Sourdough Graham Crackers

As I was making a fresh batch of soaked graham crackers this week I thought it might be fun to try making sourdough graham crackers. Rebecca and I set to work right away 🙂  I used this recipe as my base and adjusted it to use my sourdough starter.

The graham crackers turned out quite well. I think I made them a little too thin, so they are quite crispy. But still delicious. I also used all coconut oil (out of convenience…it’s hot enough that it’s already liquid…so I didn’t have to add a step of melting anything 🙂 instead of all butter or a butter/coconut oil combo. I think using all coconut oil makes them a little more crumbly. Next time I’ll use some butter. But if you can’t have dairy using all coconut oil definitely works.

I love graham crackers. And this is another great, healthy variation. A perfect snack for kids or adults.

Sourdough Graham Crackers

1 1/2 cups whole wheat flour
3/4 cups sourdough starter

1/2 cup rapadura (dehydrated cane sugar)

1 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
1 tsp. cinnamon
4 – 6 Tbsp. honey
1 tsp. vanilla
1 stick butter or 1/2 cup coconut oil, melted (Works very well to use half butter and half coconut oil)

Heat oven to 350. Melt butter/coconut oil in sauce pan. Set aside. In a mixing bowl, stir together flour, sugar, baking powder, baking soda, salt and cinnamon. Add the liquids: honey, sourdough, vanilla, butter. Stir well until a nice ball of dough is formed – not crumbly (if too dry add more butter/coconut oil or honey). Taste the dough for sweetness. Add a little rapadura or honey if the dough is too sour. It will get a little sweeter as you bake it.

Split dough into 2 equal parts. Cut 3 pieces of parchment paper the size of a cookie sheet. Lay one piece on table. Put 1/2 of dough on the paper. Lay a 2nd piece of parchment on top of dough. Squish the dough down a little with your hand. Use a rolling pin to roll the dough between the parchment paper. Roll until the dough until it is about 1/8 in. thick. Remove the top piece of parchment paper. Cut into squares (with pizza cutter). If the dough sticks to the pizza cutter wait until the crackers have been baking 5 – 8 minutes to cut them (pull them out, cut and put them back in). Place the dough on a baking sheet (on the parchment paper…just move the whole thing onto the baking sheet). Repeat for other half of dough.

Bake for 12-18 minutes, until the crackers are just barely turning golden. Let cool completely. Store in airtight container or in the freezer.

Red, White and Blue Parfait

I made this dessert for the Fourth of July…but never got around to posting the recipe. Oops. This was a simple, fun treat that everyone enjoyed. Layers of vanilla pudding, graham crackers, sweetened cream cheese and fresh berries – delicious! A perfect holiday summer treat.

Red, White and Blue Parfait

Vanilla Pudding (from Heavenly Homemakers)

2 1/2 cups milk
3 egg yolks
1/2 cup real maple syrup (grade B is best for you) or honey
4 T. arrowroot powder (or organic corn starch)
1/4 tsp. sea salt
1 Tbsp. butter
1 tsp. vanilla

In a medium saucepan, whisk together milk, egg yolks, maple syrup, arrowroot powder and salt. Cook over medium heat, stirring CONSTANTLY until pudding begins to thicken. Stir over the heat for about 15 more seconds. Remove immediately from the heat, and continue to stir until pudding is creamy. Add butter and vanilla and continue to stir until mixed. Allow to cool at least 30 minutes. You can prep this ahead and keep it in the refrigerator.

Cream Cheese Filling

2 cups yogurt
3-5 Tbsp. sweetener (honey, maple syrup, sucanat)
1 tsp. vanilla (optional)

Strain yogurt in cheesecloth to make cream cheese (do this ahead of time). Stir sweetener into cream chhese until it is to your liking.

Parfait:

Crumble thin layer of graham crackers (organic store bought or whole wheat homemadesoaked homemade, sourdough or gluten free. Use gluten free grahams or cookies to make this gluten free.) into the bottom of small dishes or 1/2 pint mason jars. Layer pudding, then fruit, then cream cheese. Add another layer of graham crackers and repeat other layers. Repeat process until the jar is filled. Top with graham cracker crumbs and berries. Chill and serve.

