It’s no secret. I LOVE my desiccated liver! I add it to just about anything, including meatballs, soups, tacos, smoothies and even caramel! I consider liver to be one of the world’s healthiest foods. It is loaded with vitamins and minerals.

But that doesn’t mean everyone loves to eat it. I personally can’t stand cooked liver. I try to choke a little down every once in a while. Just because I should.

How We Eat Liver.

Rather than rely on the rare mouthful, I use Perfect Supplements desiccated liver on a daily basis. I usually start my day with it in capsule form (perfect if you don’t even like the taste of desiccated liver). Then I add the powder to my food later in the day.

My kids call it our “secret ingredient” when we cook together. They like to surprise Daddy, telling him there is liver in his food.

Speaking of the crackers, my kids love them! I bet yours will too. We like to use them for easy lunches. Dip crackers in nut butter or sunbutter. Or my favorite – homemade Lunchables®. Freshly baked crackers with homemade lunch meat (that also has liver!) and cheese slices. Add some fruits and veggies and you’ve got the perfect packable lunch.
 
One batch makes about 150 crackers. So they will last a while.

A simple, allergen free cracker loaded with vitamins and minerals.

Ingredients
  1. 1 cup white rice flour
  2. 1 cup sorghum flour
  3. 1 tsp. Perfect Supplements gelatin
  4. 1 1/2 tsp. unrefined sea salt
  5. 4 tsp. organic cane sugar
  6. 1 1/2 tsp. Perfect Supplements desiccated liver
  7. 1/4 tsp. Perfect Supplements fermented kale
  8. 1/8 tsp. Perfect Supplements aquatic greens
  9. 1/2 - 1 tsp. herbs of choice (optional)
  10. 6 Tbsp. avocado oil (or extra virgin olive oil)
  11. 1/2 - 3/4 cups water
Instructions
  1. Heat oven to 350 degrees F.
  2. In a large bowl combine the flour, gelatin, salt, sugar, liver, kale, greens, herbs and olive oil. Mix well.
  3. Add 1/2 cup water. Mix well.
  4. Gradually add more water, 1 Tbsp. at a time, until a ball of dough forms when squeezed with your hands.
  5. Split the dough in half.
  6. Lay one half on a piece of parchment paper or silpat. Place another piece of paper on top. Roll until 1/8 - 1/4 inch thin.
  7. Cut with a pizza cutter or knife into desired size squares. Sprinkle with extra salt if desired. Place parchment paper with cracker dough on a baking pan.
  8. Repeat process for the second ball of dough.
  9. Bake at 350 degrees F for 12 minutes. Turn off oven and leave crackers in to crisp for an additional 7 minutes.
  10. Remove from oven and allow to cool completely.
  11. Store in a sealed container for up to 3 weeks or in the freezer for up to 6 months.

When you are a gluten free family, you eat a lot of rice (except when you have a child allergic to rice…so glad he healed from that!). It’s easy. And it goes with just about everything.

I’m the boring mom that usually just cooks plain white rice (it’s much easier on our tummies than brown rice). Then my family gets to add whatever seasonings they like. My kids usually opt for cinnamon and a little sprinkle of organic cane sugar. I personally like just butter and salt.

My poor husband was getting pretty sick of plain rice. He grew up eating Rice-A-Roni and was missing flavor in his meal.

I went to my cupboard to see what I could add to the rice for some flavor. There was a bag of turmeric that I had purchased quite a while back…but never opened because I had no idea what to do with it! I had never even tasted turmeric myself. But I heard how good it is for you.

It’s time to get back to routines, back to school, back to nourishing lunches! If you haven’t set any goals, a good one is to make sure your kids are being nourished every single day at every meal.

It may sound daunting, but it’s not. Real food is actually quite simple. Want a snack? Have a pear. Have some pepper slices. Simple.

But what makes it mineral rich?

In addition to the usual chickpeas and oil, I like to add pumpkin seeds. They are loaded with zinc, potassium, magnesium, iron, manganese, phosphorus and vitamin E!

