End of Year Recap – 2013

My precious kids sure have grown over the last year! My little guy isn’t so little anymore.

We’re a month into the new year. It’s finally time to recap how my 2103 went. It was definitely a very unpredictable year. Because of that I did not accomplish some of my goals. My focus shifted from working on my site, getting better at photography, etc. to health struggles, allergy diagnoses and just trying to keep up. But through it all I did focus on acceptance. Acceptance of both the good and the bad. And in the end God was working through it all, even when I felt lost. He had a plan. Here is how my 2013 went.

1. WritingI will pursue making my writing and my blog into my career/a business. I’m not sure exactly how it will evolve. Here are some thoughts: giveaways, newsletter, update the look, new platform, monthly link roundup. I will likely be sharing a little less about my kids. And I’m still debating about keeping up with the monthly goals.

I did put a lot of work into my actual writing. I did finally switch to WordPress. I did do some round-ups. But I still have a lot of work to do to make this an actual business and make any money. That has never been my real focus. I bake/cook and write because I love it. But I do put a lot of time and energy into it. So it would be nice to get something in return.

2. PhotographyAlong with my writing I want to get better at food photography. I just got a book on food photography for Christmas. I’m very excited. My hope is to update pictures of some of my recipes. At the least the more popular posts. And continue to experiment and learn.

I still have a LOT to learn about photography. But from the beginning of the year to the end there was definitely a big improvement in my photos and the overall look of my posts. I’m still learning, but I did make good progress.

3. HealingI will continue to pursue improvement in my health. I’m very anxious for my test results in a couple weeks and figuring out where to go from there. I hope to start getting more sleep this year (I need to make it a priority). I want to continue to improve my mental health/decrease my OCD. Ultimately I’d like to not have any special “diet”…no restrictions. I will focus on being healthy.

My healing journey over the past year was quite monumental. I will be sharing a big update on just my health very soon. For now I’ll just say that I am totally amazed at the difference in my life now than it was a year ago. Things have changed in so many ways. In January of 2013 I had all sorts of tests done and was given a long list of foods to avoid. I was told I had all kinds of candida. I had heavy metals in my body. My adrenals were off. All sorts of stuff. Today I just do what works for my body and don’t stress about the rest. I finally get enough sleep. My OCD has improved a lot. One of my biggest health improvements has been with my thyroid. It took me many, many months of research, but I finally figured out that my main problem is hypothyroid…and I was on the wrong dose of medication. So now I am on the path to healing that and feeling great.

4. Homemade Food I want to make it a priority to feed my family less processed food. I make a lot of things from scratch. But I still reach for a box of organic crackers or fruit snacks sometimes for my kids. I’d like to get away from that. It’s so much fun to make homemade versions of our favorite snacks. Maybe I’ll go one by one through the boxes in the cupboard and recreate them.

I did start out the year gradually replacing foods in our cupboards with homemade versions. But then life happened. Health issues happened. And lately I’ve hardly been able to bake or make special snacks at all. But it’s only for a season. I will get back to it soon. My kids are still well fed and very healthy. I’m doing the best I can at the moment. And that is good enough.

5. RelationshipsI need to focus on building relationships this year. I want deeper friendships. But I also want to make my whole family a priority (husband, kids, siblings, parents). I need to be intentional about making time for this and putting in effort.

This was another goal that started out well. But during the second half of the year I had to put more focus on myself.

6. RebeccaI want to focus on Rebecca’s needs and make any necessary changes for her. We’ll be seeing a speech pathologist and a psychologist this month. Hopefully then we will have better direction. It’s still TBD if/when I’ll try any dietary changes.

Rebecca and I went on monthly mommy/daughter dates. We found out that she has pretty severe mold, dust and cat allergies. So we are working on those. Rebecca’s eating has improved greatly this year, so we no longer go to the speech pathologist. Rebecca was strict gluten free for most of the year. I think it is helpful for her. With both kids we are very strict on artificial flavor and coloring.

7. CraftsI love making crafts, but I don’t often have time. I’d like to find a few fun crafts to make at some point this year. It would be nice to start working on Christmas presents now so that I’m not scrambling at the end of the year. I always love giving homemade gifts, but I don’t think of it early enough. This could be sewing projects, but other types of crafts as well.

