dairy products. Plus whatever needs to be done for meals. I’m not sure yet about any baking projects with Rebecca. I want to increase our vegetable intake this week. Maybe I’ll let Rebecca pick out some different colored veggies at the store. I might try making beet kvaas. I’d also like to try quinoa this week.
I do need to finish planning my nephew’s birthday cake. I also would like to schedule a hair cut for myself and for Rebecca. And possibly start on some sewing projects.
I have a lot of updates/thoughts on myself. I’ll try to do a separate post soon. I did finally decide last week that beef and I just don’t mix. I have tried and tried and tried. I know it is so healthy. And I love it. But every time I eat it my stomach is in knots the next day. Mostly with roast or steak. Even if I don’t eat a lot. So for now I’m going to have to avoid it most of the time. I think I can still handle some ground beef. With all of the issues I seem to have digesting meat I might start adding inΒ meatless meals once in a while again. They will still have plenty of protein, just not meat. I mentioned that I went to the doctor last week. I have some kind of infection on my c-section scar. So I’m on antibiotics πΒ That will just add to my gut issues. But I think it’s an indicator of what I’ve beenΒ learning over the last couple months of mood changes, diet changes, researching, etc. My body is getting run down. And
something has to change. More to come on that in an update post and my February goals.

Bummer about the beef. Hopefully over time, you’ll be able to handle it again. Will this impact your family’s decision to get 1/4 beef this year?
Hope the antibiotics don’t mess up your system too badly. Hopefully they’re not super strong ones, at least.

I don’t think we are going to order beef this year like we have in the past. Justin still doesn’t like it (the grass fed). And I just can’t eat it. I think we might order bulk ground beef (the guy we get chxs and eggs from does grass fed ground beef). Then maybe a few other cuts for Justin.
I don’t think the AB are super strong since I’m bf. The PA checked on it. Else she would have given me the nasty doxycycline. I can tell they are impacting my tummy, but not horrible. I was nauseaous this morning. I hate starting my day sucking on candy to keep myself from puking. I’m sure you can understand π
I hope I get started on sewing soon. Rebecca is very anxious for her doll clothes π