The seeds are ground right into the hummus, so you’d never know they’re there. But they really boost the nutrition. Allergy Friendly Hummus

I like to keep my hummus very allergy friendly. No grains, nuts, dairy, eggs, soy or corn. Veggies with hummus is my go-to dish to bring to a family gathering. I have kids with allergies and a niece and nephew with allergies. So I try to make sure I bring something everyone can (and will!) eat.

My kids will eat hummus by the spoonful. I like to keep some on hand for easy snacks and lunch additions. If I have pepper and cucumber slices prepared, my three year old will grab a pile with the whole container of hummus and start dipping away.

  1. 1 1/2 cups chickpeas (cooked, boxed or canned), drained, liquid reserved
  2. 4 Tbsp. extra virgin olive oil or avocado oil
  3. 6 Tbsp. bean liquid or water
  4. 2 Tbsp. pumpkin seeds (or sunflower or hemp)
  5. 1/4 tsp. unrefined sea salt
  6. 1/4 tsp. garlic powder
  7. 1/2 tsp. onion powder
  8. 1/4 tsp. dillweed (optional)
  9. 1/4 tsp. desiccated liver (optional)
Instructions
  1. Combine all of the ingredients in a blender.
  2. Blend on high until smooth. Add extra liquid/water if needed.
  3. Adjust seasoning to taste.
  4. Serve immediately or refrigerate (up to one week) until ready to serve.

Last year my daughter got her own cookbook for Christmas. Of course she immediately wanted to try some recipes. We found a few good ones that the whole family enjoyed. Her favorite was the molasses cookie.

Naturally if big sister gets to choose some recipes little brother wants to as well. My son saw a recipe for cowboy cookies. But when we went to make them, we realized they were loaded with things he is allergic to like wheat, nuts and oats. He was quite disappointed.

Time to Recipe Create

No worries. Allergy-friendly mom to the rescue!

We came up with our own cowboy cookie recipe that does not contain gluten, nuts or oats. They can also be made dairy free.

My son and I had a blast making these together (he is quite skilled in the kitchen thanks to the Kids Cook Real Food eCourse!). And he loved being able to share them at a family gathering. A Colorful Cookie

We use sunbutter in this recipe to help bind and add fat. You must note that when you use sunbutter and baking soda together it can turn green! So if the inside of your cookie starts to look green there is no need to throw them out. And no, you didn’t do anything wrong. My kids now think it’s a fun surprise to have a green cookie when you take a bite.

Save Some for Later

This recipe makes a big batch (about 30 cookies). They freeze really well. So you can enjoy some now and save some for later. Or if you need them for a party or event you can make them well in advance. They thaw very quickly (10 – 20 minutes). Though my kids love to eat them frozen!

Cookies with a Punch

My little cowboy (and cowgirls!) is very active. He loves to spend all day outside on the farm taking care of animals and helping with any jobs he can. He really works up an appetite (and is by far my fastest, biggest eater). These cowboy cookies are great as part of a snack or the perfect ending to a hearty meal.

Ingredients
  1. 1/2 cup softened butter, palm shortening, lard or tallow
  2. 1 cup organic cane sugar or coconut sugar
  3. 2 eggs
  4. 1 tsp. organic vanilla
  5. 1/4 cup sunbutter
  6. 2 cups white rice flour or brown rice flour
  7. 1/2 tsp. unrefined sea salt
  8. 1 tsp. baking soda
  9. 1/2 cup chocolate chunks (we use Enjoy Life)
  10. 1/4 cup raisins and/or dried cranberries
  11. 2 Tbsp. pumpkin seeds
Instructions
  1. Heat the oven to 350 degrees F.
  2. Cream the butter and sugar until fluffy.
  3. Add the sunbutter, egg and vanilla. Beat until well mixed.
  4. Add the flour, salt and soda. Mix well.
  5. Stir in the chocolate, dried fruit and seeds.
  6. Scoop large mounds (2 - 3 Tbsp.) about 2 inches apart on a parchment or silpat lined baking sheet.
  7. Bake at 350 degrees F for 20 minutes, until golden brown.
  8. Allow to cool for 5 minutes and transfer to a cooling rack.
Notes
  1. The cookies freeze well. Allow 10 - 20 minutes for them to thaw.
  2. The cookies may turn green inside due to the sunbutter reacting with the baking soda. It is not harmful.

