Ranch Cheese Ball (grain free, egg free)

For our Christmas brunch Justin requested a cheese ball.  I did a quick search and found a super simple recipe on All Recipes.  I pretty much followed the recipe, except I used homemade ingredients.  And I only made a half recipe…and that was plenty!  A whole recipe would make a huge cheese ball.  It says a whole recipe serves 7.  That must mean if that is the only thing you are eating for the meal 😛  I served a half recipe at 2 meals and there is still at least half left.  This was really good.  And super easy.  I’ll post the half recipe

Ranch Cheese Ball

1 (8 ounce) package cream cheese, softened
2 Tbsp. homemade ranch dressing mix
1 1/4 cups shredded Cheddar cheese (I used a combo of finely grated sharp cheddar and mont. jack)
3/4 cups chopped pecans (I used a combo of crispy walnuts and pecans)

In a medium size bowl, mash cream cheese. Mix dressing mix and Cheddar cheese into the cream cheese. Shape the mixture into a ball. Roll the ball in the chopped nuts (I found it was easiest to do this in plastic wrap). Refrigerate covered until ready to serve.

    This sounds good. I’ve made something similar before, but not quite the same. I’ve been craving cheese ball lately… which seems really weird to me. Maybe I’ll have to make up a small one. 🙂
