Meal Plans Week of 2-5-12

Good morning…good because Abram is asleep…at the moment…I think. Although I’m not totally sure. I may only have seconds 😛  On to a new week. Not too crazy of a week thankfully.

Last week was quite busy. And such odd weather for winter in Michigan! On Sunday we were playing in the snow. Yesterday we went for a family walk around the neighborhood…I didn’t even have a winter coat on! We had lots of fun activities. In the kitchen I made farmer’s cheese, sour cream, yogurt, (oh, here come the cries 🙁 and ice cream. I also finally had a little time to do some organizing in the living room and clean up in the kitchen.

Hopefully this week will be productive and relaxing. I’m going to try to plan better and do more prep work at once so I have more “free” time. If I have a morning that I don’t have anything pressing that needs to be done (i.e. make breakfast, etc.) then I will use it to sew, clean or sleep a little longer. I’m also planning to do a fair amount of grain soaking and try a couple recipes. I’d like to make granola, pesto, pureed carrots (for Abram), ice cream. Possibly beet kvaas and mayo. And we’ll see if Rebecca and I come up with any baking projects. I might bake my nephew’s birthday cake this week. I’m trying to plan breakfasts again. What you see on the menu is what Justin is eating for breakfast. Some mornings I will have the same thing. Others I won’t. My breakfasts in general will be salads, leftovers, smoothies, toast w/ almond butter fruit and eggs. It just depends what sounds good and how much time I have.

This week isn’t too busy. Although there is a chance to add a couple activities. Today is church. And of course watching the Super Bowl…or I should say Justin and Rebecca watching the SB while Abram and I play and do some food prep for the week. Monday I need to make a trip to Target, and I have a nursery cmt meeting. Tuesday is Kindermusik. Saturday is swimming. We could possibly go to the library again this week. And there is a chance for a playdate.

I gave my big update yesterday. Overall I’m doing pretty well. Especially considering I’m still on antibiotics. I’m feeling a little more like myself these days. And I have more energy. I hope this continues.

Here’s what’s on the menu. Tonight’s menu is a bit scattered. Justin likes lots of munchies for Super Bowl. And he got to pick one junk food request. His choice was frozen pizza. I don’t remember the last time I had a frozen pizza in the house. That’s what he’ll be eating. Rebecca and I will eat the other stuff 🙂

A final note of good news…one of Abram’s teeth finally came through! The one next to it should come any day now. I can’t wait for that. Poor little guy.

Mood, Brain, Diet – My Current Status

I’ve been wanting to write this post for some time now. But I keep coming across new information. And I’m still reading and researching. (Not to mention I don’t have much time to write a long post these days with a little guy that can’t seem to sleep past 6am.)  But I wanted to give an update of what I’ve learned so far…before I forget it or read too much! This is an update on my current status. I’m sure it will continue to evolve and change as I learn, but for now this is where I’m at. Since this has the potential to be another very long post I think I’ll save some of the detailed information for separate posts.

Last year I started GAPS. And it was great. I really think I experienced a lot of healing on my leaky gut. But after 6 or 7 months I started to feel worse. I struggled for a couple months wondering what was going on. I had been doing so well, the OCD was improving, digestion was better, etc. Then it went the opposite direction. What happened? I started getting more obsessive as I tried to do things “perfectly” to no avail. My tummy got worse. I got moodier and more anxious. The holidays were rough being so over anxious and not feeling well. This isn’t supposed to happen…that’s what I thought. But after a month of research and changing my diet a bit I’ve learned a lot. It is actually VERY common for that to happen. Why? I was eating way too low carb. And possibly too much protein and fat for my body to handle. I let my body get run down by not eating enough carbohydrates. I let my brain chemicals get too low…which led to the increase in OCD, anxiety and bad moods…which leads to stomach knots. I’m over tired, over stressed and just plain worn out. My hormones are out of balance – adrenals, thyroid, progesterone, estrogen, testosterone, etc. My brain chemicals are out of balance. It’s one big mess 😛  I have been doing a lot of reading lately. And most of what I read comes to the same conclusions about what is going on and what basic direction I need to head.

So I kind of know the problem (in general…my specific hormone/chemical needs are things I’ll have to figure out). That in itself is a stress reliever and helps me relax. But now that I’ve identified some issues, what can I do about them?