One great way to start thinking summer is with ice cream! If you’ve followed me very long you know ice cream is my absolute favorite food. At least these days I don’t eat nearly as much as I used to and most of the ice cream I do eat is homemade. It’s all about the baby steps!

I recently bought some ice cream for my husband – a limited edition flavor – bananas foster. I tasted it. Wow, was it sweet!! Good, but sweet. It reminded me of egg nog.

My kids (and I) were a bit jealous, so I made our own version. This homemade bananas foster ice cream is loaded with banana flavor – because it is mostly pureed bananas! Then I swirled in some homemade caramel sauce for the “foster” taste. You could really bump up nutrition and save time by using this metabolism boosting caramel with liver!

Quick and Easy

One of the best parts of this ice cream is that there is no ice cream mixer required. You do have to make the caramel and freeze the bananas in advance. But once you’re ready the ice cream comes together in minutes and is ready to eat.

And if you want to make it even easier just skip the caramel. Banana ice cream tastes amazing on its own. It also makes a great dairy free alternative to ice cream.

Ingredients
  1. 6 very ripe bananas
  2. 2 - 4 Tbsp. maple syrup or honey (optional)
  3. 1/4 - 1/2 tsp. unrefined sea salt
  4. 3 - 4 Tbsp. caramel sauce
  5. 1/8 tsp. ground nutmeg (optional)
  6. 1/4 cup vanilla wafers, crumbled (optional)
Instructions
  1. Prepare the caramel. Refrigerate.
  2. Slice the bananas and freeze on a parchment lined baking sheet in a single layer.
  3. Combine the frozen bananas, maple syrup, salt and nutmeg in a food processor. Blend until smooth (this will take a few minutes and you may have to scrape down the sides multiple times).
  4. Transfer the ice cream to a freezer safe container.
  5. Gently mix in the caramel and vanilla wafers.
  6. Serve or freeze.
Notes
  1. To make this dairy free simply leave out the caramel sauce. Banana ice cream tastes wonderful on its own!
  2. The caramel sauce can be made dairy free using coconut oil and coconut milk.

I’m not one to tell my kids they can never have anything sweet. But I am one to shy away from most traditional processed candy.

We don’t do any food coloring.

NONE. Which eliminates pretty much all fruity candy.

I let my kids choose a couple chocolates as a special treat. But even if the ingredients aren’t too horrible I still think ethically the big name companies are not so great. And I’d prefer not to support them.

So I turn to my tried and true solution – I make my own!

This year I went with something festive – pumpkin filled chocolates!!

Delicious, melt-in-your-mouth chocolate (I use this brand because it is allergen-free) filled with gooey, sweetened pumpkin…made with Perfect Supplements gelatin! Candy with good stuff in it? Yes, please.

These are a huge hit with my kids (especially my son that has been cocoa free for the last year and can now have it again…and my toddler that could care less about sweets but loves chocolate). We love to make them in fun shapes.

As an added bonus they are super easy to make. And if there happens to be either leftover pumpkin or chocolate they are great plain!

A simple allergy friendly chocolate filled with gooey pumpkin.

Ingredients
  1. 1 1/2 cups chocolate chunks or chocolate chips
  2. 1/2 cup pure pumpkin
  3. 1/8 tsp. cinnamon
  4. 1 Tbsp. maple syrup
  5. pinch unrefined sea salt
  6. 1 1/2 tsp. Perfect Supplements gelatin
Instructions
  1. Melt the chocolate over a double boiler.
  2. Fill the bottom of candy molds with half of the chocolate. Freeze to set while making the filling.
  3. Combine the pumpkin, cinnamon, syrup, salt and gelatin in a small saucepan.
  4. Let sit 1 minute.
  5. Heat over low - medium heat until the gelatin is dissolved (about 3 minutes).
  6. Add a small scoop of the pumpkin mixture to each chocolate mold. Freeze to set (about 3 minutes).
  7. Warm the remaining chocolate. Fill the candy molds to the top. Chill.
  8. When chocolate is solid remove the candy from the molds.
  9. Store in the refrigerator for up to two weeks.

Even when I use the packs of pectin!