I made a couple full jars, and I made a couple not quite so full for a kid’s portion.

Meal Plans Week of 7-29-12

Good morning. It sure feels good to be home!! We were in Chicago all last week. It was fun, but nothing beats coming home to your own bed and good food 🙂  We did so much fun stuff including Lego Land, Shedd Aquarium, the American Girl store, Navy Pier, Chicago Children’s Museum, a live performance of Beauty and the Beast, the Lincoln Park Zoo, a Chicago Cubs game, swimming at the hotel pool and celebrating our 9th anniversary! I think I need a vacation from my vacation 🙂

This week it’s back to normal. Today we are just taking a day of rest and getting ready for the week. Monday is milk pick up and our last day of dance. Tuesday is farmer’s market. I also set up an appt. with my psychologist. I haven’t seen her in over a year…but I have some things I want to talk about with her. Wednesday is grocery shopping. After a week away our fridge is so empty right now. I really need to get some food 😛  Thursday I might do yoga. No set plans for Friday yet. We’ll see how we’re doing if we want to go to the zoo, the park or the library. I have to decide which naturopath to call and set up an appt. Rebecca and I didn’t get around to doing a Mommy/daughter date in July. We’ll see if we squeeze anything in this week or not (school shopping?, cone world?). We’ve got a couple ideas for August already.

White chocolate caramel macadamia nut cheesecake from The Cheesecake Factory (Happy Anniversary!)

Now that we are back from vacation it’s time to get busy in the kitchen again. I’ve already made yogurt and hot fudge this morning. This week I’d also like to preserve lots of food. I’m hoping I can still get blueberries. I also want to freeze more beans, corn and zucchini. I need to make a new batch of soaked grahams. I want to make butterscotch, ice cream, some kind of peach/blueberry dessert, a Strawberry Shortcake inspired cake with Rebecca, zucchini bars or cookies and maybe something sourdough.

I really saw this on vacation…very scary!

The meal plans I posted last week were actually mostly this week’s plans 🙂  So planning was simple. I want easy, light, nutritious meals after a week of eating out. I also want to start eating a little more seafood. So I’ve included more this week. That was one good thing I did eat on vacation at least.
No big updates on me. Still just trying to manage right now until I can get to the doctor and hopefully get some quality supplements and get my body’s vitamins and minerals restored.

Meal Plans Week of 7-22-12

Another week of summer has flown by. Last week was quite busy. I did lots of produce preservation (blueberries, zucchini, beans, corn and blueberry topping) and baking/cooking (zucchini bread, sd muffins, yogurt, kefir, ice cream, roasted beets and pesto). Plus I used any extra time I had (and even stayed up a little late sometimes) to finally finish Rebecca’s dress! I’m glad I got all that done…but now I’m worn out!

I think I’m going to take it a little easier this week. I’ll still have to keep up with produce, but I’m not going to do a bunch of extra stuff. And I’m definitely taking a little break from sewing. I do have more projects coming…but maybe in a few weeks. We are going to take it easy and have fun this week.

I do have a couple of baking projects I want to do with Rebecca. But I think I’ll hold off for a week or two on those as well.

I’m not really sure what to say about myself…last week was pretty rough. And I really don’t know why. I’m sure stress and lack of sleep contributed. But I know it was more than that. I do think I overdid a bit with grains (wheat and rice). I can handle a little bit each day, but I had quite a bit some days (why do I bake such good stuff? :P). I’ve also had a mild cold all week. Mostly just a sore throat. It’s what Abram had the week before. I’m also finding that sadly I can’t handle blueberries as well as I had thought. But they are in season and so good! I’ve been eating a lot. They are my absolute favorite fruit, always have been. But…they have seeds. Yes, blueberries have teeny tiny seeds…and they bother my intestines…that’s how sensitive things are right now. I was actually in pain again part of the week. And the inflammation was pretty bad. I even had some weight gain again from how bad it got…my weight has finally been stable for a few months until last week. It’s beyond frustrating! I LOVE fresh, raw foods…but I can’t eat ANY right now. I basically have to live on mush at the moment. And it’s tough. I love crunchy food.

