Just hearing the term food allergies stirs up negative thoughts. But did you know they are not all bad? In fact, I kind of like them.

I’m not gonna lie. Having (multiple) kids with (different and even severe) food allergies is not easy. In fact, many days it is down right hard.

I can’t cook one meal for the whole family. I can’t just order pizza when I’m sick and have no energy to cook. At the moment I can’t even eat at a restaurant. If you have a child with food allergies I’m sure you know the list of “can’t” could go on and on.

But…

I secretly love our food allergies.

Yes, you heard that right. I love them.

There really are some hidden blessings when it comes to food allergies. And although I do hope for full healing for my children some day. There is a part of me (maybe the part that wants to have control!) that hopes it doesn’t happen too soon.

Even in light of my son’s severe nut and dairy allergy diagnosis last week I still have some good things to say.

I’m letting you in on my seven little secrets about the blessings of food allergies. After reading them you may want to go get your child tested. An allergy diagnosis can have its perks. Don’t say I didn’t warn you.

  1. Easily say no to junk food.

Allergies make food choices for you, often for the better. My son is allergic to corn (probably my favorite allergy!). That means NOTHING with high fructose corn syrup or cornstarch. Saying no to junk food is a no brainer there.

Does your child have a wheat allergy? It’s easy to pass on the Goldfish® the other kids are eating.

Of course there are alternatives these days. And there is plenty of junk food that is egg free, dairy free, gluten free, etc. But it is much easier to pass on the junk when you are avoiding allergens.

I really only have two “complaints” about Crunchy Balm.

  1. I want a bigger container so we don’t run out. That is how much I love it. With all of our skin issues we go through it quickly, even though a little really does go a long way. In all honesty I bet this container will last us several months. It just depends how much little hands take out of the jar when they use it.
  2. I found that when using the tallow frankincense face balm on my face it irritated my eyes and made them red. I have VERY sensitive eyes. Just a little bit of eye liner or eye shadow (even a natural kind) can make my eye swell. And almost any essential oil near my face makes my eyes sting. So if you have sensitive eyes use caution putting the scented Balm on your face or touching your face if it’s on your hands.I did get to try the scent free version. I LOVE using it on my face!!! No sensitivity at all.

When it comes to natural health and beauty most people jump to coconut oil. It is amazing stuff.

But since I have a toddler with a coconut allergy I try to keep our house pretty much coconut free. That means just about every soap, lotion and shampoo is out.

I was thrilled to find out that Michelle has many products that are not only coconut free but also dairy and nut free! Natural products that are safe for my family. I didn’t think they existed!

Tallow Balm

The first product I tried as soon as it arrived was the tallow balm.

I haven’t been able to use lotion in over a year! A year!! Can you say dry skin?

I was thrilled to try the tallow balm and was not disappointed. Just a tiny bit goes a long way and creates soft, smooth skin. Plus it smells so good with all of the essential oils added.

I love that it is safe to use on my entire family, even my kids with allergies. It also comes in a compact case that is easy to take wherever you go. We brought it along for all of our holiday travel.

My oldest likes to use it on her hands at bed time and wear socks on her hands (thanks to Michelle’s suggestion!). By morning she has super soft skin again instead of dry, cracked hands.

Sinus Balm

The sinus balm was a Christmas present for my seven year old. That might sound strange to some. But she has struggled with environmental allergies and mouth breathing for years.

Having another natural tool for helping her breathe better at night is a huge blessing.

It is also made with olive oil and is very safe. The scent is pretty strong. But that is how it works.

My son had a stuffy nose the other day and told us he had to breathe with his mouth open. We put some behind his ears and on his neck. He didn’t wake up once in the night!

Disinfectant & Freshener Spray

With young kids in school I don’t have to tell you how excited I am to have a safe disinfectant spray! It is so easy to use. Just shake and spray.

It makes my house smell wonderful (thieves will do that). Plus I can freshen things in a matter of seconds.

No need to use chemicals to clean your house. This spray can be used directly on surfaces to get rid of the germs.

I was so glad to have it around after my daughter had the flu. It has also come in very handy for the potty seat that sits in our bathroom. It is almost impossible to keep that clean and free of bad smells. The freshener spray worked wonderfully.

Tea Tree + Lavender Freshener

The tea tree + lavender spray is one of Michelle’s new products. It is similar to the disinfectant spray, but with different oils.