First – relax!! This is the biggest thing for me. If what I eat causes anxiety it doesn’t make much difference if it’s nourishing or junk food. It will still cause me harm. If the whole time I’m eating I’m worried a particular food will make me sick…then it will. There is no magic pill or diet that works for everyone. There is no one RIGHT way to eat/live (i.e. GAPS, paleo, primal, WAPF, gluten free, dairy free, vegetarian, etc.). There is no one-size-fits-all. I have to figure out what works for me no matter what any book, website, blog, doctor, etc. says. Although GAPS was a great tool for healing my gut it was too rigid. I got so worried about what I could and couldn’t eat and about eating the “wrong” thing. I’d obsess over every meal/food when I didn’t feel well. Was it this? Was it that? Why can’t I eat that…it’s “supposed” to be safe. I’ve learned that I have to experiment and figure out what works for me. Over the last few weeks I’ve really relaxed my diet. I’ve thoroughly enjoyed eating bread, potatoes, rice, quinoa, yogurt, kefir, milk, ice cream. I still don’t know how they will impact me or how I’ll really tolerate them in the long run. But for now I’m just not worrying about it and enjoying food. Don’t get me wrong, I’m still eating real, nourishing food. But I’m not so strict about things in general. Some days I get more veggies than others. Some days I eat more eggs, some days less. Some days I eat more fat, some days less, etc. If I’m craving a lot of fruit one day I’ll eat it. I’ve even had 3 ice cream cones in the past week (of homemade ice cream :). Ice cream cones are my absolute favorite food ever. And I haven’t had one since before Abram was born!! It was so nice to relax and enjoy my favorite food again. I didn’t have to go overboard like I used to (I used to make massive cones…that’s a whole different eating issue/mentality I used to have). Just a small cone that I could enjoy without stuffing myself. I need to relax and enjoy eating. I can already tell that this has made a difference in my stress level and overall mood. I’ve gained about 5 lbs. since Christmas since I’m relaxing and enjoying so much food 🙂  I’m learning I will never get rid of my digestive issues if I continue to worry about food and restrict my eating. I need to eat enough and not worry about it.

There is another type of relaxing that is a bit tougher…a generally relaxed life. With a strong willed 3 1/2 year old and a very busy toddling, early rising baby there is never a dull moment around here. I don’t have much time to myself/time that I can truly decompress and fully relax. My mind never gets to “turn off.” Especially since nobody but Justin can watch Abram at this point. He has such stranger anxiety that even his own grandmothers can’t hold him. So he is ALWAYS with me…when I’m home, when I’m at MOPS, when I’m at church, when I run errands, etc. I love him. But sometimes I just need a little break. So that is something I need to work on. But at the same time it may not change much while I have small children. One thing I would like to look into to help is yoga. I would like to do yoga a few mornings a week instead of biking.

Another big component that I read about over and over is getting enough sleep. This is another big one for me. Due to my OCD and trying to get a few free min. in my day I get up at 4 am every morning. I use this time to do work in the kitchen, exercise, read, shower, get ready for the day before the kids are up, etc. Even getting up at 4 doesn’t always give me much time with a baby that gets up so early. In addition to getting up early I’m usually up a couple times in the night feeding Abram. That is just the life of a breastfeeding mom. But it all leads to major sleep deprivation. Which leads to major hormonal imbalances and always being stressed out and worn out. I consider it a good night if I get 3 consecutive hours of sleep once. Pretty sad. I need to put more effort into getting more sleep. I’m not sure at this point how to go about doing this. I can’t control Abram’s sleeping. But I would like to adjust my mornings so that I can sleep in a little sometimes. And go to bed earlier sometimes. One night this week I went to bed at 9 instead of 10:30. That sure was nice!

Relaxing and sleeping are two key components. Now I get down to the rest of the details. I have read several books and several diet theories lately. There is a lot of overlap in the information I have read. So I do have some direction. But I also have to figure out what works for me. One of the main components of health (especially mine) is the health of your brain. Many conditions that are said to be “psychological” are actually physical…they are caused by chemical imbalances in the brain…and they can be fixed! There is so much information on this topic. I am going to speak in very general terms/only skim the surface of what I’ve read. I highly recommend reading on this subject to everyone! I read “Change Your Brain Change Your Life,” “The Mood Cure” and “The Edge Effect.” All three books talk about the four main chemicals/amino acids that control your mood – dopamine, acetylcholine, GABA and serotonin. Everybody is dominant in one of these and it is what determines their nature/personality. Any or all of them can be out of balance…which causes psychological disorders and physical ailments. I believe that I am out of balance/low in both GABA and serotonin…which greatly contributes to the OCD, anxiety, constipation, inability to relax, overactive parasympathetic nervous system, hypothyroidism and infertility. GABA and serotonin both help the brain/body to relax.