I’ve been digging more and more into the world of minerals and micronutrients. I’ve been reading more and more about potassium and magnesium and how much they impact each other. I know that I am deficient in both. And without one I can’t increase the other. If magnesium is low I won’t be able to get my potassium up no matter how much I eat. And the impact on my body from being low in both (and probably much more) is really taking its toll. So I did some research about what foods contain high amounts of magnesium…no surprise I can’t eat any of them! That is a big problem.

Here is what I think is happening. I can’t eat the food that contains the vitamins and minerals I need because my gut is too damaged to digest them. Without the minerals I can’t heal my gut/my body/my mind. So I’m left with no way out. I need healing, but can’t eat what I need to heal. So now what? I need supplements temporarily to get my body back on track and to be able to get my nutrients from food again and properly digest it. I just need to figure out the right supplements and how much. I can’t do that on my own just guessing.

I did not call my doctor last week…this time on purpose. I have decided I want to see a naturopath to help in this process. I have gotten some recommendations from friends and will soon be calling to set up an appointment. Hopefully they will run some tests and help me figure out how to get my body back in balance. And hopefully this will really help my body function better and get me off of this path of cutting out more and more foods and feeling worse and always guessing. I’m not happy with how my body is functioning and how my health seems to keep declining. I’m hoping that this is the right path to get things back on track. I need a little “help” from supplements to bring back the balance my body needs. Real, nourishing foods are great. But if you have so much damage that you can’t utilize them they do no good.

I did also make an appt. with my psychologist. I have not seen her in over a year. But I’m struggling lately with dealing with my own health problems and the daily struggles with Rebecca’s behavior. I need strategies on how I can handle both things better. That will be next week.

Blueberry Bread Pudding

Last night I tried a new bread pudding recipe that I got from our local newspaper. It was submitted by Sharon Heethuis. It’s called Over the Top Blueberry Bread Pudding. If you make it exactly according to the recipe it would be quite over the top with a white chocolate sauce to pour over top! I scaled it back a little (no sauce, less chocolate). But it was still so good  (then again I’ve never met a bread pudding I didn’t like :P)! The main thing that makes it a bit more over the top is adding white chocolate chips. I know they aren’t healthy. But I did add a few. Blueberries are in season right now, so it’s the perfect time to make this. We all enjoyed it. I would definitely make it again. It would be great with some peaches added as well. Blueberries and peaches always go well together. You can absolutely make it without the chocolate chips…it just won’t be so over the top 🙂

I only made a half recipe. I’ll post the full recipe, with some healthier substitutes. You can make it gluten free by using gluten free bread. You could even try making it grain free using a nut butter, almond flour or coconut flour bread.

This makes a great breakfast, brunch, snack or dessert! I served it with scrambled eggs for dinner.

The pictures don’t really do it justice. I had to bake it in the toaster oven, so the top got a little dark.

Over The Top Blueberry Bread Pudding

3 eggs
4 cups cream (I used a combo of raw cream and milk)
1 cup cane sugar/sucanat (maple syrup or honey would probably work as well)
3 tsp. vanilla
2 cups fresh or frozen blueberries
1 (12 oz.) package of white chocolate chips (you can omit this or use less)
1 loaf bread, cut into 1″ cubes (use whatever bread you like…we used fermented wheat bread. This is a great job for little kids…Rebecca loves to rip up all the bread)

Sauce:
1 (12 oz.) pkg. white chocolate chips
1 cup cream

In a large bowl combine the eggs, cream, sugar and vanilla. Stir in blueberries and chips. Stir in bread. Let stand for 15 minutes. Pour into a greased 9×13 pan. Bake at 350 degrees for 50-60 minutes. Let stand 5-10 minutes before serving.

