The Letter V

Both kids are up and raring to go. Gotta make this quick. Last week was the letter V. We mostly focused on Valentine’s Day.

So…I didn’t actually get to finish this post earlier. We’ll see if I get a few min. to do it now.

Meal Plans Week of 2-19-12

Here we are at the last full week in February. Time is just flying by. Last week we kept plenty busy with errands and stuff around the house. I was also busy with cake decorating. And we had a fun trip yesterday to visit my family and celebrate my nephew’s birthday at his Lego party.

There is plenty going on this week as well. Today is church. Monday I have nursery cmt, and we’re getting our van fixed. So it will be gone for a couple days. Tuesday is Kindermusik and Justin possibly has orchestra. Wednesday is Abram’s 9 month check up and co-op pick up. Thursday Rebecca and I are having our Mommy/daughter date. We are going to family time at the Children’s Museum. We’ll pack a picnic dinner and eat there. She is soooo excited to go to the CM and have me all to herself. I have to say I am pretty excited myself 🙂  I don’t normally get to “play” when I take both kids. So this will be fun. Hopefully the boys will manage at home ok 🙂  Saturday is swimming lessons.

I’m not totally sure what I will be making in the kitchen this week. I want to start a new sourdough soon, but I don’t have the right flour at the moment. I’ll have to wait until I make a trip to the health food store I think. I might make a batch of regular granola now that I have more oats. And I want to try some soaked cold cereal. In general I want to try some new soaked grains for breakfast. I’ll be doing quinoa this week (a recipe I’ve made before). I might try making some soaked bread. And I’ll be doing another batch of soaked biscuits (my third one already!!) for our dinner on Saturday. I will make our usual weekly batch of yogurt and kefir. I’m not sure yet what I’ll do with our cream. We have 3 kinds of homemade ice cream in the freezer right now (totally nutty, chocolate cashew and blueberry cobbler…yum!!!). And I have some sour cream from last week.

Last week Rachael Ray had Waffle Week and showed all kinds of crazy recipes you can make with a waffle maker. So since our letter is W this week I might have Rebecca help me make a few varieties of waffles. Maybe we’ll have waffles for lunches.

I still haven’t made any more progress on my sewing. Maybe this week. We’ll see how Abram sleeps 😛

Abram is really growing leaps and bounds. He now has 5 teeth. He has started clapping and saying “yaaaaay.” He can now say neigh (sounds like an evil laugh), moo (sounds like he’s booing) and quack. And he calls for Rebecca all the time – “Ca!, Ca!” It’s so cute. He looks for her/calls her when he can’t see her. Abram is starting to stand quite well on his own. And he can walk quite well if he’s holding something. I’m thinking any day now he’ll put the two together and we’ll have a walker! I’m anxious to see how big he is at his check up this week. I finally started giving him cod liver oil last week. Even more brain food 🙂  Now if only we could get him to sleep.

I’m still working on figuring out what works for me and finding balance. I seem to do better with higher carb and fat and lower protein (though I do have to be sure I get enough protein to keep serotonin levels up). I can definitely tell if I eat a meal that is heavy on protein…I instantly feel like I have a brick in my gut. I’m trying to aim for about 40/40/20 at most meals. This is just a rough target, though. It’s still tough to get away from the mindset that grains are bad or will make me sick. I think my biggest struggle at the moment is weight. I know I was underweight just a couple months ago. And I know my weight is healthy now and I’m still quite small. But at the same time gaining 6-7 pounds in less than 2 months still doesn’t feel that great. Especially for someone that has struggled with eating disorders for years. I’m trying to eat more and give my body the nourishment it needs and not worry about weight. I know there will be an adjustment period as my body learns how to handle these different foods again and at some point it will settle on a weight and stay there. But when I put on my pants and they feel tight (and they didn’t a month ago) it still doesn’t feel good. It’s a big mental battle. I am really trying to embrace change, though. I’ll be 32 in a few weeks. My body is not the same as it was in my 20s. I’m learning that things are continually changing. And that’s not a bad thing. I just have to learn to embrace the season I’m in. Metabolism changes. Hormones change. Nutrient needs change depending on the season of motherhood I’m in. My size changes. It’s all part of life. And I’m trying to embrace it. I’m not a college student anymore. I’m an almost 32 year old wife and mother of two 🙂

Soaked Pie Crust

I am continuing to experiment with soaking grains and trying recipes from my Kitchen Stewardship e-book. Today I’m trying a soaked pie crust. The recipe is from Make a Home Mom. It is very easy to prep. I did it all in the food processor (same as I do for all of my pie crusts). I prepped it last night. This morning I rolled it out and put it in the pie pan and then in the refrigerator. Now it’s all set for our quiche tonight! So far it seems to be a great dough. Easy to prep. Easy to roll. I’ll update after we try it tonight.