What can I do about it? Well, that’s a bit tricky. All three books agree on some aspects, but greatly disagree on others. I tend to put the most trust in the information in “The Mood Cure.” Although the other authors have years of experience and lots of great info, I can’t fully support someone that tells you to stop eating saturated fat and instead eat polyunsaturated fats. One book even says that aspartame is good for increasing dopamine levels. Artificial sweeteners? No thanks! They all talk about medications, supplements, diet and lifestyle. As always my first line of defense is diet. I am gathering ideas/info from these books along with the theories of metabolic typing and blood type diets. I see where they all overlap, experiment and decide if it works for me or not. But here are some of the key components that I feel will help me.

DIET

1. Carbohydrates – I need to find the right balance of protein, fat and carbohydrates. I was eating way too low carb for a while. I need to increase my carbohydrate intake. I am still trying to figure out how much of that should be fruits and vegetables and how much (if any) should be grains and starches. I will have to experiment with the grains and starches. See how I do with each kind, especially those containing gluten. All of the sources I’ve looked into recommend a decent amount of carbohydrates in my diet. My blood type, metabolic type and brain chemical imbalance all require plenty of carbohydrates.

2. Protein – This is where “The Mood Cure” shines. Julia Ross emphasizes the importance of getting enough protein in your diet (all 3 books do, but she really goes into it.). Getting your brain chemistry back in balance is accomplished by getting the proper amino acids. And where do we get amino acids? Protein!!! It’s the only source. And animal protein is the only complete source. For example, serotonin is produced by tryptophan…which comes from things like poultry. Ross recommends at least 20-30g of protein three times a day (at each meal). I think I do pretty well with protein in general. Although as I’ve mentioned before I struggle with beef. Which is frustrating because it’s so healthy. I thought it was fascinating (and reassuring) to read this from Ross:

“Note: For better protein digestion, people with Type A blood seem to do best adding supplements of hydrochloric acid when eating animal protein, as they are known to be weak in this protein- (and mineral-) digesting acid.” I do have Type A blood. I guess I’m on the right track taking my stomach acid with dinner. Maybe I need to order more and start using it at each meal again for a while.

Ross also talks about the importance of eating fish. “It’s so quick to prepare, so easy to digest, and contains, along with plenty of all twenty-two aminos, the unique omega-3 fat that your brain needs to correctly form the cells in your brain, your eyes, and the lining of your arteries, among other things.”

Her list of great sources of protein (in order) include” fish; poultry (especially cornish game hens due to their good balance of omega-3 and omega-6 fats); eggs; lamb, beef, pork, venison and buffalo; dairy products and shellfish.

3. Fat – This is another important factor. It is also one where I see “The Mood Cure” really shining again. Julia Ross recognizes the importance of omega-3 fats and saturated fats and decreasing omega-6 fats. This is actually one area that I don’t really need to work on. I eat quite a bit of fat. Daily I eat coconut oil, butter and EVOO. I also eat raw egg yolks daily (often 2-4 a day). I eat avocados daily (anywhere from 1/2 – 1 1/2). Plus I take a decent amount of fermented cod liver oil/butter oil. In addition to that I get fat from the protein sources I eat – meat, dairy, nuts, etc. (I do eat nuts sparingly so as to not get too many omega-6 fats).

4. Eating Enough – This is another key component for me. I am not a big person. And I hate feeling too full. So I tend to undereat I think. To my body that is a sign of starvation…which leads to anxiety, imbalances, etc. So I am trying to push myself a little to eat more. Like I said earlier I have gained 5 lbs. recently. So I think it’s working. Just a few extra pounds gets me out of the underweight category and improves my mood. Undereating also can be a cause for constipation. If you don’t eat enough your body will hold on to what it has and try to suck out every last nutrient it can.

5. Variety –  I tend to find something that “works” and then eat it day after day. But then it stops working as my body adjusts and starts digesting it differently. So I need to keep changing things. Even if I eat the same foods regularly I need to rotate them, take breaks and then bring them back, etc.