For the sauce, place chocolate chips in a small bowl. Heat the cream in saucepan just to a boil. Pour over the chocolate. Whisk until smooth. Serve with bread pudding.

You can add coconut and pineapple for variation. Drain pineapple before adding.

Meal Plans Week of 7-15-12

Good morning. As I’m writing I’m listening to my friend and local blogger and creator of Grand Rapids Natural Living Donielle Baker talk about natural fertility at the Real Food Summit. I’ve been listening to great presentations all week. I hope I have time to listen to all three presentations today. Matt Stone is also going to talk. I really want to hear him. I’m also enjoying one of my frozen cheesecake cups. So good! And it’s mostly homemade yogurt and sour cream…lots of great probiotics.

Last week was pretty busy with lots of fun activities like Michigan’s Adventure. But Abram made it even “busier” for me…by which I mean he didn’t give me time to get much done. So if I did have a few free minutes I had to cram in as much as I could. He is teething so badly right now. I’ve hardly slept in my bed all week. I sleep half of the night in the rocking chair with him. But on top of that he is so clingy to me because he is in pain. He has gotten to the point where he won’t even let Justin watch him or hold him most of the time. If Justin is around Abram just clings to my legs and cries to be held. So I basically have no way of getting a break since nobody else can take care of him. It’s tiring.

There aren’t too many things going on this week. Hopefully we’ll have lots of time to relax and just enjoy the summer. Today is church. Monday is milk pick up and dance. Tuesday is farmer’s market. Wednesday is grocery shopping. There is a chance I will go to yoga on Friday. My teacher is offering a free class! But considering that Abram cried for 45 minutes and wouldn’t eat dinner when I went to yoga last week I’m not really counting on it.

I managed to get a few things done in the kitchen last week, including freezing some corn and beans and making mayo, soaked grahams, sd muffins, cheesecake popsicles, yogurt, sour cream, s’mores ice cream and kefir. This week I hope I can get lots of blueberries frozen (they still didn’t have many at the market last week). I want to freeze more corn, beans and zucchini as well. I didn’t get around to doing any ferments last week. We’ll see if I do this week or not. I would like to work on some vacation breakfast and snack foods. In addition to work in the kitchen I’ve been working on Rebecca’s dress any chance I get. I have quite a bit of it done. But I still have a bit to go. I hope I can finish it this week.

For meals this week I think I’m going to do mostly breakfast foods. We had to get a bunch of our eggs early since our farmer is on vacation. So I have about 7 dozen eggs to work through right now 🙂

I don’t have too many updates on myself. I did not get around to calling my doctor yet. I hope to this week so I can get some testing done. I think vitamin/mineral deficiency is a big problem for me. I don’t think my body is absorbing much of the nutrients I eat. I feel like I eat the “right” way most of the time. I eat so many nourishing foods. And yet I have hormonal problems, adrenal fatigue, anxiety, mood swings, etc. I’m trying so hard to take care of my body, but something in the process is not working…something internal. So I want to get to the bottom of it. I’d like to get back to cutting out the miralax (which is likely causing my body to not absorb nutrients) and find a more natural way to help my digestion. A reader suggested Natural Calm magnesium supplement. I’ve heard of that before. So I’m looking into it. And I have taken some magnesium supplements the last few days again.

I am also realizing that I need to work on strengthening my core. I only make it to yoga about once every two weeks. But we always focus on core strength in class. And I’m realizing how weak my core is…and how much that impacts my whole body, including digestion.

One other thing I’ve had in the back of my head for a while is the olive oil we use. Sadly the majority of the olive oil in stores is not really as good as you’d think. Some are refined. Some even add other vegetable oils to them. I do buy first cold pressed organic EVOO. But I still don’t think it’s the best. I consume a lot of it in my pesto that I eat daily and in our homemade mayo. I’m wondering if it’s contributing to my inflammation/pufa intake. I need to look into better sources for olive oil. And in the mean time not eat so much of it. I have over the past week brought my evoo consumption down and my butter consumption back up again. I think that is helping. I’m trying to focus mostly on coconut oil and butter for added fat sources/cooking fats right now.

