It is finally here! The last week in this house. By the end of the week we’ll be moved into the farm!! I’m trying my hardest to focus on the excitement of the journey ahead instead of the sadness of leaving a place we’ve called home and made tons of memories in for the past twelve years.

BUSY!

This week will be kind of insane. We’re trying to do as many trips to the new house as possible to bring random items and get some stuff unpacked. Plus my daughter has her end of semester celebration for her home school co-op. My son has his last day of school – which just happens to be a special program. So we’ll all go to that too.

I’m doing my best to stay on top of Christmas preparations. We got our tree yesterday. I’m almost done shopping. Most of the presents are wrapped. Cards went out early last week. My Christmas menus are planned.

If only there were three of me!

Meals this week will be mostly prep ahead so I have the day free to do home school and keep up with packing and unpacking. I don’t have any kitchen projects planned. I told the kids we may have to make Christmas cookies after Christmas this year!

ROTATION: Each day starts with dinner and goes through lunch the next day. Foods in () are things yet to be tried.

Sunday 3
B – cereal, fruit | sloppy joe, avocado, squash
L – crockpot pork roast, broccoli, rice
D – beef stroganoff over rice, Brussels sprouts, apple slices
prep: chop veggies, make gummies?

Monday 4
B – baked oatmeal | spinach blueberry smoothies
D – pumpkin soup, crackers and cheese
prep: 
notes: prep ahead dinner

Tuesday 1
B – yogurt, granola bars, fruit
D – baked chicken, baked potatoes, roasted carrots
prep: boil eggs

Wednesday 2
B – hard boiled eggs, toast | leftovers
D – mac ‘n’ cheese, broccoli and cauliflower, peaches

Thursday 3
B – cereal, fruit | banana avocado shake
D – crockpot stuffed peppers, peaches

Friday 4
B – toast w/ sunbutter, fruit
D – crockpot meatballs, rice, peas
prep: soak beans, prep chili

Saturday 1 MOVING DAY!!!
B – yogurt, granola bars, fruit
L – crockpot chili, chips w/ salsa, fruit, raw veggies
D – hot dogs and brats, squash, chips, fruit

    First – thank you for posting your weekly meal plans! I’m not a planner so it’s been so helpful to me to get inspiration and get organized 🙂

    I really like your beef stroganoff recipe. I was curious if you’ve tried it with coconut milk before – I want to get a good dairy free idea before making it – thanks!

    • You’re very welcome, Stacey! I’d never know what to feed my family if I didn’t plan. I may as well share it with others 🙂

      I have not tried the beef stroganoff with coconut milk myself, but I’m sure it would work just fine! As long as you are used to the taste of coconut milk. Any dairy substitute would work (rice milk, oat milk, almond milk). Otherwise you can just use extra broth in place of the milk. It’ll taste just as good.
