Gluten Free Banana Chocolate Chip Bread

The taste of this banana chocolate chip bread takes me back to my childhood. But my version is free of gluten, dairy, nuts, eggs, corn, soy and coconut. It’s perfect for Allergy Awareness Week!

My mom makes the BEST banana bread in the world. It’s amazing.

Growing up we would eat slice after slice. I loved putting cheese on it (yes, American cheese) for the salty sweet combination.

One of my favorite parts was that sometimes my mom would leave one loaf just a touch underdone in the middle for me. I loved the gooey doughy top. It was my special treat.

Bananas for me?

It’s been quite a few years now since I’ve been able to eat my mom’s banana bread. In fact it’s been many years since I’ve even eaten a banana. For the last ten years or more just one bite of banana would send my digestive system into spasms.

So when I had to cut them out of my daughter’s diet it was no big deal for me since I didn’t eat them anyway. A couple months ago we added them back into my daughter’s diet…with no reaction!

I started trying a little taste here and there. And gradually full bites. Then a few bites. Now I can eat a whole banana with no problem. It’s quite a miracle.

Allergy Awareness Week

When I was challenged by Enjoy Life Foods to make something with their chocolate chips for Allergy Awareness Week I thought about more homemade chocolates or brownies.

But then I had a pile of really ripe bananas to use up. It dawned on me…I can eat bananas now and haven’t made banana bread yet!

So I came up with my version of banana bread as a tribute to my mom and for those that also have a lot of allergies. This version brings me right back to my kitchen as a child, watching my mom make banana bread and waiting impatiently for it to come out of the oven.

This banana chocolate chip bread is quite moist. If you’re like my husband and have issues with texture and moisture you might want to scale back on the water in the recipe. For me it was absolutely perfect.

My little one loved it too! She will rarely eat a bite of any muffin or bread I make. But she scarfed down two pieces! Right after playing in the mud and getting a bath.

This banana chocolate chip bread is what you need. There are only two tablespoons of honey added. The bananas add a natural sweetness (always use really ripe bananas). Of course the Enjoy Life chocolate chips just put it over the top.

No gluten, dairy, eggs, nuts, corn, soy or coconut. But you’ll never notice. And this bread is so easy to make (and eat) you’ll want to bake three or four loaves. Keep some in the freezer for easy breakfasts and snacks.

Gluten Free Banana Chocolate Chip Bread

An allergen friendly moist banana bread with chocolate chips for a boost of flavor.

Ingredients

1 cup white rice flour
1/2 tsp. unrefined sea salt
3/4 tsp. baking soda
1/2 cup mashed ripe banana
2 Tbsp. olive oil
2 Tbsp. honey
1 tsp. grass-fed gelatin
1/4 cup cold water
1/4 cup hot water
2 Tbsp. Enjoy Life chocolate chips (mini or dark)

Instructions

Preheat the oven to 350*F. Grease a medium size loaf pan.
In a large bowl combine the flour, salt and baking soda.
In a small bowl combine the gelatin and 1/4 cup cold water. Set aside.
Add the olive oil, honey, banana and chocolate chips to the flour mixture.
Mix the hot water into the gelatin mix and stir until gelatin is dissolved.
Pour the hot gelatin mix into the flour mixture and stir until combined.
Pour the batter into the prepared pan and bake for 50 minutes, until baked through.

Notes

Reduce the cold water to 2 Tbsp. for a less moist bread.
You can replace half of the white rice flour with brown rice flour or sorghum flour.

Stonyfield Grassfed Yogurt and Whole Milk Greek Yogurt Review

When it comes to the low-fat craze yogurt has been on board for many years. Fear not! Stonyfield is bringing back some healthy fat to your diet with their whole milk Greek yogurt and grassfed yogurt!

I’m very excited to tell you about some great yogurt today! For once, a company is moving in the RIGHT direction when it comes to offering healthy choices.

Stonyfield is now offering whole milk Greek yogurt and 100% (for REAL) grassfed yogurt.

Every time I see the grocery store shelves lined with Greek yogurt I cringe. I just don’t get it. You’ve taken all the healthy fat out. And boast about how much protein it has. All I see is a major imbalance.

If you want your protein to count you need to eat fat with it. Carbs too! (my kettle corn granola is the perfect addition!)

But what really got me excited was Stonyfield’s new 100% grassfed yogurt.