6. What to Avoid – sugar, caffeine, simple carbohydrates (white flour, etc.), artificial sweeteners, colorings, artificial ingredients, additives, soy.
SUPPLEMENTS
All three books recommend basically the same supplements for the same conditions. Since all of the books are written by experienced psychologists and say the same thing I believe there is a lot of validity to it. I hope to do separate posts on the specific brain chemicals and the corresponding moods and disorders. For now I’ll just mention the supplements that could help. I also want to mention that as badly as I want to try these I’m not yet. I just don’t know if they are safe while breastfeeding. I will start with diet and relaxation techniques. And if I really think I need to start the major supplements I’ll probably see my psychologist to get her thoughts.

1. Serotonin – This important chemical comes from the amino acid tryptophan. The most commonly recommended supplement to increase it is 5-HTP. Tryptophan converts into 5-HTP…and 5-HTP converts directly into serotonin. If 5-HTP doesn’t work there is l-tryptophan, St.-John’s-wort, and SAM-e. I want to include a short portion of what Julie Ross says about your gut and serotonin:

“If you’ve lived wtih your stomach in knots because of low serotonin worry or anxiety, it might help you to know that 90 percent of the serotonin in your body is not in your brain; it’s in your gut. When you raise your serotonin levels, your digestive tension (including constipation) can often dissolve along with your mental constriction.” Sounds a lot like the GAPS theory to me 🙂

2. GABA – This is the brain’s natural Valium. You can take GABA, taurine and glycine.

LIFESTYLE

1. Exercise – Exercise is a natural stress reliever. It helps increase serotonin. But you also have to be sure to not overexert yourself. Otherwise you can have adrenal fatigue.

2. Sleep – ideally at least 7 hours a night. I haven’t figured out my plan yet to try to get more sleep. I’m afraid that will just have to come with time…as Abram gets older and sleeps through the night.

3. Relaxation – I need to find ways to relax. I’d like to try yoga.

That is the basic rundown of where things are at right now. I’m experimenting and seeing what works for me. I’m staying open to changes. I now know that just because something starts out great does not mean it will work forever. I need to be cautious of extremes and try to find a good balance in my life. I am currently eating grains and dairy. But both could potentially be hard on me. Again, I’m experimenting right now.

I did want to mention that it is kind of funny that in college although I was not eating healthy by my current standards, maybe I had my ratios in a better balance. I rarely ate red meat. And I ate plenty of carbs. And that was the only time in my life that I ever had regular cycles. So my hormones were a bit better balanced. Maybe I had things somewhat right…but I was eating junk food instead of real food. Now maybe I can bring it all full circle, eat the proper ratios, eat nourishing foods and get my body back on track. Only time will tell. But I already feel like my mood and anxiety has greatly improved in just the last week.

Finally I want to mention one more source of great health information that I’m just starting to dig into. It’s called 180 Degree Health. Matt Stone (the author) has a lot of controversial theories and health ideas. But a lot of it makes sense. He talks about letting your body totally rest, feed it well and getting back in balance. This is something I actually heard about a couple years ago, downloaded his info…and then forgot about it 😛  But I’m hearing about it more and more again lately. So we’ll see what comes of my research on that.

I’ve been kind of rushed getting through this post. I hope it makes sense and conveys what I wanted. I’d love to hear feedback, hear of any success stories of others that have used diet and supplements to improve both mental and physical disorders.

The Letter S

I can’t say we did a lot with the letter S last week. We were just too busy. How fitting that we got a Berenstain Bear book from the library called Too Much Pressure…they were doing too much stuff and didn’t have time to just relax and enjoy life 😛  We did do a few things. It was Sister Bear week. So we got lots of BB books from the library. We also ate cocoa and honey bread, crunchy carrot sticks, nuts and raisins just like Sister Bear.

Meal Plans Week of 1-29-12

I really can’t believe January is coming to an end in a few days. This has been such a crazy winter so far that it hardly even feels like January! That’s just fine with me 🙂

Last week was back to busy. We had fun catching up with friends at Kindermusik and a MOPS playdate. We finally made it to the library and stocked up on new books. Lots of reading going on right now 🙂  Rebecca had a blast at swimming lessons. We enjoyed a fun afternoon and evening yesterday with family, celebrating birthdays. And we signed Rebecca up for preschool!! We are all excited for her to start the Spanish immersion program at a local Christian school this fall. I also had to make a quick trip to the doctor on Friday.

