Cherry Jam

Cherry Jam -  Homemade Dutch Apple PieSweet cherries are abundant in the summer here in Michigan. We love to go picking and then freeze a ton to use all year long (we got almost forty pounds this year!).

We also use a lot of them fresh. Sweet cherries are great for making desserts and smoothies.

But another way to enjoy them is in jam. Nothing beats fresh cherry jam!

This jam recipe is very easy to make. Plus it’s free of pectin. You can make a big batch and freeze most of it to use throughout the year.

One recipe makes about four 1/2-pint jars. You can easily double the recipe so you have a lot to freeze.

Not sure you love cherries as much as I do? Swap some of the cherries for another fruit for a combination jam. Cherries and raspberries work very well together.

Cherries offer a perfect natural sweetness so you don’t need to add much to the jam.

Are you ready to start your day with a plate of scrambled eggs and toast with fresh cherry jam? I sure am! I think I could even eat the jam straight out of the jar. It’s that good.

A simple and sweet homemade cherry jam that is free of pectin and fillers.

Ingredients
  1. 2 Tbsp. lemon juice
  2. 2 Tbsp. pure cherry juice (can be replaced with more lemon juice)
  3. 3 tsp. grass-fed gelatin
  4. 4 cups sweet cherries, pitted and chopped (keep any juice that comes out from chopping with the cherries)
  5. 1/2 cup organic cane sugar, sucanat or coconut sugar
Instructions
  1. In a medium saucepan combine the lemon juice, cherry juice and gelatin. Let the gelatin dissolve for 3-4 minutes.
  2. Add the cherries and sugar to the pan.
  3. Cook and slightly mash cherries with a potato masher over medium heat until it comes to a boil.
  4. Turn down heat and allow jam to simmer for 2 minutes.
  5. Remove from heat and pour the jam into clean jars.
  6. Place lids on the jars and refrigerate until fully gelled.
  7. Store in the refrigerator or freezer.
Notes
  1. This recipe makes about 4 - 1/2 pint jars.

One meal that I know my kids will always devour is salmon cakes. It’s kind of an odd meal for small children to love. But they do. And it makes me so happy.

Recently I decided to change things up a bit and make zucchini salmon cakes since zucchini is in season. I wondered if my kids (one with texture issues and one that is very picky with vegetables) would still enjoy them.

To my great surprise and delight they did!! Both kids loved them!

These zucchini salmon cakes still have the flavor of a salmon cake. But there is actually way more zucchini than salmon in them. So you get the benefits of salmon combined with vegetables. And even if your kids won’t eat another vegetable with the meal you know they are at least getting some. That is my kind of meal!

Zucchini salmon cakes are very easy to make. They also work well for a lot of special diets since they are grain, dairy and nut free.

We had these as our main dish for dinner. But they were also great cold the next day for lunch. I honestly think my kids liked them better that way. I even love them cold for breakfast. It’s a great way to start my day with fish, eggs and vegetables. Plus it’s already prepared, so breakfast is easy.

I serve them with homemade mayonnaise. They would also be good with pesto. These zucchini salmon cakes are even meaty enough to be used as burgers! Put one on a bun with your favorite toppings for a change of pace.

 If you’re looking for a delicious and nourishing summer meal this is it. There is no need to turn on the oven. Just fry up some zucchini salmon cakes. They are great for the whole family.

Zucchini Salmon Cakes
Yields 8
A salmon cake packed with zucchini and lots of flavor.

Ingredients
  1. 2 cups finely grated zucchini, drained (about 3 medium zucchinis)
  2. 1 6 oz. can of boneless skinless salmon
  3. 3 eggs
  4. 1/3 cup coconut flour
  5. seasoning to taste (salt, pepper, garlic powder)
  6. Lard, coconut oil or palm shortening for frying
Instructions
  1. Grate the zucchini. Place in a strainer to drain for about one hour. Squeeze out excess liquid.
  2. Combine the zucchini, salmon, eggs, flour and seasoning.
  3. Cover the bottom of a large pan with fat. Heat over medium heat.
  4. Scoop balls of zucchini mixture and form into patties. Place in hot pan.
  5. Cook until browned on bottom, about 7 minutes. Flip. Cook until the other side is browned.
  6. Serve warm.
Notes
  1. If you like the cakes to be really firm add 1/2 cup coconut flour instead of 1/3 cup.
  2. The zucchini salmon cakes can be used as burgers and served on buns.
  3. The zucchini salmon cakes can be served warm or cold, as breakfast. lunch or dinner.
  4. Homemade mayonnaise or pesto make great dipping sauces for the zucchini salmon cakes.
  5. The salmon can be replaced with tuna.