This makes enough for a top and bottom crust. I only need a bottom. So I froze half of it to use another time. I also used a small amount for the ice cream we’re going to make today. I rolled it out, sprinkled on sugar and cinnamon and baked it. Once it was cool I crumbled it a bit. We’ll be adding this to our blueberry crumble ice cream today (Rebecca’s request). I tasted a piece of this…really good! So I expect our quiche crust tonight to be good as well.

**Update – the crust was great!! We all enjoyed it. I look forward to making a pie with it sometime.

Soaked Pie Crust

2 1/2 cups flour (I used freshly ground whole wheat)
3/4 tsp. salt
3/4 tsp. sugar
1/4 cup oil or melted butter (I used EVOO b/c it was what I had on hand that was convenient/quick)
1/2 cup cold butter, cut in chunks
2 Tbsp. yogurt
5 Tbsp. ice water

Mix flour, salt and sugar (I did this all in a food processor). Stir in oil. Cut in butter by pulsing the processor. Mix yogurt and water. Add into flour mixture until it makes a dough. Leave out for 8-12 hours (covered). Refrigerate 2 hours. Roll out on a well floured surface as you would any other pie dough. (I did not refrigerate mine before rolling it. I like it to be soft to work with it. I did refrigerate it before baking to keep it flaky).

*This makes enough for a top and bottom crust.
*You can freeze this for future use. Thaw in refrigerator when ready to use.

Ingredients
  1. 1 cup flour (whole wheat, all purpose or a combination of gluten free flours)
  2. 3/4 cup cane sugar
  3. 3 Tbsp. cocoa powder
  4. 2 1/4 tsp. baking powder
  5. 1/4 tsp. salt
  6. 9 Tbsp. milk or coconut milk
  7. 3 Tbsp. coconut oil or butter, melted
  8. 1/3 cup chopped nuts (optional)
  9. 1 cup brown cane sugar
  10. 3 Tbsp. cocoa powder
  11. 2 cups hot water
Instructions
  1. Heat oven to 350 degrees.
  2. Mix the flour, sugar, cocoa, baking powder and salt.
  3. Blend in milk and oil.
  4. Stir in nuts.
  5. Pour into an ungreased 1 1/2 qt. casserole.
  6. Mix the brown sugar and cocoa. Sprinkle over batter.
  7. Pour hot water on batter (don't stir).
  8. Bake 30 minutes.
  9. Serve warm.

Meal Plans Week of 2-12-12

Happy Valentine’s Day (on Tuesday:)! We’re really not that big into this holiday. But it’s fun to do some little things with kids. And coincidentally Rebecca’s letter this week is V! So we’ll try to incorporate a few Valentine’s Day activities…amidst a fairly busy week.

Last week was fairly low key, which was good since Abram had a cold. Thankfully he’s on the mend. And he now has both of his top front teeth in. Two steps in the right direction 🙂  No pun intended…but he is on the verge of walking. He can walk while pushing something. He cruises all over. And he’s starting to stand without holding anything. Back to the point, we didn’t do a whole lot last week. But we did make it to the library one day. And yesterday Justin and Rebecca had a daddy/daughter date – they went to a show (A Little Princess), followed by a daddy/daughter tea party. I was pretty busy in the kitchen. I made pesto, 2 batches of yogurt, ice cream (I called this week’s flavor totally nutty – pb ice cream with 4 kinds of nuts), soaked granola, butterscotch pudding, baked oatmeal, breakfast pudding, donuts, biscuits, mayo, and I baked my nephew’s birthday cake. I managed to get a batch of cloth wipes cut out…but that’s all the project work I had time for since Abram was up so much and so early.

This week will be pretty busy. Today is church. Monday is milk pick up. Tuesday is Kindermusik. Wednesday is groceries. There is a MOPS playdate on Friday, but I don’t think I’m going. Saturday we are going to my nephew’s birthday party.

My main food item this week is decorating the birthday cake. I’m making a Lego cake for my nephew. Aside from that I might make a Valentine’s Day dessert with Rebecca. I will be doing more grain soaking/baking. I’ll probably make a new batch of pesto. I’m sure I’ll be making some dairy products. I’m still trying to do my plan ahead/prep ahead breakfasts. So far it’s working well.