I can’t decide which one I like better. The tea tree and lavender combination is very floral and leaves the whole house smelling bright and fresh. I will be using both all winter long!

Itch Relief Remedy

When you have a child with eczema there is a never ending search for products to help calm the itching. So I was very excited to get to try this.

It comes as a powder that you can make into a paste. It has a very mild scent and soothing ingredients. Just a pinch goes a long way so this will last a long time.

Chamomile Lavender Dry Shampoo

I wash my hair every day. Otherwise my hair gets so oily. It is fine and thin.

When Michelle told me about her dry shampoo I was so excited. I can actually get by without washing my hair once in a while with this product. Simply rub it into the scalp to absorb oil. Plus it smells amazing!

For those mornings where my little one just doesn’t want to sleep and let me take a shower this dry shampoo is a life saver! I can leave the house without feeling like I look unshowered. It is even great for days that I wear my hair down. By afternoon it already looks greasy. Just a bit of dry shampoo and I’m looking good again and smelling good too!

The chamomile lavender is great for light colored hair like mine. There is another one specifically for dark hair.

I was so impressed with all of these Cheshire Fields products. I even bought a bunch for Christmas presents for the women in my family! But you don’t have to wait until Christmas. They make great gifts any time of year.

I was challenged by Stonyfield to write about the best Christmas gift I ever received. After thirty five celebrations it’s hard to settle on just one! Mine comes in a small package.

When it comes to gifts the most significant ones for me always seem to revolve around babies.

Lately I hear a song on the radio a lot called “A Baby Changes Everything.” Every time I hear it I pause and reflect.

The most important birth was that of Christ Jesus. Long ago in a stable in Bethlehem. That baby sure changed everything! What an amazing gift that God sent to us. He is the reason I am even writing this post. There is no Christmas without the birth of our savior.

I received another “baby” when I was five years old. It was a birthday present. My first Cabbage Patch Kid. It was all I wanted.

Every store was selling out as soon as the dolls arrived. Finally one day just before my birthday a store nearby got a few. My mom called to ask…there were ten in stock.

By the time we got there only five were left!

It took me all of ten seconds to choose the one I wanted. She had a little tuft of blonde hair and a pacifier. She was mine. I named her Caroline Rebecca. I never wanted to let her go.

From that moment on I knew (even at five years old) that all I really wanted to do when I got older was be a mom.

I took her with me wherever I went. I played with dolls any chance I got. I pretended to nurse her, feed her, change her. She was my world.

Fast forward about twenty years. Happily married. Ready to start a family and have the children I have been wanting for so many years.

But it would not be that easy. In 2006 we started our long, lonely walk through the world of infertility.  The one thing I had dreamed about since I was five years old seemed like just that, a dream. I didn’t know if it would become a reality.

But in 2007 God gave us our first miraculous gift after various fertility treatments.

I found out I was pregnant in August and my daughter was born in April of 2008.

We started the journey again in 2009. After five emotionally and physically draining rounds of IVF we found out in September of 2010 that I was pregnant. My son was born in May of 2011.

Two precious gifts.

Yet I knew my family was not complete. I had dreamed since I was five years old of having a big family. I always wanted four children.

In 2013 we did our last round of IVF. Unfortunately it ended in a miscarriage. My dreams were crushed.

But after 6 months of hard work, a lot of physical challenges and healing and days and nights of prayer we got our best Christmas gift.

In December of 2013 I found out I was pregnant. We got to share the good news with our children and extended family as a special Christmas surprise. My oldest was the first to find out. Her reaction at only five years old was priceless (as you can see in the photo at the top).

In August of 2014 my daughter was born. She has changed my life in so many ways. She has brought me down a path of healing. A baby was the only motivation strong enough to get healthy. She has taught me what it means to truly sacrifice as I have had to give up a lot to keep her nourished and thriving over the last sixteen months – food, time with friends, outings with my family, travel. None of it was as important as taking care of my little miracle.

She has taught me about contentment and true joy.

Johanna means “God is Gracious.” He is indeed. And she reminds me every time I get her out of her crib and she gives me a big hug, every time she runs over, hops in my lap and snuggles, every time she comes up behind me and gives me kisses on my back, every time she laughs so hard she almost falls over.