Simple Strawberry Slush (egg free, dairy free, nut free, gluten free)

This simple strawberry slush is a fun, fruity, allergen-friendly drink for kids and adults. I grew up drinking Slushies® all the time. We would bike to the local drug store all summer to get them. Of course they were made of food coloring, high fructose corn syrup and artificial flavor.

This simple strawberry slush is a much-improved version. It only uses a few simple ingredients. It is also very allergen-friendly.

My kids LOVE these. I’ll be honest – my husband and I do too!

As always, the best part for me is that it only takes about 60 seconds to make a simple strawberry slush. Plus I can add collagen for a nutrition boost.

Strawberries work very well in this drink – even frozen! But if you don’t have any or want a different flavor you can try blueberries, raspberries or even cherries. You really can’t go wrong.

This summer the whole family can cool down with a nourishing simple strawberry slush.

  1. 6 ice cubes
  2. 3/4 cups strawberries (fresh or frozen) (or other fruit)
  3. 1 - 2 Tbsp. sweetener (honey, syrup, sucanat) (depending on the sweetness of the fruit)
  4. 1/4 tsp. sea salt (optional)
  5. 1/2 tsp. collagen (optional)
Instructions
  1. Combine all of the ingredients in a high powered blender.
  2. Blend until desired consistency.
  3. Serve immediately.
Notes
  1. This makes enough for two children or one adult.
  2. You can blend it completely smooth (for small children) or leave a bit of slushiness from the ice.
  3. Blueberries, raspberries and cherries can be combined with or substituted for the strawberries.

Soaked Gluten Free Cereal

soaked gluten free cerealBreakfast takes on so many forms in my house. One day it might be soup. The next day it might be muffins and fruit. Another day it might be eggs and vegetables. It just depends what we have on hand and what we are in the mood for.

But when it is HOT and I don’t feel like baking or cooking it is so nice to be able to grab a bowl of cereal.  I’ve mentioned before why we don’t buy cereal. That doesn’t mean we don’t enjoy a bowl as a special treat once in a while.

Not buying cereal doesn’t mean you can’t enjoy the flavors you love. I’ve made gluten free “Golden Grahams,” gluten free peanut butter cocoa puffs, grain free granola, grain free muesli, whole wheat cocoa puffs, whole wheat “Golden Grahams,” homemade “Frosted Mini Wheats,” homemade oat squares and soaked granola.

This is another one of my solutions for the cereal dilemma. It is soaked and gluten free. It is great topped with fresh, raw milk.

It also makes a great granola substitute for people like me that don’t tolerate oats. Use it as is or mix nuts, dried fruit and/or coconut into the container of cereal. What a treat for a granola-lover like myself! I love mixing it into whole milk yogurt.

I recommend making a double or triple batch. I don’t think the single batch I made is going to last long. It’s just too good!

I made it with dairy, but this cereal can easily be made dairy free. It is naturally free of eggs, gluten, corn, soy and nuts.

Soaked Gluten Free Cereal
A simple cold cereal for busy mornings or a special treat.

Ingredients
  1. 2 cups any combination of gluten free flours (i.e. white rice, sorghum, amaranth, tapioca)
  2. 1 cup of soaking liquid - buttermilk, yogurt, kefir, milk + vinegar or water + lemon juice
  3. 1/4 cup butter or coconut oil, melted
  4. 1/4 cup maple syrup or honey
  5. 1/4 cup organic cane sugar, sucanat or coconut sugar
  6. 1/2 tsp. sea salt
  7. 1 tsp. baking soda
  8. 1/2 tsp. organic vanilla
Soak The Flour
  1. Combine the flour and soaking liquid. Cover and let sit 7 - 24 hours.
Bake The Cereal
  1. Add the remaining ingredients to the soaked flour.
  2. Mix well with a hand mixer or stand mixer.
  3. Pour the batter into a greased 8x11 or 9x13 pan.
  4. Bake at 350*F for 25 minutes.
  5. Allow to cool for 10 minutes.
Dry The Cereal
  1. Crumble the cereal into large chunks and place on a baking sheet or dehydrator tray.
  2. Dry at 150*F in an oven or dehydrator for about 3 hours, until cereal is dry and crunchy.
  3. Crumble the cereal into desired sized pieces.
  4. Store in an airtight container in the cupboard or the freezer.
  5. Serve topped with milk or mixed into yogurt.
Notes
  1. This is a very portable snack for kids.
  2. The cereal can be turned into muesli/granola by adding chopped nuts, dried fruit and/or coconut.