I have switched over to using gelatin to create my strawberry freezer jam, cherry jam, grape jelly and five minute peach jam. They turned out beautifully!

But I recently teamed up with Ball Brand to try one of their recipes. I had the great pleasure of perusing The All New Ball Book Of Canning And Preserving. It’s like a canner’s dream.

The pictures are gorgeous. And the recipes all sound so delicious. I wish I had time to try them all!

But I had to just pick one to try and share with you.

Trying My Hand At Jelly Again

With our allergies I don’t use pectin. Since I can’t be certain of the source it’s too risky. I know a lot of pectin is made from apples. And my two youngest are allergic to apples.

So instead of modifying a recipe I went for one that didn’t even need pectin. Red plum raspberry jelly sounded like the perfect combination of fruit flavors. And it is!

Neither fruit over powers the other.

There is no doubt that red plum raspberry jelly tastes good. You can use it for your  morning eggs and toast or mixed into some plain yogurt. We like it on pancakes.

The Outcome

The real question, though, is did I manage to make good jelly without using gelatin?

Ummmm, no.

I read the instructions on how to look for the gelling point. I used a thermometer to monitor the temperature (got it to 220 just like it said).

But the timing worked out that it was right around the gelling point when I was trying to get my toddler down for a nap. And of course this was the one day where she was fighting sleep. In fact, instead of taking 3-10 minutes to get her to sleep it took over an hour and a half (including a dirty diaper change)! Maybe it was all those raspberries she ate!

So I kept bouncing back and forth between checking the jelly and checking the toddler. And at one point I just said I have to get it done and said a prayer. Well, it wasn’t gelled.

My Big Mistake

And now that I am re-reading the directions I see that it says to stir constantly…oops. Not easy when trying to get a toddler to nap. I think all of the pectin came to the top when I wasn’t stirring…there was a sticky, pink foam. Oops.

Note – keep stirring while it boils!!

All is not lost, though. We now have sweet red plum raspberry syrup! I can’t wait to use it on our pancakes this week (every Friday we have breakfast for dinner…pancakes is on the menu).

I might also try cooking it down a bit or adding a little gelatin when I open a jar. Just to see what happens.

It’s Your Turn

In spite of my inability to make jams and jellies I am sharing this delicious recipe with you today. I bet you’ll have better luck. Maybe you can teach me a thing or two about gel! My motto moving forward is going to be “Follow the directions and keep stirring.”

I hope to try this recipe again and actually cook it the right way. I REALLY want to try red plum raspberry jelly on bread (freshly baked sourdough would heavenly).

Red Plum Raspberry Jelly

Ingredients
  1. 2 lbs. firm, ripe red plums, halved
  2. 1 cup water
  3. 4 cups raspberries
  4. 3 cups cane sugar
  5. cheesecloth
Instructions
  1. Pit plums, reserving pits. Chop plums and place in a 6 qt. stainless steel or enameled Dutch oven. Lightly crush the plum with a potato masher.
  2. Stir in the water and reserved pits. Bring to a boil, reduce heat, cover and simmer 10 minutes.
  3. Add raspberries, crushing with a potato masher. Return to a boil, cover, reduce heat and simmer 10 minutes.
  4. Line a large, fine wire mesh strainer with 3 layers of dampened cheesecloth. Place the strainer over a large bowl.
  5. Pour the plum mixture into the strainer (do not press down). Cover and let stand 3 hours or until collected juice measures 3 1/2 cups and mixture no longer drips.
  6. Wash and dry Dutch oven.
  7. Pour the juice into the Dutch oven. Stir in the sugar and bring to a boil over high heat. Boil, stirring constantly, to gelling point.
  8. Ladle hot jelly into a hot jar, leaving 1/4-inch headspace.
  9. Wipe jar rim. Center lid on jar. Apply band and adjust to fingertip tight.
  10. Place jar in boiling water canner. Repeat until all jars are filled.
  11. Process jars 10 minutes, adjusting for altitude. Turn off heat, remove lid and let jars stand 5 minutes.
  12. Remove jars from canner and cool.
Notes
  1. Tip - plum pits are super high in pectin, so simmering them with the fruit really helps give this jelly its velvety smooth set.