The kitchen was busier than I expected. I made mayo, pesto, sour cream, 3 batches of cream cheese, 2 batches of yogurt, breakfast pastries, sd crackers, biscuits, granola bars, cupcakes and ice cream. I experimented with the ice cream, making it from a combo of cream and coconut milk and sweetened it with just honey. I made butter pecan…and it tastes great! I’m happy to have an ice cream I can eat and truly enjoy. Especially after reading this post on Nourished and Nurtured. Ice cream is good for me? Well, bring it on 😛  Lots of grain soaking last week too 🙂  It was nice to enjoy biscuits, pastries, pancakes and a BLT!

Another busy week this week. Today is church. Monday is milk pick up. Tuesday is Kindermusik. Wednesday is groceries. Friday is MOPS. Saturday is swimming, and Justin has an orchestra concert.

There is a lot I’d like to get done this week…but I also don’t want to overdo (for myself or the kids). So we’ll see what happens. For sure I’ll make my usual dairy products. Plus whatever needs to be done for meals. I’m not sure yet about any baking projects with Rebecca. I want to increase our vegetable intake this week. Maybe I’ll let Rebecca pick out some different colored veggies at the store. I might try making beet kvaas. I’d also like to try quinoa this week.

I do need to finish planning my nephew’s birthday cake. I also would like to schedule a hair cut for myself and for Rebecca. And possibly start on some sewing projects.

I have a lot of updates/thoughts on myself. I’ll try to do a separate post soon. I did finally decide last week that beef and I just don’t mix. I have tried and tried and tried. I know it is so healthy. And I love it. But every time I eat it my stomach is in knots the next day. Mostly with roast or steak. Even if I don’t eat a lot. So for now I’m going to have to avoid it most of the time. I think I can still handle some ground beef. With all of the issues I seem to have digesting meat I might start adding in meatless meals once in a while again. They will still have plenty of protein, just not meat. I mentioned that I went to the doctor last week. I have some kind of infection on my c-section scar. So I’m on antibiotics 🙁  That will just add to my gut issues. But I think it’s an indicator of what I’ve been learning over the last couple months of mood changes, diet changes, researching, etc. My body is getting run down. And
something has to change. More to come on that in an update post and my February goals.

Soaked Whole Wheat Biscuits

I recently downloaded the soaking grains e-book from Kitchen Stewardship. Tons of great recipes. And it’s free! This week I tried Katie’s biscuit recipe. It is super easy. And I was pleasantly surprised with how they turned out. Not exactly like a biscuit you might be used to. But not far off. And very good! I’ve been enjoying them all week. It’s nice to have some bread in the house that I can experiment with that I know is properly prepared. We all enjoyed these biscuits (with lots of butter 🙂 with a big bowl of soup. And they are great toasted with butter or nut butter. These hardly require any hands on time. Perfect for a busy mom 🙂

Soaked Whole Wheat Biscuits

2 c. flour
3 tsp. baking powder
½ tsp. salt
¼ cup butter or coconut oil or lard
¾-1 cup buttermilk or yogurt

Cut fat into flour and mix with cultured buttermilk or yogurt. Leave on counter overnight (be sure it’s covered so it doesn’t dry out). Sprinkle the baking powder and salt over the top and fold in as thoroughly as possible yet with as few strokes as possible. The key to flaky biscuits is less handling. Roll out approximately 1 inch thick and cut with a glass dipped in flour (or you can make rounds by hand).

Bake at 425 degrees on ungreased baking sheet or stone for 13-15 minutes (parchment paper works great).

Soaked Cream Cheese Breakfast Pastry

I’m trying to make more properly prepared grains these days. So this week I tried a Nourishing Traditions recipe for cream cheese breakfast pastries. You use homemade cream cheese to soak the flour. They turned out really well! If Justin approves of a soaked baked good I call it a winner. And they were quite simple to make. They are best served warm. They reheat very well. This makes quite a few pastries too, so now I have a stock in the freezer.

Cream Cheese Breakfast Pastries
makes 18-24

1/2 cup butter, softened
1 cup homemade cream cheese, softened
2 cups whole wheat flour
1/2 cup rapadura
1 Tbsp. vanilla
1 tsp. salt
1/4 cup melted butter
2 tsp. cinnamon
1/4 cup crispy pecans, finely chopped

Mix butter, cream cheese and flour using an electric beater. Leave in a warm place 12-24 hours.

Mix in rapadura, vanilla and salt (I used my hand mixer for this).