Meal Plans Week of 7-8-12

Good morning. So thankful today for a little break from the extreme heat. We had multiple days with temps in the 100’s! Finally last night we were able to open the windows…the house is back into the 70’s again. It feels wonderful. Highs only in the 80’s at least for the next few days. I never thought that mid 80’s would feel “cool.”

Last week was quite busy with swimming, dance, farmer’s market, milk pick up, groceries, holiday events, children’s museum, library, out to eat, etc., but we made it 🙂  I even got to go shopping by myself on Friday. Justin watched the kids while I did some sprint shopping…do as much as possible in two hours 😛  I could seriously use an entire new wardrobe. So I had a lot I wanted to get. I only made it to two stores, but I actually got quite a bit. It’s tiring to try on so many clothes so quickly 😛  I’m excited now to have clothes that fit and are in style! This week should be a little less chaotic now that swimming is done. Today is church. We are also planning to visit my grandparents and my parents this afternoon. Monday is dance. Tuesday is farmer’s market. Wednesday we are probably going to Michigan’s Adventure. We’ll see how the kids are doing and what the weather is like. Thursday there is a kids event at a local Christian bookstore. We might stop by. I am also going to yoga. No big plans for Friday. If it’s a nice day, maybe we’ll go to the zoo. Else we’ll just have fun at home.

My kitchen work for this week could be a lot or could be a little. It just depends what produce is ready. I think the good blueberries might be at the market this week. If so I’ll stock up and freeze them. I’d like to freeze about 40 lbs. this year. I might have to have Rebecca walk home from the market this week to fit all the produce in the wagon 🙂  I froze some zucchini last week. I’d like to do more this week. Our beans are just getting started. Once they pick up I’ll be freezing lots of beans. I’d like to make a new batch of soaked graham crackers and a batch of vanilla cookies. Abram really seems to like those. I also need to make sour cream, yogurt and ice cream. Vacation will sneak up on me soon too, so I need to start planning and work on any prep ahead food items like breakfasts and snacks. I might make some soaked bread and buns as well. And possibly some fermented ketchup and fermented lemon punch. It’s been a while since I’ve done any ferments.

I finally got the fabric for Rebecca’s dress cut out yesterday. And started sewing this morning. I’m so excited to make her dress. I hope I can find time this week to work on it.

For meals this week I decided to do a theme. This is burger week! Perfect for the middle of summer. I’m doing all different kinds of burgers. Some with meat, some without. Some with buns, some without. Some with typical burger ingredients, some with breakfast foods. Some grilled, some cooked in a pan. A wide range. I’m even considering creating some kind of dessert burger 🙂  I’m doing Rebecca’s recipe for our dinner tonight. She said we should make “pancake waffles.” We’ll see how that turns out 🙂  I also might make one of Rebecca’s recipes for her for lunch one day – “burger buns.” She likes cheeseburgers…without the burger. Just the bun, cheese, ketchup and mustard.

No major updates for me. One thing I did run into in the last few days…more die off 🙁  I stopped taking my probiotic and started eating cultured dairy daily about 2 weeks ago. That’s my grace period of feeling pretty good when I make a big change. Then the die off kicks in and the headaches, acne and slowed digestion start. Hopefully it will be short lived. Maybe I should do a major diet change every two weeks…maybe that would keep my body guessing and working well 😛

I hear a LOT about macronutrients these days. There is always a debate about what “diet” is better…high/low fat, high/low protein or high/low carb. My opinion…find a balance that makes you feel good. It’s pretty easy to keep tabs on your macronutrients. There are only three. But when it comes to micronutrients it gets a lot harder. In general if you eat a varied diet of balanced protein, fats and carbs and you eat enough calories you should get most of the nutrients you need. But what happens when you can’t eat the balanced diet you want with any choice of fruits, vegetables, grains, beans, meat, etc.?