Here are some details directly from Stonyfield:

While some products may claim to be made from milk sourced from grassfed cows, that does not necessarily mean that the cows were fed a 100% grassfed diet. Our Organic 100% Grassfed is made with milk from cows, who have eaten all grass, all of the time, even in winter! And we’ve heard they just LOVE the fermented grass they eat in the winter months. To make sure our consumers recognize this difference, we have sought out and gotten independent certification of it – by the PCO. Look for the label on the cup!

How cool is that?!

We got to try all the different varieties. Since my youngest and I are dairy free I had to trust the opinions of my family.

Four Year Old

My son tried the whole milk Greek + honey once before his dairy allergy diagnosis. He loved it! And of course he loved the cool container, especially since we never buy individual yogurts unless we are traveling. No complaints, except he wanted more when it was gone.

Seven Year Old

My daughter tried all of them. Her favorite hands down was the grassfed yogurt. Just the right texture and sweetness.

She didn’t care as much for the Greek because it was quite tart. Which is saying a lot since we normally only add a bit of honey or syrup to plain yogurt and aren’t used to sweet things. So I added a touch extra honey to hers.

Husband

My husband enjoyed all of them. Though he too isn’t that crazy about Greek yogurt. It is very thick and tangier than regular yogurt. He thought the sweetness was good in all of them. But would definitely choose the grassfed for overall taste and texture. Really he’d choose the Oh My Yog! over both of these. Have you tried them yet?

Even though I can’t taste the yogurt I still get to weigh in! Here are my thoughts.

Likes

I LOVE that the yogurt is full fat (which we need!).
I LOVE that the yogurt is organic and some of it is 100% grassfed.
I like the variety of flavors.
I like the convenience. We can finally buy a full fat individual size yogurt if we need something when we are on the go.

Dislikes

The flavored Greek yogurt containers have a strange design, and it was hard to get the filling out of the little cup. Especially the honey that gets hard when cold. I think it would be better to just make it fruit on the bottom and not deal with the flipping and scraping.
All of the yogurts besides the Greek + honey have cornstarch. With a rising number of people with corn allergies that really limits options.
Natural flavor – it’s in everything, even organic food. But it is almost the same as artificial flavor and has the same impact on my daughter. It makes her crazy and unable to focus. So in spite of the good quality of the yogurt I can’t let her eat it without consequences.

Overall I am very happy with the latest yogurts from Stonyfield. Quality dairy that hasn’t had the healthy fat removed. I’m all for it. But we’ll be sticking to the plain yogurt and adding our own sweetener and fruit most of the time to avoid the thickener and natural flavor. That’s life with allergies!

Toups and Co Organics Review

Don’t let the dry winter weather take its toll on delicate or sensitive skin. Toups and Co Organics is safe, natural and effective for the whole family.

I found that when using the tallow frankincense face balm on my face it irritated my eyes and made them red. I have VERY sensitive eyes. Just a little bit of eye liner or eye shadow (even a natural kind) can make my eye swell. And almost any essential oil near my face makes my eyes sting. So if you have sensitive eyes use caution putting the scented Balm on your face or touching your face if it’s on your hands.I did get to try the scent free version. I LOVE using it on my face!!! No sensitivity at all.

Cheshire Fields Review and Giveaway!

I recently got to sample some products from my friend Michelle at Cheshire Fields. She has an assortment of handmade soaps, shampoos, balms, sprays and more that are 100% natural (and I really mean that…not just labeled organic or using the term natural without much meaning behind it).

When it comes to natural health and beauty most people jump to coconut oil. It is amazing stuff.

But since I have a toddler with a coconut allergy I try to keep our house pretty much coconut free. That means just about every soap, lotion and shampoo is out.

I was thrilled to find out that Michelle has many products that are not only coconut free but also dairy and nut free! Natural products that are safe for my family. I didn’t think they existed!

Tallow Balm

The first product I tried as soon as it arrived was the tallow balm.

I haven’t been able to use lotion in over a year! A year!! Can you say dry skin?

I was thrilled to try the tallow balm and was not disappointed. Just a tiny bit goes a long way and creates soft, smooth skin. Plus it smells so good with all of the essential oils added.

I love that it is safe to use on my entire family, even my kids with allergies. It also comes in a compact case that is easy to take wherever you go. We brought it along for all of our holiday travel.

My oldest likes to use it on her hands at bed time and wear socks on her hands (thanks to Michelle’s suggestion!). By morning she has super soft skin again instead of dry, cracked hands.

Sinus Balm

The sinus balm was a Christmas present for my seven year old. That might sound strange to some. But she has struggled with environmental allergies and mouth breathing for years.