I did manage to make a few simple homemade Christmas gifts. Sadly I didn’t start them until December! But they got done.

8. CakesI will continue to experiment with cake baking and decorating. I just got some drawing books for Christmas. So my hope is to work on my artistic abilities and then translate that into cake decorating. At this point I’m still not trying to make this into a true business. It’s a hobby that I enjoy. But I don’t have time to do it often with small children.

I did a few cakes at the beginning of the year. As with everything else, the second half of the year was focused on health. I didn’t have the time or energy to do extra work like cakes.

9. DeclutterAfter another generous Christmas I feel like our house is overflowing. We are so blessed. But all of our blessings sometimes give me stress when I see messes and “stuff” everywhere. So I’d really like to simplify and declutter. We need to purge some toys and plenty of other stuff. I’m hoping to get started right away in January working on organizing toys and getting rid of old ones.

I did do some major cleaning in January. But that’s about it. And after birthdays, Christmas, etc. our house/clutter is even more overwhelming than ever. It’s still a stress for the whole family. It will definitely be back on my list for 2014.

10. AcceptanceI had a friend once that decided on a word for the year for her family. They focused on that one attribute the whole year. I thought it was a neat idea. Over the last few months one word has continually come to mind – ACCEPTANCE. God has been speaking to me about this. And I’m trying to listen 🙂 This is something I have a hard time with. But something I’m slowly learning. I need to accept myself the way I am and not compare myself to others or even myself (in the past). I need to accept my family members. I am such a perfectionist I tend to be very judgemental and critical of others. It’s not something I’m proud of. But it’s hard to control when it’s part of my personality. This year I want to truly accept others. Every quirk. Every habit. Whether they make choices or do things I agree with or not. I need to love and accept all the members of my family. And I need to accept all people. We are all so different. But we are all God’s creation. We all have different strengths and weaknesses. We all make mistakes. But we are all beautiful images of God. This will be my year of acceptance in all areas of my life. Instead of always wishing something was different, I will accept.

When I chose the word “acceptance” for 2013 never did I imagine all the forms it would take. I had to accept change (a LOT of change), giving up control, gaining weight, loss, unfulfilled expectations, receiving help and even joy. Through it all I’ve learned that God is in control, no matter how hard things are for me to accept. I also learned that I have to understand that God accepts me and loves me just the way I am…which will allow me to accept and love others. I hope God blessed you as richly as He blessed me in 2013. Despite the challenges  God brought so much good into my life. It’s almost incomprehensible. Changes that I have been trying to make year after year after year that I thought were impossible…He took control and took care of them. Health problems that have plagued me and made me feel so alone…He turned them around. Confusion and constant searching for answers…He gave me direction and a clear path. God is good.

“Now to him who is able to do immeasurably more than all we ask or imagine, according to his power that is at work within us, to him be glory in the church and in Christ Jesus throughout all generations, for ever and ever! Amen.” Ephesians 3:20-21

Meal Plans Week of 2-2-14

Happy Groundhog Day! I’m praying for an early spring this year. Until then we keep plugging along. And I hope my children don’t get lost in the snow.

This week is a bit busier than the week’s we’ve had lately. We have milk pick up. Both kids have Kindermusik (last week one was cancelled due to weather and we didn’t go to the other because of a dead car battery). I have a doctor appointment. We have parent teacher conferences and dance. And we have a MomBreak meeting. Hopefully this week my daughter will actually have school every day too. Last week she had three snow days.

I don’t have any big kitchen plans this week. Although it would be nice to make some kind of muffin or cupcake that my son can eat. And I’d like to make a batch of homemade gummies. My kids haven’t been getting much gelatin in their diets lately.

I have a lot of updates coming in the next few weeks. I’ve got a lot to talk about. So I’m breaking it down into three or four separate posts. Be on the lookout.

Meal Plans Week of 1-26-14

Finally, the last week of January! This is starting to feel like the eternal month of winter. It looks like this week will be more of the same…cold and snow and cold and snow. I am so anxious to be able to get outside when it’s nicer weather. But it could be quite a while before we can do that.