Roll out dough on floured surface to 1/4″ thickness. Brush with melted butter. Sprinkle with cinnamon and pecans (I also sprinkled a little cane sugar on). Roll up 1 1/2 turns and cut dough lengthwise. Repeat two more times. You should now have three long rolls. Cut the rolls crosswise into 1 or 1 1/2″ lengths. Place individual pastries on a buttered baking sheet. Bake at 300 degrees for 45 minutes. Serve warm.

These store well in the freezer or refrigerator and the flavor improves with time. Reheat before serving.

Rustic Chicken Stew

For Sunday dinner this week I made rustic chicken stew. It’s not a new recipe to me, but I haven’t made it in a long time. I used to make it all the time, when I was first learning how to cook and how to use my crockpot. It’s from a cookbook called The Ultimate Slow Cooker Cookbook. It’s a super easy chunky chicken stew. I like that it doesn’t require much chopping since it’s supposed to be “rustic.” The recipe calls for cut up blsl chicken. I just tossed in a couple chicken legs since that’s what I had on hand. Then we took whatever meat off the bone we wanted for our individual bowls. I’m not sure why I haven’t made this for so long. It’s so easy and so good. I’ll have to put it back on the menu more often. I’ve never added the mushrooms since Justin doesn’t like them. But I’m sure it would be very good (I LOVE mushrooms). This can easily be made GAPS legal by omitting the potatoes.

Rustic Chicken Stew

2 lbs. chicken – breasts, thighs, etc – on or off the bone, whole or cut up
3 medium onions, quartered
2 carrots cut into 1″ thick slices
2 potatoes cut into 1″ cubes
4 cups chicken broth
1 tsp. celery seed
1 tsp. dried thyme
1/2 tsp. pepper
8 ounces mushrooms, halved
1 cup frozen corn
1 cup frozen peas
salt and garlic powder to taste

Combine all ingredients in the crockpot. Cook on high 4 to 9 hours or low 7 to 12 hours. If you like your peas and corn less well done you can wait and add them in the last 15-30 minutes of cooking.

R week was kind of Random. And how fitting that some of our neighbors/friends stopped by yesterday doing Random acts of kindness…they brought us cookies 🙂  We didn’t do any major projects. My focus this week was Rebecca and doing what she wanted. We actually had a decent amount of one-on-one time. And her request is always play playmobil 🙂  So that’s what we did. We also focused on reading this week and spent a lot of time doing it. Here is a rundown of a few of the things we did this week. I didn’t take many pictures this week.

Meal Plans Week of 1-22-12

As I expected January is flying by! But I feel like I’ve been accomplishing a lot of my goals and learning a ton! So, it’s fast but good 🙂  Last week was fairly busy. But since Rebecca had a cold we couldn’t do everything we wanted…like go to MOPS 🙁  I guess I have to wait a couple more weeks for some mommy down time/chat time. We did go to another preschool open house. Only one more to go. Rebecca also started swimming lessons yesterday. We weren’t sure what she would think (she’s not what I would call a little fish :P). But she loved it! In the afternoon Rebecca and I had our Mommy-daughter time and went to the fabric store. We picked out some patterns for doll clothes and clothes for Rebecca. I got stuff for a couple other projects as well. I have enough sewing projects to keep me busy for a LONG time now. I just have to find the time to work on them.

The kitchen was busy as usual. I made 2 batches of yogurt, sour cream, apple raisin cake, vanilla pudding, hot fudge, dried apples, almond butter and cream cheese. I also made another attempt at butter. It sort of worked. I tried making sure the cream was at the right temperature. Then I shook it in a mason jar for a while. It wasn’t getting there. So I put it in the Vitamix. That didn’t work either. I think it started getting too warm. I chilled it a bit. I tried the jar again. Then I tried my hand mixer. In the end I did get some solids to separate. I rinsed them and put them in the fridge…but they are still quite white. So it has the texture of butter, but not the look. It’s kind of not quite there butter 😛  I think I’m done with butter for now.