Having another natural tool for helping her breathe better at night is a huge blessing.

It is also made with olive oil and is very safe. The scent is pretty strong. But that is how it works.

My son had a stuffy nose the other day and told us he had to breathe with his mouth open. We put some behind his ears and on his neck. He didn’t wake up once in the night!

Disinfectant & Freshener Spray

With young kids in school I don’t have to tell you how excited I am to have a safe disinfectant spray! It is so easy to use. Just shake and spray.

It makes my house smell wonderful (thieves will do that). Plus I can freshen things in a matter of seconds.

No need to use chemicals to clean your house. This spray can be used directly on surfaces to get rid of the germs.

I was so glad to have it around after my daughter had the flu. It has also come in very handy for the potty seat that sits in our bathroom. It is almost impossible to keep that clean and free of bad smells. The freshener spray worked wonderfully.

Tea Tree + Lavender Freshener

The tea tree + lavender spray is one of Michelle’s new products. It is similar to the disinfectant spray, but with different oils.

I can’t decide which one I like better. The tea tree and lavender combination is very floral and leaves the whole house smelling bright and fresh. I will be using both all winter long!

Itch Relief Remedy

When you have a child with eczema there is a never ending search for products to help calm the itching. So I was very excited to get to try this.

It comes as a powder that you can make into a paste. It has a very mild scent and soothing ingredients. Just a pinch goes a long way so this will last a long time.

Chamomile Lavender Dry Shampoo

I wash my hair every day. Otherwise my hair gets so oily. It is fine and thin.

When Michelle told me about her dry shampoo I was so excited. I can actually get by without washing my hair once in a while with this product. Simply rub it into the scalp to absorb oil. Plus it smells amazing!

For those mornings where my little one just doesn’t want to sleep and let me take a shower this dry shampoo is a life saver! I can leave the house without feeling like I look unshowered. It is even great for days that I wear my hair down. By afternoon it already looks greasy. Just a bit of dry shampoo and I’m looking good again and smelling good too!

The chamomile lavender is great for light colored hair like mine. There is another one specifically for dark hair.

I was so impressed with all of these Cheshire Fields products. I even bought a bunch for Christmas presents for the women in my family! But you don’t have to wait until Christmas. They make great gifts any time of year.

My Simple Mommy Style

I don’t know much about style, but I’m sharing my simple mommy style today. It’s all me. prAna and Stonyfield are helping too! There is even a giveaway!

It is almost comical for me to use this post title.

Style? Me? Ha!

I don’t really have one. Unless comfort is a style. In all seriousness, I like to keep things simple.

Which is why I was so excited when prAna wanted to join forces with Stonyfield for this #JustBeYou campaign.

Comfortable clothes that are actually stylish!

Now we’re talking.

It was hard to choose just one item to try. But I went with the Kara Jeans. I have the hardest time finding pants that fit (without having to shop in the juniors section), that I can move in and that are age appropriate (old college clothes aren’t really cutting it anymore in my mid 30’s!).

It doesn’t take much effort to put them to the test at my house. With three young kids I spend half of my day on the floor playing, picking up toys, changing diapers, etc.

I really love these pants! They let me move, and they are super cute. They work well with flip flops or boots (perfect for the ever changing Michigan weather). I can wear them to church or just working around the house.

I actually wore them the entire day – morning until bed time. Normally half of my day is spent in “comfy” pants. You know, the ones you wouldn’t leave the house in but you put them on the minute you get home.

The prAna Kara jeans fit my simple mommy style perfectly.

I like all things simple. My decor. My clothes. My food. Simple.

I like my yogurt the same way. My absolute favorite flavor is vanilla, like the new Oh My Yog! Madagascar vanilla bean. Add some granola and I’m good to go for any meal. I could eat it all day long.

I’ve been dairy free for a little over a year now while nursing my youngest with a dairy allergy. One of the first things I’ll be eating when she’s done nursing is vanilla yogurt!

My lifestyle is simple too. I am such a homebody. We are pretty busy with the kids’ activities and school drop off and pick up. But I’d be content to stay home every single day.

What would I do? Read books and color. For real.

Comfy pants, a stack of books, creative coloring and delicious vanilla yogurt.

It’s my dream day. It’s me! Simple life spending time with my favorite people – my kids.

I chose dark green pants. I don’t have any green pants. I thought I’d be “bold.” Plus they hide stains pretty well when I spill on myself in the kitchen or when little hands and faces wipe food all over me. Both happen way too often.