That is the dilemma I’ve been facing for quite some time. My diet has been restricted in various ways for the last seven or eight years. Currently my diet is quite restricted due to my own gut/intolerances and excluding foods that bother Abram. This is especially true when it comes to fruits and vegetables. This is problematic for getting all of the necessary micronutrients.

I’ve been curious about potassium for some time as I’ve narrowed down my list of foods that I absolutely must avoid. I wondered if they had anything in common. Some common denominator that would crack the case on some of my problems. And since bananas are my worst offender…and bananas are known to be high in potassium I wondered if there was a connection. But I didn’t do anything about it. Then a few weeks ago I did an experiment where I logged my meals for a few days. My intent was to count calories. But it also gives you a good overview of vitamins and minerals. The one thing that stood out to me day after day…Potassium is TOO LOW. Interesting. I hear about magnesium deficiency a lot. But I never hear anything about potassium.

So I did what I always do. I started researching. And I found lots of great information.

Here are some of the symptoms of potassium deficiency (also known as hypokalemia):
anxiety, depression, insomnia, constipation, high blood pressure, heart disease, kidney stones, thyroid problems, arthritis, obesity, headaches, pain in the eyes, muscle spasms, “restless leg syndrome,” fatigue, muscle tension, edema, irritability and dry skin.

What role does potassium play in our bodies? Quite a bit actually. “Potassium is a mineral that helps maintain the water and acid balance in blood and tissue cells, assists in muscle building, and transmits electrical signals between cells and nerves. Potassium is also necessary for bone health, as it prevents the alkaline compounds found in bones from being used up by the body’s natural metabolic acids; low potassium is associated with an increased risk for osteoporosis. The mineral helps the body to use glucose, its main source of energy, so when this process isn’t working correctly, it can leave a person feeling run down. In addition to fatigue, when the muscles don’t have enough energy to work correctly, they can become weak and achy. As an electrolyte, potassium plays a key role in the movement of electrical impulses throughout the body. When a person has low potassium, those impulses may slow down or not travel as they should. This may lead to irritability, anxiety, confusion, and depression, which may only worsen when combined with other effects, like tiredness and weakness. Low potassium can also result in paralysis, as the mineral is essential for the transport of electrical signals that allow muscle movement. Paralysis can occur in any part of the body, but is particularly associated with the digestive system. When parts of this system become paralyzed, food cannot be digested properly, leading to stomach and intestinal cramps, constipation, and bloating.”(1)  “Potassium is the third most abundant mineral in the body. It is also an electrolyte that regulates blood pressure, water retention, muscle activity, and proper function of every cell in your body. Potassium helps the cells in the body eliminate toxic waste, promotes balanced pH levels, and increases energy.” (2)  Sounds pretty important to me!

Potassium does not work alone, though. It needs to be in balance with sodium, magnesium and calcium. Potassium is especially related to sodium, as they balance the fluids and electrolytes in and out of cells. So if you eat a high sodium diet, but low potassium it could cause big problems…and that is exactly what I’ve been doing. I eat a LOT of salt. I love salt. And in general I think it’s healthy as long as you are using unrefined sea salt that contains lots of minerals. But of course you can have too much of a good thing. I am also likely deficient in magnesium. And magnesium helps your body utilize potassium. So far things don’t sound too good for me 😛

So far I’ve talked about simply not eating enough foods with potassium. But what else can cause a deficiency? One of the biggest culprits is certain medications…one of them being laxatives. I’ve been taking miralax for 6 years now! Laxatives prevent your body from absorbing all of the nutrients from your food. Strike two for me.

Stress and anxiety can cause magnesium deficiency…which contributes to potassium deficiency.

My blood pressure is often low. And when I do yoga I always get headaches. I think it is related to my blood pressure. This could also be caused by my sodium/potassium balance.

I also get severe swelling (edema) during pregnancy. And after my son was born (over a year ago!) I don’t think it ever went away completely. I still feel like my ankles are mildly swollen every day. It could be related to potassium and balanced sodium levels.

I already know I have a leaky gut that prevents me from utilizing all of the nutrients in the food I eat. Top that off with a full time breastfeeding child for over a year that has priority when it comes to the vitamins and minerals in your body…and doesn’t care if it depletes your stores.