Yogurt is one of my favorite foods! But if you gave me a container of store-bought flavored yogurt I probably wouldn’t touch it.

Most yogurt contains artificial flavor and color in addition to fillers and chemical sweeteners. Regardless of the health status of most yogurts, I think they are just way too sweet. Anybody else?

My family’s palates have definitely changed when it comes to how sweet our food is. So I’ve been making yogurt at home for years. Sometimes I make it from our raw milk. When we don’t have enough milk to spare I just buy plain, whole milk yogurt and add our own flavor.

When flavoring your own yogurt the possibilities are endless!  I come up with all sorts of creations, depending on what we have in the house. It’s fun to have variety.

I like to make cookies ‘n’ cream yogurt when we have homemade cocoa puffs, oreos® or brownies on hand. I’ve even been known to make caramel apple, strawberry swirl, cherry pie and a few other crazy flavors.

But two of our favorites (and two of the easiest) are blueberry and cherry. Just a few simple ingredients and you have the best yogurt you’ve ever tasted. No overpowering sweetness. No artificial flavor. Just pure, simple ingredients.

With blueberries and cherries in season this yogurt makes the perfect breakfast or snack any time of day. When the fresh fruit isn’t in season any more you can still enjoy delicious yogurt using frozen fruit.

If the flavor and health benefits aren’t enough, making your own flavored yogurt from large containers of plain yogurt really saves money. A single serving yogurt is about $1.00. You can buy a tub of plain yogurt for about $2.00 and make six servings out of it. That is a huge savings.

I like to take five minutes in the evening to prepare individual yogurts. Then breakfast is ready when we get up in the morning. You can even take it on the go.

If you like fruit on the bottom yogurt you’ll love my versions of blueberry and cherry yogurt. Stir in some homemade granola for a complete breakfast treat. What is your favorite yogurt flavor?

Honeyed-Dew

honeyed-dewI often serve some kind of fruit side dish with our dinner. I try to have variety or simply make fruit salads with whatever fruit we have on hand and is in season.

Recently as I was preparing dinner I was trying to think of what to do with the fruit we had on hand. My son is allergic to grapes and bananas. So those were out. That left honeydew.

We all enjoy honeydew plain. But I wanted to spruce it up a bit. So our honeydew became honeyed-dew.

The honeyed-dew only took about 30 seconds to prepare. It was so refreshing at dinner, and everyone liked it. My son kept sucking on the fruit like a popsicle.

You can make it in a bowl to serve to a group or put the honeydew on sucker or popsicle sticks for a cool treat kids will eat any time of day.

If you don’t have honeydew you can use a different type of melon. You could even use grapes or berries. No matter what fruit you choose this is a healthy, simple side dish or snack.honeyed-dew 2

Instructions
  1. Place the honeydew in a bowl or on sticks.
  2. Drizzle with honey.

  4. Mix or spread over the fruit.
  5. Freeze the fruit for about 60 minutes.
  6. Stir before serving to make sure the syrup covers the fruit.
Notes
  1. This recipe can easily be doubled, tripled, etc. depending on how many you are serving.
  2. The "popsicles" can stay in the freezer for an easy snack.

Gluten Free Dairy Free Strawberry Rhubarb Muffins

When it’s rhubarb season you have to make at least one thing with the classic strawberry rhubarb combination. Recently I made a batch of strawberry rhubarb muffins.

I love the combination of sweet and tart. I added a little cinnamon sugar topping to give them an extra punch of flavor.

I also love that they are so simple to make! It takes less than ten minutes to get them in the oven.

These muffins are very allergen-friendly with no gluten, dairy, rice or nuts. You don’t even have to use a milk substitute.

Make a big batch of muffins, serve some for breakfast and free some for later. It’s a great way to use fresh, spring rhubarb.

Gluten Free Dairy Free Strawberry Rhubarb Muffins
Yields 12
A sweet and tart muffin that is gluten, dairy, rice and nut free.