This week isn’t too busy. Kindermusik starts again for both kids. I should go grocery shopping too. We’ll also be getting together with family on Saturday to celebrate my dad’s birthday.

I need to make a new batch of gluten free bars and mayonnaise this week. My daughter keeps begging for cupcakes. We’ll see if we have time for that.

Meal Plans Week of 1-19-14

Welcome to the new site!! You’ll have to bear with me while I figure out how to use WordPress. Hopefully at some point I’ll get the site looking a little more to my liking. But for now I’m sticking with simple.

This week is another relatively slow one. Tomorrow there is no school/no work. So we get a three day weekend. Friday I have a MomBreak meeting. That’s about it.

Last week we finally got our new oven. So far I’ve only used it to bake corn muffins. Hopefully this week I can try it out a few more times. I need to make some gluten free bars. I should also make some more snacks and breakfast foods.

I think my thyroid medication is finally doing something. I haven’t had any leg swelling or pain in a long time. So hopefully I’m getting closer to my ideal dose. I have to give it another 6 weeks before I get my levels checked again.

Meal Plans Week of 1-12-14

Is it just me or does the weekend go by way too quickly? It’s already time to start thinking about a new week.

We’re gradually getting back to normal routines. We started last week with two snow days. So we really eased back into school. This week should be a regular week. There isn’t too much other stuff going on. I have a doctor appointment on Wednesday and a steering team meeting on Friday. I need to go grocery shopping as well.

There is one really big event this week…my blog is moving to WordPress!!!!! I hope it goes smoothly. I’m also still taking a blogging class.

We just switched my son to a toddler bed last week. Overall it’s going pretty well. The first few days he enjoyed the novelty of being able to get out by himself and didn’t want to go do sleep. But now he’s sleeping well. As you can see the lack of sleep did not help his demeanor last week. It was a very “spirited” week. Because getting dressed and taking off your coat are big ordeals.

I should try to bake muffins and make coconut milk ice cream this week so my little guy has a few things to eat. Other than that I’ll keep making dents in our clutter little by little.

I’m still working on goals for this year. They’ll definitely be different than years past. I’m hoping to post them in February.

Meal Plans Week Of 1-5-14

It sure feels strange to write 14 in a date. I’m still in Christmas break mode, so I haven’t been on the computer much lately…and I totally forgot to plan meals. Oops.

We don’t have a whole lot going on this week aside from going back to work and school. Tuesday is the Kindermusik family night. Dance starts again this week. And Friday is MomBreak.

I don’t have any real agenda for this week aside from getting back into the swing of things after a long break.

I realize I haven’t posted a year end recap or new goals for the year yet. I’m still working on both of them. I’m really reflecting on all that has happened in the past year and all that I hope for in the new year. So, they’ll be coming. But it might be a few weeks yet.

End of Month Recap – December 2013

December has come and gone in a whirlwind it seems. And here we are on New Year’s Eve, taking down Christmas decorations, unpacking from trips to see family, organizing and finding places for our new things…and preparing for a new year.

At the beginning of the month I wondered how I would get it all done. And now it’s all over. And it got done. And we were blessed beyond measure. Here is how I did on my December goals.

1. Health and Healing

*Sleep – I have been getting lots of sleep lately.

*Chiropractic care – I kept up with my two visits a week. Now my visits are slowing down.

*Allergies – The whole family has been tested for allergies now. My son has a lot of food allergies. My daughter and husband have a lot of environmental allergies. We’re working on making our house cleaner and more allergen-friendly right now.

*Thyroid – I get my thyroid checked again today. I know things are still off. So we’ll see what happens with my medication dose after the results come back.

2. Writing

With the crazy busy month of December I didn’t have much time or energy for writing. But don’t worry. I’m still here. Even if things are a little slower for a bit. And I’m excited for the changes coming to the blog in January!

3. Food

I’ve been keeping everyone fed. I do feel like I get in a rut with food for my son. So I’m trying to brainstorm new things for him.

4. Mommy Daughter Date

We went to see The Nutcracker! So much fun.