Gluten Free Pumpkin Flax Granola Muffins

Can’t decide what to have for breakfast? Get your cereal and bread all in one with gluten free pumpkin flax granola muffins. They are the perfect way to start your day this fall.

It’s no secret. I L-O-V-E granola. Really I love cereal of any kind.

But cereal is a rare commodity around here, only showing up on the breakfast menu when I have time to make some. Most cereal is just not healthy.

My kids enjoy my homemade granola. I make a kettle corn version that everyone goes crazy for.

But it sure is nice to get variety once in a while. And to give myself a break (it’s hard work cooking for a family with so many different allergies!)

So I was excited to try two products from Nature’s Path – Pumpkin flax granola and Cranberry Vanilla Qia.

Big helpers.

Since I can’t have either my big kids gladly volunteered to be the taste testers!

Both kids really loved the Qia. It is a unique blend of seeds and dried fruit. We tried it in both milk and yogurt. Either way is great. Just mix and let it sit for five minutes. Breakfast is served.

My oldest was the granola sampler (since my son is allergic to some of the ingredients). She gave it two thumbs up!

She even got an extra special treat one day with an Oh My Yog! yogurt and pumpkin flax granola in her lunch.

From a flavor standpoint both products are winners.

My kids reviewed the taste. I reviewed the ingredients.

I was disappointed to see soy oil in the granola. We try to avoid all soy. I also am not sure what oat syrup solids are. It sounds a lot like corn syrup solids, just using a different grain.

I was hopeful as I read the ingredient list of the Qia cereal. Until I got to the last one – natural vanilla flavor.

Natural flavor is my biggest pet peeve when it comes to “natural” products.

Natural flavor is pretty much the same thing as artificial flavor.

They may start with different ingredients, but the end product is about the same. And they impact my children the same way.

Both make my kids C-R-A-Z-Y.

Preparation is key.

I also think that seeds and grains need to be properly prepared to avoid nutrient deficiencies and to aid in digestion. Eating all of these oats and seeds that haven’t been soaked can be hard on the gut. My son seemed to have a really hard time with the seeds and had some off tummy days.

So I did let my kids try both products. But they are not items I would let them have regularly.

Pumpkin flax granola is good for those times when you are traveling or for those days here and there when you really have no time at all to prepare breakfast.

It also makes a great addition to muffins! Especially if you can’t have eggs.

Flax seed is a great egg substitute.

So I used the pumpkin flax flavor of the granola and bumped it up with real pumpkin and flax seeds to create gluten free egg free pumpkin flax granola muffins.

A little sprinkle of granola on top adds a nice crunch and burst of flavor.

Since I like to prepare my grains I used Stonyfield whole milk yogurt to soak the flour first. The yogurt not only breaks down the phytic acid, it also helps bind the muffins and give them a soft texture.

You can make the muffins with or without the granola added. I made some without for my son and he still loved them.

Pumpkin and flax are a great pair. Put them in a muffin and you have a great fall breakfast. Make a big batch to stock the freezer for easy weekday mornings.

Serves 12

A gluten and egg free muffin with pumpkin flavor and crunchy granola.

Ingredients

1 cup sorghum flour (or brown rice or whole wheat)
1/4 cup warm water
1/2 cup plain, whole milk yogurt
1 cup tapioca flour (or white rice or all purpose)
1/2 cup granola + 1/4 cup for topping
1/2 cup pureed pumpkin
2 Tbsp. ground flax seeds
1/3 cup organic cane sugar
1 tsp. baking soda
1/2 tsp. unrefined sea salt
3 Tbsp. whole milk
Optional: 1/3 cup mini chocolate chips or dried fruit

Instructions

In a large bowl combine the sorghum, water and yogurt. Cover and let sit 7-24 hours.
Heat the oven to 350*F. Line a muffin pan with paper or silicon muffin cups.
Add the flax seeds to the soaked flour. Let sit 5 minutes.
Add the remaining ingredients (except granola for topping).
Mix well.
Fill muffin cups 3/4 full. Sprinkle granola on top of each muffin.
Bake for 25 - 30 minutes.

Notes

Squash or sweet potato can be used in place of the pumpkin.
The muffins can be made without the granola.
To make these dairy free replace the yogurt and milk with coconut milk or water.

I use cloth diapers 90% of the time. So I don’t need packaged wipes often. But when we are out and about I sometimes use disposable. And it sure is handy to have wipes on hand at all times.

After my daughter’s allergy diagnosis I started reading labels more carefully. I was amazed at the junk used in conventional wipes. Is it really necessary to use parabens to wipe your child’s bottom?!