Ingredients
  1. 1/2 cup amaranth flour*
  2. 1/2 cup sorghum flour*
  3. 1/2 cup tapioca flour*
  4. 1/2 cup coconut sugar, sucanat or cane sugar
  5. 2 Tbsp. maple syrup
  6. 1/2 tsp. sea salt
  7. 1/2 tsp. baking soda
  8. 1 tsp. aluminum free baking powder
  9. 1 tsp. vanilla
  10. 3 eggs
  11. 2 Tbsp. melted coconut oil (or butter or palm shortening)
  12. 1/4 c up water or milk substitute
  13. 1/2 cup strawberries, chopped
  14. 1/2 cup rhubarb, chopped
  15. 1/2 tsp. cinnamon (optional)
Topping (optional)
  1. 1/2 tsp. cinnamon
  2. 2 tsp. coconut sugar, sucanat or cane sugar
Instructions
  1. Heat oven to 350 degrees F. Grease muffin tin or line with baking cups.
  2. In a large bowl combine the flour, sugar, syrup, salt, soda, powder, vanilla, eggs, coconut oil, cinnamon and water. Mix until well combined.
  3. Stir in the strawberries and rhubarb.
  4. Fill muffin cups 3/4 full with batter.
  5. Combine the cinnamon and sugar. Sprinkle a little on each muffin.
  6. Bake for 35 minutes, until golden brown and baked through.
  7. Allow muffins to cool 5-10 minutes before serving.
Notes
  1. *You can substitute any gluten free flour for the flours listed. It works best to include at least one "white" flour, such as tapioca or white rice. Using a combination of flours gives a more neutral flavor.

Rhubarb Quinoa Breakfast Porridge (gluten free, dairy free, nut free, egg free)

You’ve made muffins and coffee cake and pie. But you still have rhubarb and don’t know what to do with it. How about serve it for breakfast?

Rhubarb is a very versatile vegetable. If you pair it with a healthy, gluten free grain like quinoa you’ve got a power-packed breakfast.

This breakfast porridge is slightly tart and slightly sweet. It can be served warm or cold. You can make it fresh or prepare it in advance. You can serve it as-is or add all sorts of fun things for more texture and flavor. I added cranberries, raisins, butter and milk to mine. I also served some chopped nuts on the side for my husband.

If you don’t like or don’t tolerate quinoa you can easily swap it for oatmeal or rice.

Rhubarb isn’t just for desserts. It makes a great addition to your breakfast!

Rhubarb Quinoa Breakfast Porridge

Ingredients
  1. 1/2 cup quinoa
  2. 1 cup water
  3. 1/2 tsp. cinnamon
  4. 1/4 tsp. nutmeg
  5. 1 Tbsp. maple syrup or honey
  6. 1 1/2 cups rhubarb, diced
  7. 2 tsp. butter or coconut oil
  8. 3 Tbsp. coconut sugar, sucanat, honey or maple syrup
  9. optional add-ins: dried fruit, nuts, milk, butter, coconut oil
Instructions
  1. Soak the quinoa in water for 1 - 24 hours. Drain and rinse.
  2. Bring 1 cup water to a boil in a medium pan. Add the drained quinoa, cover and simmer for 12 minutes.
  3. Remove the pan from the heat and keep covered for 15 minutes.
  4. While the quinoa is cooking, in a small pan over med-low heat cook the rhubarb, butter and 3 Tbsp. sweetener until the rhubarb is tender (about 10 minutes), stirring periodically.
  5. After the quinoa and rhubarb are prepared, poor the rhubarb mixture into the quinoa and stir.
  6. Add cinnamon, nutmeg and 1 Tbsp. syrup.
  7. Add any optional add-ins you desire (if serving immediately).
  8. Serve immediately or store in the refrigerator until ready to serve.
Notes
  1. This can be prepared the day before and served cold or quickly reheated on the stove. If preparing in advance, add the optional ingredients just before serving.
  2. You can add other fruits (strawberries, cherries, etc.) to the cooked rhubarb for a sweeter flavor.

Gluten Free Dairy Free Rhubarb Crisp (nut free, egg free)

 The earliest produce to pop up in our garden is rhubarb. It seems to be one of those strange vegetables that you either love or hate.

Growing up I don’t think anyone in my family liked rhubarb. So I never even tasted it until a few years ago when I started baking it with it myself.

It’s tart and a little tough. But if you add sugar and cook it rhubarb is delicious! It is perfect for all sorts of desserts.