Where does that leave me? Not in good shape. I don’t eat enough potassium rich foods. I eat a lot of sodium, which means I need more potassium. I’m low in magnesium…which prevents my body from utilizing all of the potassium I do consume. Plus my body doesn’t absorb half of what I do eat. Plus my son gets a lot of what my body does have. Now what??

The RDA of potassium for an adult is 4700 mg. For a breastfeeding woman it is 5100 mg. When you look into the potassium content of food you’ll see that 5100 mg is a LOT. It’s hard to consume that much even if you are utilizing all of it. And that is the minimum you should get in a day.

I can’t eat a lot of foods that are really high in potassium. But there are some that I do tolerate. To demonstrate just how tough it would be to consume enough potassium I’ll give a sample of what I would have to eat in a day. I’ll be very generous and say my body is utilizing 75% of what I consume (even though I think it’s probably more like 50% or less). That would mean I need more than 7500 mg of potassium a day to get my daily minimum. This is what I would have to consume to reach that amount (eating only foods that I tolerate):

That is a lot of food! And it hardly even includes vegetables. It doesn’t contain any grains. It doesn’t contain any added fat (I consume a lot of coconut oil, EVOO and butter each day). It is definitely not what I would normally consume in a day for a good balance. Plus I probably need a lot more than 7500 mg to compensate for a deficiency and a leaky gut and breastfeeding and laxatives. Just these foods would be about 3265 calories. Add extra fat on top and it’s more like 3600 calories (at least). Add in any more vegetables and grains and it’s more like 4000 calories. Way more than I could ever eat in day. Plus it has 80 grams of fiber! I try to eat fairly low fiber to go easy on my gut. This doesn’t seem like a doable thing for me.

For the last two weeks I have been trying to add more of these high potassium foods into my diet. And in general I have been doing pretty well the last couple of weeks. I try to eat yogurt, avocado, raisins, dates and cocoa daily. Plus I often eat salmon, zucchini, pumpkin, eggs and milk. I have also been drinking some orange juice lately. I rarely drink juice. I don’t think it has much nutritional value. And if I do drink juice it’s always grape juice…my favorite 🙂  But I’ve really been craving orange juice. Maybe it’s one more sign that I need potassium…and maybe even more vitamin C.

Although I’m sure adding high potassium foods into my diet is helpful, I don’t think it will be enough. I am currently researching potassium supplements. It seems strange to me that the RDA of potassium is 4700 mg, but most vitamins and supplements only contain trace amounts. My multivitamin has a lot more than 100% RDA for many vitamins and minerals, but only 5 mg (.1%) of potassium. So I’m looking for a supplement that actually has enough potassium in it. I might also start supplementing magnesium again. And trying to cut back on salt a little bit.

I am also going to contact my doctor to see if I can get a blood test to check some of my vitamin and mineral levels to be sure I’m not way off.

One thing I am still curious about is if my body is truly intolerant of my no-no foods that are mostly high potassium foods. Or if my body is so low in potassium that when I eat foods that contain a lot it holds on to them and sucks out every last drop of minerals…slowing down digestion. If I ate a large amount of some of my problem foods would I tolerate them better since my body wouldn’t feel deprived anymore? I don’t know. And at this point I’m not brave enough to try since it could cause major problems.

Obviously I have a lot of experimenting and researching to do yet. I know that two weeks of diet adjustment and feeling some improvements does not mean it will be good long term. This is an ongoing process. But I think that increasing my potassium levels could really help. It is also a good reminder that eating the same foods day after day (either because they “work” for you or just because you like them) can contribute to deficiencies. Variety and balance can help ensure that you get all of the vitamins and minerals you need.