I was excited to try these water baby wipes from Piyo Piyo. They work well plus they are much safer. I also like how handy the travel pack is for tossing in the diaper bag.

My only complaint is that they do not list all of the ingredients. And with a child with tons of allergies (including coconut) that is an important factor. “Plant extracts” and “moisturizing agents” don’t mean much to me. I need to know details. And it concerns me when companies don’t make that information available.

Kids are always getting cuts and scrapes…except when you have to try out a fix-it stick! I didn’t get to actually try this on any ouchies because by some miracle my kids didn’t have any. But I am very excited to try it when they do.

My kids don’t get many convenience foods. They are expensive and usually have ingredients I don’t like (especially my big pet peeve “natural flavor.”). You can imagine their excitement when we got a super blends pouch to try.

My youngest is allergic to some of the ingredients. Though it would be perfect for a child her age. My older kids each tried some. In terms of flavor they thought it was so-so. I squeezed some into a dish and added a touch of honey. They liked it better that way (and my kids aren’t too picky about that stuff/don’t need a lot of sweetener).

The one thing that stood out to me was the use of acerola powder for the vitamin C! You don’t see that very often. Usually it’s ascorbic acid, which does the opposite of boost your vitamin C levels.

I give this two thumbs up for convenience and quality. My kids thought it was so-so on flavor. But I think younger kids would love it.

The only thing I wasn’t crazy about was the quinoa added. Seeds are hard for young children to digest, especially if not properly soaked and cooked. Just the fruits and veggies would be my preference.

My oldest is seven…going on thirteen. She was very excited when I told her she got to use this lip balm. The pomegranate scent is divine. The balm goes on easily.

Stuffy Noses, Tangled Hair and Allergies: A Natural Remedies Review

When the cold or flu hits, when allergies flare or when kids can’t settle down don’t reach for a pill. Instead try some simple natural remedies.

When it comes to natural remedies I am definitely a novice.

I know food backwards and forwards. But herbs, oils and spices? Salves and tinctures? Come again?

Keep it simple.

You can imagine my delight when I flipped through Natural Remedies for Kids and saw just how easy it is to make so many natural treatments at home!

And I really do mean easy. Because if they weren’t I would have just put the book back down.

Easy tips.

There are common sense tips like braiding long hair to keep it from getting tangled at night. Yes, I used that one immediately on my daughter! Then there is no need for any detangler (though if you need one there is a recipe for it).

Allergy treatments.

I have talked a lot about my daughter’s environmental allergies and struggles with clogged sinuses. Natural Remedies has an easy recipe for allergy syrup that is on my to-do list.

In the mean time we’re trying nettle tea. I had no idea it was so good for allergies.

There is really some kind of remedy for just about every common concern. It includes respiratory ailments, colds, flu, skin and hair issues, bumps and bruises and even emotional problems (like hyperactivity and anxiety).

Start small.

I am slowly building my supply for my natural medicine cabinet, starting with some of the more common and cheaper ingredients (like turmeric and nettle leaf). I will gradually add on as I become more familiar with and more comfortable with natural remedies.

One of the things that I love so much about finally going down this path (aside from the fact that it was one of my goals for this year that had been going by the wayside) is that I can make things that are safe for my youngest. Pretty much all OTC medications (both conventional and natural/homeopathic) contain some form of palm or coconut.

Elektra Magnesium Cream

I did try a small amount of the magnesium cream. It goes on so smoothly and rubs right in. I love that it does not burn your skin like magnesium oil often does.

I wish I could have used it more to see the full benefit, but it does contain coconut oil. And since my little one is climbing on me all day long I can’t let her touch it.

When it comes to spices my kitchen is pretty boring. With lots of allergies and one child with oral SPD I stick to just a few herbs and spices for our cooking.

So it was a fun treat to receive the Ground 2 Table seasoning packets.

The one my family really loved was the cinnamon spice blend. I added it to apple slices.

I also used it to make delicious apple spice ice cream! (Note – the recipe is coming…be on the lookout.)

The other spice blends were a bit too “spicy” for my daughter. But my husband really loved them. The all purpose seasoning worked well in our chili.

The only thing I didn’t like about the spice blends was that all of the ingredients weren’t listed on the packets. They are on the website, though. I couldn’t try them due to allergens.

These come in really handy for quick meal prep. No need to take ten spice jars out of the cupboard! And I love that they are in individual size packets. Just pour one packet on and you’re done.

Branch to Nature THYME Facial Astringent with MSM.