This week will be fairly busy getting into our winter activities. Swimming lessons just started, and now Kindermusik starts up again this week. It was nice to have a break from everything. Hopefully we are up for the busyness again. Today is church. Monday I think we’ll go to Harvest Health. Tuesday is Kindermusik. Wednesday we might go to the library, and it is co-op pick up. Thursday is another preschool open house. There is a chance there is a playdate with my MOPS group on Friday, but I never heard if that was finalized or not. Saturday is swimming, and we’re going to a basketball game and out to dinner with all of my family to celebrate my dad’s birthday and my grandma’s birthday. We’re entering the season of birthdays around here. And it won’t stop until May. I also need to set up some playdates that we had to cancel recently. They won’t happen this week, but I need to get them on the calendar…or they’ll never happen 😛

I have some projects planned in the kitchen this week. For sure I want to make mayo and pesto. I’ve been eating salads for breakfast (and some lunches) every day lately. And pesto is a great dressing to have on hand! It’s basically veggies and olive oil. I would also like to bake some bread. I haven’t decided what kind yet. I just got a free e-book from Kitchen Stewardship that is all soaked/sprouted/sourdough recipes. So I might try one of those. There are also a couple breads in my Vitamix cookbook I’d like to try. I might be making cupcakes for our celebration on Saturday. I haven’t gotten to do any cakes in a while so that will be fun. I also need to work on planning my nephew’s birthday cake that I’ll be doing in a few weeks. I want to bake some sourdough crackers (I still have some dough in the freezer). Rebecca is doing the letter S this week. She has been waiting for this week because Sister Bear starts with S. So I thought I’d make her some of Sister Bears favorite foods – cocoa and honey bread, carrot sticks, nuts and raisins and “possum” stew (we’ll do beef stew :). And for our meals I’ll do some Soups and Sandwiches. I need lots of simple, prep ahead meals this week. I’m sure I’ll be using the crockpot a lot. I’d like to get started on some sewing projects soon, but I’m not sure it will happen this week. We’ll see.

On the health front I’ve been reading and learning so much! I finished reading Change Your Brain Change Your Life. And I’m part way through The Mood Cure. So much great information. Especially in TMC. It seems that all of my reading on the brain and the gut is leading me down a similar path. I will do a separate post on it soon. I’ll just say that for now I need to focus on a good balance of protein, healthy fats and vegetables. And experiment with small amounts of other carbs like potatoes, rice and grains. The critical thing for me dealing with OCD is to increase the serotonin levels in my brain through food and supplements. One thing that I really need to focus on is eliminating sugar. I’m seeing just how much that impacts your mood and overall health. I am hoping to find some amino acids at Harvest Health and start on those. Last week I tried potatoes, rice, wheat and sweet potatoes. Overall I did ok. But Thursday I had steak and sweet potatoes…and I’m still trying to recover. I still don’t get it, but steak just doesn’t work for me. And in combo with potato was even worse. The odd thing is that I seem to do better with grains (like wheat) than I do with other starches like rice and potatoes.

I finally made some progress on money-making and more blog exposure this week. More to come on that next month.

Apple Raisin Cake

Yesterday Rebecca and I made a simple “cake” for our baking project. The recipe is from my Vitamix cookbook. In the book it is called a bread. But it is baked in an 8″ pan and is a lot more like cake to me. The end product is very good. It’s quite moist from all of the dried fruit. Not too sweet (I do think you could decrease the honey a bit and be just fine, though). And I like the simplicity of being able to mix it all in the blender. That being said…it was not so simple when I actually made it. I followed the directions…and could not get the batter to mix at all. I was constantly scraping, trying to stir things, etc. I ended up adding extra water and starting and stopping at least 10 times. It turned into quite a mess 😛  If I make this again I think I’ll add more liquid right from the start. And possibly have an extra blending step before I add the dried fruit. I did not have lemon, so I just skipped that. And I skipped the orange peel.

Apple Raisin Cake

1 cup whole wheat flour (preferably freshly ground…3/4 cups wheat berries ground in the dry blender)
1/4 cup uncooked rolled oats
1 medium apple, quartered, seeded
1 thin slice lemon, peeled, seeded
2 Tbsp. water (I probably used about 1/3 cup)
1 thin slice orange with peel
1/2 cup honey (I’ll probably use 1/3 cup next time)
1/2 tsp. ground cinnamon
1/4 tsp. salt
1 tsp. baking soda
1/4 tsp. allspice
1 cup raisins, dates or other dried fruit (I used a combo of raisins, dates and dried cranberries)

Heat oven to 350. Grease an 8″ baking pan.

Place flour adn oats into blender. Blend on  high 1 minute.

Add the rest of the ingredients in the order listed. Blend for 30 seconds, or until mixture is smooth and batter-like. (Next time I will do this in two steps…all of the ingredients except the dried fruit, blend, then add fruit and blend again). Pour into baking pan.

Bake for 25-30 minutes.