A baby really does change everything. A baby (all of them) has been the best Christmas gift I ever received.

Whether or not there are any more precious gifts in my future I don’t know. Whether or not my childhood dream of a large family is part of God’s plan I don’t know. That is in God’s hands. His plans and his timing are perfect. I just know that the miracles He has entrusted to me so far have truly changed my life.

It is said that good things come in small packages. I wholeheartedly agree. From a tiny little baby in Bethlehem to the precious little ones sleeping upstairs as I write this. God has been gracious and changed my life through the miracle of a baby. It is the by far the best Christmas gift ever.

You made it! You made it through the first year.

The first year of sleepless nights, crying and dirty diapers.

The first year full of firsts! Smiles, coos, laughs, rolling, crawling and maybe even walking. First foods, first teeth, first words.

Let them eat cake.

A birthday celebration requires a special birthday treat. Usually that means cake.

I LOVE decorating cakes. I look forward to our family birthdays each year because I get to create new cakes.

I’ve done Dora, monkeys, dinosaurs, cars, arts and crafts, Legos, cows, Frozen, bulldozers, April showers and princesses for my kids. I’ve even done airplanes, sports and Cat in the Hat for my nephew, basketball and Calvin Knights for my dad, a fall cake for other family members and a neat recital cake for my sister-in-law.

I wanted to continue that tradition with my third child. With the challenges we’ve faced over the last year we are all certainly ready to celebrate.

Of course I set to work experimenting with new recipes that were free of her allergens.

I made a couple batches of cupcakes (that she loved!)…only to find out more foods that bother her.

Who needs cake?

My daughter’s allergies combined with my preference to keep her at least gluten free for now (she’s been grain free up to this point) make birthday cake almost impossible. We can’t use:

  • wheat
  • rye
  • barley
  • oats
  • rice
  • sorghum
  • amaranth
  • buckwheat
  • tapioca
  • potato
  • arrowroot
  • coconut
  • almond
  • nuts
  • quinoa
  • millet
  • beans

Add to that no coconut oil, palm shortening, butter or egg whites and you’re not left with much.

Birthday Pops.

I gave up on the idea of birthday cake and opted to do popsicles! They make a perfect summer treat.

Since these popsicles are for a one year old I made them without any added sweetener. I even added some vegetables to keep them mild and nutritious.

Eat in season.

I chose fruit that is in season here in Michigan in late August. Nectarines are so sweet and have such a bright color. They make a great base for a popsicle.

You can use peaches instead if you prefer the flavor.

I ended up making a second batch since we ate the first batch before the birthday! I added some watermelon to the second batch for extra color and sweetness. Watermelon is another late summer fruit that almost everyone enjoys.

Fun and Fast.

Nectarine squash pops are the easiest birthday dessert you’ll ever make. Puree cooked squash and cut up nectarine with an immersion blender or in a regular blender and pour the puree into the popsicle molds. Done!

They are also easy to serve. Simply take them out of the molds a few minutes before serving to take the chill off. Pass them out and enjoy.

For older kids you can add chunks of fruit like cut up strawberries, whole blueberries or raspberries to the puree before filling the molds. Then you’ll really have a fruity, colorful treat.

You can also add a tablespoon or two of honey for big kids. It really covers up any hint of squash flavor. My oldest is pretty picky about flavors and textures. She said she couldn’t taste the squash at all when I added a bit of honey.

I was very disappointed that I couldn’t make a cake for my baby’s first birthday. But I’m so happy with how these nectarine squash pops turned out! I’m even happier that my daughter likes them…and that they are so healthy and free of allergens.

Serves 4
A fruity, sugar free summer birthday treat.

Ingredients
  1. 3 medium nectarines, peeled and pitted
  2. 3/4 cups cooked butternut squash
  3. optional: 1/2 cup watermelon (seeds removed)
  4. optional: 1 - 2 Tbsp. honey
Instructions
  1. Puree the nectarines and squash (and watermelon and honey) with an immersion blender or in a blender.
  2. Fill popsicle molds and freeze until firm.
Notes
  1. You can replace the nectarines with peaches.
  2. For little ones let the popsicles sit out for a few minutes to soften before serving.

As much as I don’t like to think about it, before we know it we’ll be packing school lunches again.