As always I’m learning new things each week as I experiment and listen to my body. I’m finding that I do ok with wheat (gluten doesn’t seem to be an issue for me so far) and even soaked oats. But I don’t do so well with really high starch foods like corn, potatoes, rice, carrots and bananas (oh, the bananas…they hate me :P). And when you think about it, it kind of makes sense. What is starch? SUGAR! I’m realizing that sugar seems to be my #1 culprit. Even some natural sugars. Considering my genes/family history of hypoglycemia and diabetes this seems logical. So I’m working hard to avoid sugar as much as possible. I’m still eating honey and fruit and occasionally some maple syrup or cane sugar. But even those I try to limit. I feel so much better without them. Adding grains back into my diet has also helped stabilize blood sugar for me. I’ve noticed two major things in the last week. First, my daily (hourly :P) cravings for chocolate and sugar have almost vanished completely! I used to want chocolate all the time. I used to immediately want sugar whenever I was anxious or stressed. If I was a bit frazzled I would reach for a bag of chocolate chips. But not anymore. I was starting to wonder if I would ever be able to curb my cravings. Adding back grains has made a huge difference. I don’t have the big blood sugar and mood swings. Second, some of my obsessive thoughts are vanishing as well! This has been pretty crazy for me to experience. I read about people balancing hormones, minerals, brain chemicals, etc. and just “forgetting” about their obsessions, worries, etc. And I’m like, there’s no way I could forget this stuff. I think about it non stop! But lo and behold I have been “forgetting” some things. I’ll have a long period where I don’t have the thoughts going over and over in my head. Then all of a sudden I realize that I haven’t thought about it for an hour or whatever. And I’m shocked. How did I just forget? Times of the day where I normally obsess/compulse I’ll now have an “I don’t really care” attitude about the compulsions. Not that I don’t think about them at all, but the anxiety is a lot less. And the need to compulse is a lot less. I have a pretty rigid daily schedule. I do the same things at the same times. Every afternoon I drink a big mug of some kind of hot beverage – tea or whatever. Not that that’s a bad thing. I know my body needs lots of water. I always drink something shortly after nap time (3:30ish), when I’m getting Rebecca’s snack, etc. The other day it was about 5:00 and all of a sudden I realized I hadn’t had anything to drink all afternoon! The thought never even crossed my mind. It’s not a major thing…not like that is some big obsession that I have. But that fact the I’m “forgetting” even some of the small stuff is huge for me. And the times when I do have the obsessive thoughts and anxiety goes up…I don’t even think about turning to food/sweets/cravings. I can use other methods (mostly just logical reasoning) to calm myself pretty quickly. I honestly don’t even think about turning to food. Obviously I still have a long way to go, but the improvements I’m seeing already are pretty big to me. I still have to be very conscious of my diet and making sure I’m getting enough carbohydrates (specifically grains). It will take a while to get rid of my mentality that grains are bad (just like it took a long time to get rid of the mentality that low fat is healthy). Bring on the bread. Stay away from the sugar 🙂

Soaked Donuts

Yes, it’s another new soaked recipe from the Kitchen Stewardship e-book. Can you tell I’m enjoying experimenting with soaked grains again? 🙂  This recipe comes from Adrienne at Whole New Mom. I’ve never actually made donuts before. It’s been on my things to try list for a long time. These looked easy…and soaked 🙂  They turned out quite well. Obviously they are not like the doughy fried things you’d get at Dunkin Donuts. But they are good. Moderately sweet. A touch of cinnamon. Yum! All 3 of us really enjoyed them. And they really are super simple to make. Maybe I’ll try turning them into a nutty version next time. Or even make some kind of glaze. It’ll be fun to experiment. I love having a treat like this that I can feel good about feeding my family. For a bedtime snack last night Rebecca had a little pudding and part of a donut. That sounds awful. But in reality it was a very healthy snack…raw milk, egg yolks, soaked whole wheat…can’t beat that 🙂  I only made a half batch and got 16 donuts out of it. I used a juice glass to cut the donuts and then just made the hole with my finger.

Soaked Cinnamon Sugar Donuts

4 1/2 cups whole grain flour (use 5 1/2 if using spelt)
4 tsp. baking powder
1 tsp. baking soda
1/2 tsp. salt
1/2 tsp. nutmeg
1 tsp. cinnamon
2 eggs
1 cup granulated sweetener (I used organic cane sugar)
5 Tbsp. coconut oil, melted
1 T apple cider vinegar or lemon juice added to milk or milk substitute to make a total of 1 c liquid)

3 Tbsp. granulated sweetener (I used organic cane sugar)
1 tsp. cinnamon

Combine the flour, sweeteners, fats, and liquids together (excluding the eggs). Let dough rest for 12-24 hours. Add remaining ingredients and mix well.

Roll out dough to approximately 1/2″ thickness. Cut out donuts with cutter, ring or shape into desired shapes. Brush tops with melted coconut oil, milk, milk substitute, or water. Sprinkle with topping.

Bake at 425 degrees for 8-10 minutes.

You may find that you need to be flexible with the amount of flour that you use for this recipe depending on the grain that you choose. You will want a very stiff dough that is not wet at all, like a shortbread. For spelt, you will probably need about 5 1/2 cups.