5. Crafts

I did manage to finish the homemade gifts I was making. Next year I need to start much earlier if I want homemade gifts 😛

6. Acceptance

This has been a month and a year full of learning to accept. I’ve learned to accept things that don’t go the way I expected. And I’m also learning that sometimes it’s hard for me to accept when good things happen. My fear kicks in that somehow they will be taken away or that it’s too good to be true. So I continue to learn acceptance one day at a time.

Meal Plans Week of 12-29-13

Happy New Year!  It’s crazy to think the new year stars in a few days. This has been quite an interesting year. But there’ll be more to come on that in my end of year post.

We don’t have any big plans this week. Our Christmas celebrations are finally over. School is still out. And we finally get to just relax. This is what I’ve been waiting for. I do have to get my thyroid levels checked again. And I have a chiro appointment. I need to go grocery shopping. And we have a church group even on Saturday. Other than that I’m planning on taking it easy. And maybe doing some cleaning.

No big baking projects this week. This is my week of break.

And no big health updates. We’ll see what my thyroid status is this week.

Gluten Free Dairy Free Lemon Blueberry Muffins (nut free, soy free, rice free)

Brrrr!!! Winter is really starting with a bang this year. We’ve already had so much snow. Now an ice storm. It sure would be nice to be somewhere warm and sunny right now!

I know that is not possible, but I can imagine. And a batch of lemon blueberry muffins really helps. They remind me of the bright, fresh flavors of summer.

These muffins are both gluten and dairy free. And they are very simple to make. My little muffin loving two year old can eat a whole batch himself in a few days.

So whether it is warm and sunny near you or you just want to imagine it is, give these muffins a try.


Gluten Free Dairy Free Lemon Blueberry Muffins
makes 12 muffins

3/4 cups amaranth flour
3/4 cups sorghum flour
2/3 cup organic cane sugar, sucanat or coconut sugar
1 tsp. baking soda
1 tsp. baking powder
1/2 tsp. sea salt
1 egg
1 cup applesauce
4 Tbsp. real lemon juice
4 Tbsp. coconut oil, melted
blueberries (fresh or frozen) (adjust amount for personal taste)

Heat the oven to 350 degrees F. Line a muffin pan with muffin cups.

In a medium bowl combine the flour, sugar, soda, powder and salt.

Add the egg, applesauce, lemon juice and oil. Mix until well combined (I use a hand mixer).

Fill the muffin cups 3/4 full with batter. Drop the blueberries into the muffins. Press down slightly.

Bake for about 30 minutes, until starting to become golden and baked through. Allow to cool for a few minutes before serving.

Meal Plans Week of 12-22-13

Merry Christmas! It seems as though we’re in for an icy Christmas instead of a white one. It’s been non-stop crazy weather in Michigan this December. But I’m praying it settles a bit before we have to travel. As for today, we’re waiting to see if church is cancelled. Thankfully we still have power. But I know it’s pretty nasty outside.

This week will be busy and fun all rolled into one. I’m excited to celebrate Christmas with family. I’m not so excited about all of the things I need to get done in order to do so. We are celebrating as a family on Tuesday, with my family on Wednesday and with my husband’s family on Saturday. And Monday will be busy with chiro, milk pick up, my husband’s allergy test and my daughter’s check up at the pediatrician.

I did not get nearly as much done in the kitchen as I had hoped last week. On the flip side I did finish my Christmas shopping and wrapping. My husband and I also did a lot of cleaning.


So this week I have a lot to catch up on. I need to make graham crackers, gluten free bars, coconut milk ice cream, some kind of Christmas treat (probably oreos) and chocolate swirl bread (my daughter’s request). And of course more cleaning. And the dreaded pack, travel, unpack, pack, travel. I hope I can get started on some of the organizing/packing today so I’m not so stressed/anxious about it and can actually enjoy our own Christmas celebration!

No big health updates. I have one more week of my current thyroid medication dose and then I get my levels checked. And we’ll go from there.

For meals I’m just planning dinners. When my husband is on vacation I don’t plan as much and just go day-to-day with breakfasts and lunches. I pray you will have a blessed Christmas, remembering the birth of our Savior. And don’t forget to enjoy some good food! Eet smakelijk!