You want to send your kids to school with nutritious food. But you also don’t want to make their lunches too different or “weird” (liver pate or sardines anyone?). Not to mention you don’t want to spend an hour making lunch.

Just the other day my seven year old asked why I never put “normal” sandwiches in her lunch like her friends have. She mentioned peanut butter and jelly and ham and cheese.

You’ve had the grill going all summer with the usual fare – hamburgers, hot dogs, barbecue chicken.

Those are all great. But are you ready to change it up?

Sweet potato salmon burgers are a delicious alternative to traditional hamburgers that you can eat all year long.

They only require a few simple ingredients and minimal preparation time. Sweet potato salmon burgers make a great, quick weekday lunch.

You can decide if you make them heavier or lighter on the meat or potato. By using less salmon these burgers make a very budget-friendly meal.

I love how easily these burgers come together. All of the ingredients can be eaten as-is so it’s just mixing and warming. No need to worry about how well done they are.

But what I love even more is how much my kids enjoy them.

You can eat them on a bun or just dip them in ketchup.

It is fun and easy to spruce up sweet potato salmon burgers.

We top them with homemade pesto. You could eat them open face with a fried egg. Here are some other delicious toppings for sweet potato salmon burgers:

Now that my little one is eating a lot of solids I have to cook things she can eat as well. Sweet potato salmon burgers make a perfect finger food.

Let’s not forget the nutrition factor!

Sweet potato salmon burgers have healthy starch and vitamins from the sweet potatoes. The egg yolks are packed with vitamins. Salmon has essential fatty acids. Then they are cooked in healthy fat for a balance of protein, carbohydrates and fat all in one burger.

Be sure to make a big batch of sweet potato salmon burgers. You can freeze some for later. And leftovers are great cold or warm.

Add pieces of burger to your salad, cut it up for dipping or mix it into your scrambled eggs! I like to slather mine with pesto and eat it plain.

If you don’t tolerate potatoes you can use another orange vegetable like pumpkin or squash. The burgers will still taste just as great.

  1. 1 cup cooked and mashed sweet potato (or pumpkin or carrot)
  2. 6 - 14 oz. canned boneless skinless salmon (one 6 oz. can, two 6 oz. cans or one 14 oz. can - however meaty you like it)
  3. 2 egg yolks
  4. 1 tsp. unrefined sea salt
  5. 1/4 tsp. garlic powder
  6. 1/2 tsp. dill weed
  7. 1/2 tsp. organic cane sugar
  8. lard, tallow or coconut oil for frying
  9. optional - crumbled bacon or bacon strips, pesto, grilled onions, avocado, tartar sauce, Miracle Whip®
Instructions
  1. Add the potato, salmon, egg, salt, garlic powder and sugar to a medium size bowl. Puree with an immersion blender. Add crumbled bacon at this point if desired.
  2. Chill 30 minutes.
  3. Heat a skillet over medium heat. Add the frying oil.
  4. Divide the mixture into 6 burgers.
  5. Cook in the pan until browned on both sides, about 5 minutes per side.
  6. Place burgers on buns and add favorite toppings (bacon strips, grilled onions, pesto, avocado, tartar sauce, Miracle Whip®)
Notes
  1. These burgers make great finger food for babies 6 months and older.
  2. You can substitute tuna for the salmon.
  3. You can add anchovies or sardines to the burger for extra nutrition.

I just got my first box to try. It is a mom and baby box, and it is filled with great stuff. Now I get to share it with you!

It is neat to see new, natural products that I may not know about otherwise. Plus I didn’t have to go to the store to shop for them! This is a great way to find products I feel good about and want to use. Then if I find something I really like I can order just that specific product.

This is such a cute book! All three of my children love it. I like how the trunk is part of each page. I also love that it is a quality board book that my little one can hold and not destroy. Snack Out Loud Crunchy Bean Snack

I wasn’t sure what to think of a crunchy bean. But this was really tasty! Even my kids loved it, which surprised me. They reminded me of spiced peanuts. So it was really a treat for me (that can’t have peanuts). Plus I love anything crunchy. Kelapo Extra Virgin Coconut Oil

Personally, I’ve never tried a brand of coconut oil I didn’t like. So I can’t say if Kelapo is better or worse than any other brand. But I can say it tastes great! I loved slathering it on my bread. When you’re dairy free you have to have good coconut oil on hand. I would gladly have a big jar of Kelapo in my kitchen.