Meal Plans Week of 7-1-12

Another steamy morning here to start off the holiday week. Our schedule will be a bit crazy to start the week as well. I hope we’re up for the heat and the chaos 😛

A few updates from last week…I finally got around to sewing Rebecca’s doll dress. I’ve had the fabric since February! I finally made time to work on it this week. I started on Thursday…and finished it on Saturday. Not bad. Hopefully I can get started on Rebecca’s matching dress right away instead waiting 4 months 😛  Rebecca and I also finally had another Mommy/daughter date. We went mini golfing, stopped at a Christian bookstore to pick out a new book and went to dinner. We shared our dinner, had our usual butterscotch milkshake and read part of her new book. We had a great time. But note to self – never again order the fried fish at the Rainbow Grill. I don’t think I’ve ever reacted that strongly that quickly to food. It took an hour or so for the nausea and stomach cramps to subside. I’m guessing most of the food I ate had soybean oil. Anything with soy, even small amounts, are killer on my stomach. Hopefully today won’t be too rough. Just goes to show that vegetable oils are NOT good. We had a playdate and went to the park twice. Plus we had swimming four mornings and dance one day. We tried to go to the library twice, but it was closed both times (once due to building problems, once b/c we were too late). I made it to one yoga class…I sure needed that! In the kitchen last week I made pesto, strawberry ice cream, strawberry banana ice cream sandwiches, chicken broth, kefir, yogurt, sour cream, sd banana bread and soaked grahams. Whew. I guess we were busy.

On to this week. Today is church. Monday will be a doozy. We have swimming. Right from there we’ll go get milk. In the afternoon we have dance. We’ll get home, have dinner and then someone is visiting right after dinner. Tuesday morning we have farmer’s market and swimming. Wednesday we’ll go to the 4th of July parade and the craft show. We’ll watch fireworks from our porch like always. Rebecca says she wants to hear them from in the house. We’ll see if we just put her to bed or try to get her to watch. Thursday will be grocery shopping. Friday Justin has vacation. Not sure if we’ll do anything. I’m hoping we can make it to the library this week too. And possibly another yoga class.

No big kitchen plans. We’ll see what produce is available/if I need to preserve anything. Maybe I’ll freeze some zucchini. I might make a dessert for the 4th. We could use new batches of vanilla ice cream, hot fudge, butterscotch and/or caramel. And I hope to do some sewing.
No major updates on me. I have been doing some research on minerals. I’m wondering if I’m deficient in potassium. So I’ve been trying to increase my potassium through food over the last week. I think it is also related to magnesium. I haven’t been taking extra magnesium for a while. I still need to research more. And I might try to get some testing done so I can stop guessing and really see if my body is lacking anything.

RR – Rice Balls

It’s time for this’s week’s Rebecca’s Recipe. Rebecca decided to have rice balls for dinner. I’ve never made or eaten a rice ball. But it sounded good. We came up with a very simple recipe that actually was really good! Even Justin really enjoyed them. They are basically a combination of rice, cheese, egg and seasoning. You can dip them in pretty much anything (salsa, spaghetti sauce, honey mustard, ketchup, pesto…whatever) or eat them plain. They are delicious either way. You can add variety by using different cheeses. I used garlic and onion last night. A sharp cheddar or parmesan would be great too. They reheat very well. I’ll make these again for sure! Another winning recipe from my little chef 🙂

Rice Balls

1 cup cooked rice (I used white rice since I’m experimenting with how my tummy handles it…you could use any kind of rice you like)
1 egg
1/2 cup finely grated cheese (I used garlic and onion)
seasoning of choice (I just used salt + the seasoning in my bread crumbs)
bread crumbs (use gluten free bread crumbs to make this gluten free)
oil for frying (I used coconut oil)

Cook rice and let cool partially (or cook the rice ahead of time/use leftovers and warm it slightly). Add egg, cheese and seasoning. Mix well. One at a time roll a small portion into a ball and cover with bread crumbs. They will be fragile, so I found it easiest to sprinkle the breadcrumbs over the rice ball in my hand and gently lay it in the pan.

Cook in hot oil (enough to cover the bottom of the pan) in large skillet. Cook over medium heat on all sides until golden brown, about 15 minutes total. Serve plain or with dipping sauce. They would also be good on a salad.