In the past I’ve made strawberry rhubarb upside down cake, rhubarb muffins and Dutch strawberry rhubarb pie. We have more in our garden, so I need to come up with other ways to use it.

Yesterday I made one of my favorites – rhubarb crisp. This version is gluten, dairy, nut and egg free. I used oats in the topping, but they can be replaced with other gluten free flours if you don’t tolerate oats.

The whole family gave the seal of approval for this recipe! The best part for me? It’s really easy to make. It only took about 10 minutes to get it prepared and in the oven. A simple dessert the whole family can enjoy. Perfect!

Gluten Free Dairy Free Rhubarb Crisp
A delicious summer treat that is gluten, dairy, egg and nut free.

Ingredients
  1. 3 cups rhubarb, chopped (you can also peel outer layers if they are stringy)*
  2. 1 cup organic cane sugar or sucanat
  3. 1 cup rolled oats**
  4. 1/2 cup coconut flour***
  5. 1/2 cup organic palm shortening, butter and/or coconut oil
  6. 1/2 cup organic cane sugar or sucanat
Instructions
  1. Heat oven to 350*F. Grease a 9" baking pan.
  2. Combine the rhubarb and 1 cup sugar. Mix well and pour into prepared pan.
  3. Combine the oats, flour and 1/2 cup sugar in a small bowl. Mix in the fat until the mixture is crumbly.
  4. Sprinkle the crumble over the rhubarb.
  5. Bake the crisp for 50-60 minutes, until the rhubarb is soft and the topping is golden brown.
  6. Let the crisp cool completely before serving. This will allow it to solidify.
  7. Serve plain or topped with whipped cream or ice cream.
Notes
  1. *You can substitute chopped strawberries, raspberries or cherries for some of the rhubarb to make a sweeter crisp.
  2. **You can replace the oats with 1/2 cup white rice flour and 1/2 cup coconut flour.
  3. ***You can replace the coconut flour with 1/2 cup oat flour.

Hydrating Iced Cocoa

Last year I shared my “secret” recipe for hot chocolate that I drink daily. It tastes great and keeps me  going all day.

This past week we went from chilly to hot! Though now it’s back to chilly again. That’s Michigan for you.

As much as I love my hot chocolate, when I’m dripping with sweat from playing outside with the kids it just doesn’t sound that appealing.

So now it’s time for an iced version! When I tried it I was pleasantly surprised that the iced cocoa kept me just as hydrated as the hot version. It was also just as easy to drink without feeling like I had a belly full of liquid.

I don’t know the science behind it, but just a small amount of cocoa helps my body absorb liquids and stay hydrated. Cocoa is also full of minerals like potassium and magnesium. It even has quite a bit of iron and fiber.

I’ve talked before about the importance of not drinking tons of plain water throughout the day. It will actually flush the vitamins and minerals out of your body and leave you dehydrated…and feeling even thirstier! It will also lower your metabolism (you can read more about that in Eat for Heat and The Nourished Metabolism).

I stick to my mug of hot chocolate in the morning and now my mug of iced cocoa in the afternoon. My thirst is quenched for the whole day. As an added bonus I no longer have the overactive bladder I had from childhood on. I’m not running to the bathroom all day long.

Do you play sports? Skip the neon-colored sports drinks and fill your water bottle with iced cocoa.

My kids often ask me to make hot chocolate for them. But it’s tough to get it just the right temperature so that it’s still warm but not too hot. They are going to love this new treat.

Hydrating Iced Cocoa

Ingredients
  1. 1 - 2 tsp. organic cocoa powder (you can substitute carob powder)
  2. 1 Tbsp. honey, maple syrup, coconut sugar and/or cane sugar
  3. 1/8 - 1/4 tsp. unrefined sea salt
  4. 1-2 tsp. gelatin or collagen (optional)
  5. 1/4 cup milk or milk substitute (optional)
  6. ice cubs
  7. hot water
  8. cold water
Instructions
  1. Add cocoa powder, sweetener, salt and gelatin to a heat-safe cup (I like to use a pint jar/mug).
  2. If using gelatin, add 1/8 cup of water, stir and let sit for about 30 seconds to dissolve.
  3. Add 1/4 cup boiling water to the cup. Stir to dissolve the cocoa/sweetener/salt mixture.
  4. Add 4-6 ice cubes to cool the cocoa.
  5. Add milk for richness.
  6. Fill the rest of the glass with cold water.
  7. Stir and serve immediately.