These bath salts look great…if I could ever find time to actually take a bath. I might have to just try them in a foot soak soon.

Amara Baby Food
This is an easy and healthy way to travel with baby food. We got to try the apple. The only ingredient is apples! I simply added some milk to the powder (no heating, no waiting, no glass jars to carry. And any liquid, including water and breastmilk, will work). Both of my big kids loved it. The Falvrz drink mix has great flavor. I tried the sport. It was a nice treat to have something besides water to drink. I like that you can make your drink as sweet or mild as you like. I diluted mine quite a bit. But I’m not a fan of the agave syrup it contains. So I wouldn’t buy this normally.

Of all of the products in the box I think I enjoyed this one the most! This liquid bandage is so easy to use and perfect for little ones that pick at bandages and pull them off. As long as you can get them to wait the minute or two for the liquid to seal you’re all set. No peeling off sticky bandages and pulling hairs. No tears. Just spray it on and wash it off. The next time one of my kids gets a scrape I’m using this for sure!

Simple Smoothie Series: True Blue-Berry || Homemade Dutch Apple PieToday I’ve got a smoothie that is sure to please everyone.  Who doesn’t love blueberries?!

This true blue-berry smoothie gives a double shot of flavor with both whole blueberries and blueberry juice.

A blueberry smoothie is great for really little ones because you can leave out the sweetener and it still has a lot of flavor. Just be careful how you serve it so it doesn’t get on everything!

If you or your kids are adventurous you can also add a few pieces of roasted beets. A little goes a long way in terms of changing the flavor. But it also adds a lot of nutrition. If you don’t tell your kids it’s in there they might not know. It won’t change the color.

You can also easily add elderberry syrup to a blueberry smoothie for extra immune system support.

If you are dairy free you can leave out the yogurt and add a bit of powdered probiotics instead. The smoothie will taste great without the yogurt. Or you can add some coconut milk for texture.

Every summer we load up on fresh Michigan blueberries while they are in season and freeze them. Then all winter long we can have delicious smoothies like this, knowing we’re using fruit from the peak of freshness.

If you do not have a blueberry stash in your freezer you can get frozen organic blueberries at the store. They are a better option than any fresh berries you find in the winter since it is not blueberry season.

A healthy smoothie bursting with blueberry flavor.

Ingredients
  1. 1/2 cup blueberries (fresh or frozen)
  2. 1/4 cup pure blueberry juice
  3. 1/2 cup plain whole milk yogurt or coconut milk yogurt
  4. 2 egg yolks
  5. 2 Tbsp. honey
  6. 1/4 tsp. sea salt
  7. 1 Tbsp. roasted beet (optional)
  8. 2 Tbsp. elderberry syrup (optional)
Instructions
  1. Combine all of the ingredients in a blender.
  2. Blend until smooth.
  3. Serve immediately or store in the refrigerator or freezer.
Notes
  1. To make this into popsicles simply pour the smoothie into popsicle molds and freeze until solid.
  2. If you serving the smoothie to a child under one year of age leave out the honey.
  3. You can omit the egg yolks if you are allergic to eggs.
  4. The yogurt can be left out or replaced with coconut milk yogurt or coconut milk to make this dairy free.

The combination of orange, banana and strawberry gives a burst of flavor and also great color. It almost looks like a sunrise. Though you don’t need to take warning for this red sky.

By adding yogurt and egg yolks to these fruits you create a vitamin powerhouse.

If you want to add some healthy fat to the smoothie avocado, coconut oil and flax seed all work well.

Don’t forget to pair it with some properly prepared starch (quinoa, rice, sourdough bread, fried potatoes, etc.) for better absorption and digestion. Then you’ll have a good balance of protein, fat and carbohydrates.

  4. 1/2 cup yogurt (or kefir, coconut milk or coconut milk yogurt)

  6. 2 Tbsp. honey (or maple syrup), if desired
  7. 1/4 tsp. sea salt
Instructions
  1. Combine all of the ingredients in a blender.
  2. Blend until smoothie.
  3. Serve immediately or store in the refrigerator.
Notes
  1. You can add 1/2 small avocado, 1 Tbsp. melted coconut oil or 2 tsp. flax seeds for extra fat.
  2. Leave out the honey if serving this smoothie to a child under one year of age.
