For our Christmas brunch Justin requested a cheese ball. I did a quick search and found a super simple recipe on All Recipes. I pretty much followed the recipe, except I used homemade ingredients. And I only made a half recipe…and that was plenty! A whole recipe would make a huge cheese ball. It says a whole recipe serves 7. That must mean if that is the only thing you are eating for the meal 😛 I served a half recipe at 2 meals and there is still at least half left. This was really good. And super easy. Ranch Cheese Ball
1 (8 ounce) package cream cheese, softened
2 Tbsp. homemade ranch dressing mix
1 1/4 cups shredded Cheddar cheese (I used a combo of finely grated sharp cheddar and mont. jack)
3/4 cups chopped pecans (I used a combo of crispy walnuts and pecans)
In a medium size bowl, mash cream cheese. Mix dressing mix and Cheddar cheese into the cream cheese. Shape the mixture into a ball. Roll the ball in the chopped nuts (I found it was easiest to do this in plastic wrap). Refrigerate covered until ready to serve.
