Belgian Waffles

Last night I made waffles for Justin for dinner. I got this recipe from my mom a long time ago. It works really well in our waffle iron. Each time I make them it seems like I get a different amount of waffles out of x amount of batter. I did a half recipe yesterday and got about 3 waffles. My usual estimate is 1/4 recipe = 1 waffle/1 recipe = 4 waffles. But I guess you could get more than 4 out of a whole recipe. Just depends on your waffle iron and how much batter you use. I made fruit topping from blueberries (from the farmer’s market) and raspberries (from our garden). The second pictures looks like it’s upside down because I was taking a picture across the table at Justin’s plate 🙂

Belgian Waffles

4 eggs, separated
1 cup milk
1 cup whole wheat flour
2 Tbsp. melted butter
1/2 tsp. salt
1/2 tsp. vanilla

In large bowl beat egg yolks until lemon colored. Add milk, flour, butter, salt and vanilla. Blend until mixed. In separate bowl beat egg whites until still peaks form. Fold into yolk batter. Pour onto greased waffle griddle and cook until browned on both sides. Makes 4-6 waffles.

Hashbrown Egg Bake

Justin has been talking about egg casserole with hashbrowns lately. So I found a simple recipe on All Recipes and tried it last night. He really liked it. I didn’t have any…I don’t care for sausage or hashbrowns that much. It was super simple to make, though. And could be prepped ahead. So it’s going in my recipe file:) I did a half recipe and put it in an 8″ square pan. It would probably be good with some sauted onion mixed in. And I might cut down slightly on the hashbrowns next time. Seemed like there were a lot of potatoes compared to egg and meat. Maybe it’s just me, though. I like an egg casserole to be more “eggy” than this was.

**I made this again (1/2 recipe) and used 6 eggs and a little less hashbrown. Worked very well. But it probably needs and extra 10 min. in the oven.

Hashbrown Egg Bake

2 cups hashbrowns
1/2 lb. bacon, cooked and crumbled (or cooked sausage or ham) (be sure they are nitrite/nitrate free)
1 cup shredded cheddar cheese
6 eggs
1 cup milk
salt, pepper

Combine hashbrowns, meat, 1/2 cup cheese and seasoning. Put in greased 8″ square pan. Beat eggs and milk. Pour on top. Bake at 350 for 1 hour. Top with 1/2 cup cheese. Bake 3-5 min. longer.

For a 9×13 dish double the recipe.

Applesauce Pancakes, Applesauce Chicken and Southwestern Sweet Potatoes

I made pancakes last Friday. Figured I’d post the recipe. It’s from Justin’s mom.

Applesauce Pancakes (I made them into blueberry applesauce pancakes)

1 egg
1/2 cup buttermilk (I just make sour milk…milk + vinegar)
1/2 cup applesauce
2 Tbsp. oil (I just use a little extra applesauce and leave this out)
1 cup flour (I used 1/2 white and 1/2 whole wheat)
1 Tbsp. sugar
1/2 tsp. baking soda
1 tsp. baking powder
1/2 tsp. salt

Beat egg. Add remaining ingredients and beat. Cook on hot griddle. Makes 6-7 pancakes.

*I folded in blueberries after mixing the batter.

Here is what we had for lunch today. Of course I forgot a picture as usual. I’m so bad about that lately. Rebecca is a big distraction :p They are both from A Year of Crockpotting. I made them in the same crockpot. I put the sweet potatoes in a tinfoil packet next to the chicken. It worked perfectly! It’s nice to know I can make 2 dishes at once in my crockpot now and don’t always have to do an all-in-one. I can do a separate meat and side dish.

Crockpot Applesauce Chicken

4 chicken breasts or thighs
1 1/2 cups applesauce
1 onion, chopped finely
1 Tbsp. apple cider vinegar
1/4 tsp. cinnamon
1/2 tsp. pepper
1/4 tsp. red pepper flakes (I left these out)

Put chicken in crockpot. Add onion. In small bowl mix applesauce, vinegar and spices. Pour on chicken. Cook on low 5-7 hours or high 3-4 hours.

Southwestern Crockpot Sweet Potato and Corn Medley

3 medium sweet potatoes (first ones from the garden today!!)
1 can corn, drained (I just put in some frozen corn)
1/4 cup chopped onion
2 limes, juiced (I used bottled lime juice)
1 tsp. chili powder
1/2 tsp. salt
3 Tbsp. chopped fresh basil (I used dried…about a tsp.)

Peel and cube potatoes into 1″ chunks. Put in crockpot. Add onion, corn and basil. Sprinkle on chili powder and salt. Squeeze limes over top. Toss. Cook on low 5 hours or high 3-4 hours.

Granola

Homemade granola is such an easy breakfast or snack to have on hand in the cupboard or in the freezer. You can adjust it to your own taste.
 
Mary’s Granola
12 cups rolled oats
1 1/2 cups dried fruit (any mix or just raisins)
2 tsp. cinnamon
optional mix ins:
-1 1/2 cups wheat bran or wheat germ
-1 cup chopped crispy nuts (almonds, pecans and walnuts work well)
-1 cup crispy seeds (pumpkin, sesame, sunflower, etc.)
-1 cup shredded coconut
-1 tsp. vanilla
1/2 cup honey and/or maple syrup
1/2 cup melted butter or coconut oil or combo of each
 
Heat oven to 325. Mix all dry ingredients, except fruit in one or two large bowls (however it is easiest to stir). (Mix a small amount of safe (oats, coconut, wheat bran, coconut, rasisins), dry ingredients in a smaller bowl for a toddler to mix and eat:) Heat honey and butter/oil in small pan until all melted/mixed. Pour over dry ingredients. Mix well. Spread granola onto baking sheets (you can do all of it on 2 sheets…they’ll be very full. Or you can do it on 4 sheets (2 batches) so that it bakes a little more evenly. You may have to cut the baking time down a bit if you do it on 4 pans). Bake 20 – 30 min., stirring 2 or 3 times throughout. Add fruit during the last 5 min. or after granola is done baking. Let cool. Store in sealed container or bag. Freezes well. I generally freeze it in gallon freezer bags then just take out a little at a time as we need it. It can even be eaten directly from the freezer. You can scale the recipe down if you don’t want to make a large batch. I make a ton and freeze it so that I don’t have to make it all the time.

Granola
 
4 cups rolled oats
1 cup wheat germ
1 cup chopped nuts
1 cup coconut
1 (1 oz.) can sesame seeds
1 cup raisins
1/3 cup oil
1/3 cup honey
1 cup chopped dates (optional)
 
Heat oven to 300. Combine dry ingredients. Heat oil and honey to combine. Pour over dry ingredients. Mix well. Spread on baking sheet. Bake 12 min., stirring after 6 min. Add dates. Let cool.