For gluten-free flours, use 25% more baking powder and soda. I typically use whatever I happen to have on hand. Yesterday I used 3 c sweet brown rice flour with 1 1/2 cups sorghum with success. I had to increase the liquid to about 1 1/2 cups to make it pliable, however.

For a sugar free version, a mixture of 1/2 xylitol and 1/2 erythritol for the granulated sweetener works great.

Non-soaking Method:

Just mix the dry ingredients in one bowl and the wets in the other. Then add the dries to the wets. Continue with the recipe directions.

Soaked Granola

I was planning to make a big batch of my usual granola this week. But then I came across a recipe for soaked granola that looked good. And it turns out that I don’t have that many oats in the house. So since I’m trying to soak most of our grains these days I decided to try that instead. It’s from Kathryn’s Kitchen. It’s a very easy recipe. And it’s really good!! I’ve made kishk granola and soaked granola before, but they weren’t that great. I like this version better. The hard part now…keeping myself from eating too much! I guess we’ll see today if I tolerated the oats or not. I munched on quite a bit yesterday, so this will be a good test to see if I can handle soaked oats now or not.

One thing I really like about this recipe is that it uses buckwheat in addition to the oats. It gives it a very hearty texture and flavor. Now I want to experiment with making granola/cereal. Even if I don’t tolerate the oats well I can likely make some kind of granola with just wheat, buckwheat, etc. I baked it in the oven this time. Maybe I’ll try the dehydrator next time. Some parts were done before others, so I had to monitor it quite a bit at the end. I also found that it is much easier to break up the granola when it is still warm rather than waiting for it to cool/harden. My pictures show the granola that stayed in larger chunks because I didn’t break it until it was totally cooled. I put quite a bit of the granola in the freezer. And I added coconut, crispy walnuts and raisins. I’m happy to be eating some grains again and hopefully boosting some of my vitamin/mineral levels of things like magnesium. I soaked my grains a little differently than the original recipe. I used a combo of water and homemade yogurt. Ahh, my beloved granola…how I’ve missed you 🙂  And now that I can eat yogurt I can have my all time favorite yogurt and granola again. I’m thankful for the little things 🙂

Soaked Granola

4 cups rolled oats

1 cup buckwheat
1 3/4 cups filtered water
2 Tbs apple cider vinegar
(I used 3/4 cups water + 1 cup yogurt)

1/2 cup melted coconut oil
1/2 cup honey
1/2 cup pure maple syrup (grade B)

1 Tbsp. cinnamon
1/2 tsp. sea salt
1 tsp. vanilla

Mix the oats, buckwheat, water and cultured dairy or vinegar. Cover and let sit 12-24 hours. 

Heat oven to 200 degrees and prep two large baking sheets with parchment paper. This can also be made in a dehydrator.

Melt the coconut oil in a small pot and whisk in the remaining ingredients. Pour the coconut oil mixture onto the soaked grains and use a spatula to gently mix them together. Scoop the wet granola onto the two baking sheets and evenly spread the mixture out (the thinner the layer the faster it will dry and the more the texture will be like regular granola). Put in the oven and bake for 4 hours. Be sure to stir the granola every hour and rotate the baking sheets.

When it’s done store in an airtight container. Add dried fruit, nuts, seeds, or coconut flakes if desired.

Soaked Baked Oatmeal

I tried another recipe from the Kitchen Stewardship e-book this morning. It comes from Christy at One Little Word She Knew. I love Christy’s blog. And I love this recipe!! It was super easy. And it turned out really well. Justin really liked it. I tasted a little. I thought it was great too (we’ll see how my tummy tolerates some soaked oats). Definitely a keeper! And I’m sure I’ll play around with flavors every time I make it. I made this a cinnamon raisin version. You can never go wrong with that.

Soaked Baked Oatmeal

2 cups oats
1 cup full fat yogurt
1/2 cup water
2 eggs
1/2 cup sugar (I used organic cane sugar)
1/3 cup oil (I used melted coconut oil)
1 tsp. vanilla
1 1/2 tsp. cinnamon
1 1/2 tsp. baking powder
1/2 cup milk
optional – 1-2 cups fresh, frozen, or dried fruit (I used raisins)


The night before, mix oats, yogurt, and water in an 8×8 pan. Cover with a kitchen towel and let soak overnight on the counter.

In the morning, mix the remaining ingredients in a bowl. Add this mixture to the soaked oats and mix well. Bake at 350 for 40 minutes. Serve plain, or top with yogurt, milk, or applesauce. Leftovers are good cold or reheated.

Last week we studied the letter T. A lot of what we did centered on Tinkerbell 🙂  So, anything related to fairies.
